Castle hills looked like a great new place to try and has a Michelin star chef behind this, so my wife and I went for the first time last week. First impression we great. The menu had all the makings of a great restaurant and everything sounded delicious. The atmosphere looks nice and loved the "no mames way" bar. Unfortunately first impressions can be deceiving. I got a their 6 course tasting with wine pairings and my wife got a charcuterie board and a rib eye. The charcuterie board was less than adaquate. We got the small board. It had a good amount of blue cheese and a small wedge of a spicy cheese that I'm pretty sure is Colby jack. It was a bit strange the cheeses weren't cut or sliced and fairly cold. So with only a butter knife it was difficult to eat unless you just bite the cheese wedge. There was also just two small round slices of prosciutto a few grapes and some honey. This was not a great start. Then I got my first course. It was a ceviche (chef amuse) and bread. Complete 180. The ceviche was light and fresh, not super lime forward. The bread omg this bread and the herb butter was probably our favorite thing we had. I wish the board had this bread because we just disregarded the carbs on the board in favor do the bread. Second course was a brioche bun with pulled pork and onions on top. It looked great but it was far from good. Brioche is supposed to be soft and fluffy, though this one was hard and dry. The texture was like a corn bread. The pulled pork flavor was flat and the texture was like it was ran through a blender for too long. It was like baby food with a slight pulled pork flavor. This was just terrible all around. Next was the scallops, damn these were amazing scallops. Perfectly cooked, not rubbery. The sauce complimented it so well. I wish this course was bigger because I loved those two little scallops. There was what I think is a piece of prosciutto that looked nice but was burnt to a crisp, like bacon that you forgot about and it crumbles at a touch. Then my wife got her steak and I got a "pork steak" the steak, while a bit overcooked (we ordered med rare) was still very tender and season great. There was a strong and delicious rosemary flavor to it. The giant slice of tomato and head of galic on top was very strange though. The pork though... was a block of dry flavorless meat. This was so overcooked, there was zero juice and I don't know if they thought the sauce would make up for a lack of seasoning, because it surely did not. It was just two small strips and I couldn't finish even one. Lastly was the pre dessert and dessert. The predessert was a sorbet with a couple wafers in it. The sorbet was delicious, not too sweet, and the wafers complimented it well. The last dessert was a chocolate soufle. The presentation was great, but again, that was the only good thing about it. The soufle was still VERY raw. It was like a bowl of uncooked eggs with a couple bits of bread. Soufle should be soft and gooey in the middle but this was the majority of it. The only solid part was the top. They put ice cream and WAY too much chocolate on it so even if it was fully cooked all I could taste as chocolate sauce. So of the 6 courses 3 were good but the other 3 were terrible. The wine pairing were well done, though the white wine I got probably needed more aeration and less bits of cork. The service... was a huge miss too. With a multi course meal and at any fine dining, you usually get more info from your server. Like they'll tell you about what's in the food, what they do or what makes it fine (ie their pork versus just grilled pork). Or maybe why they choose that dish, did they have a connection to it, did they adapt it from somewhere, you know something more than just here's the next course, bye. This was especially obvious with the soufle. They have some table service for it but there was never any mention of said table service so when they went in with a spoon to break the soufflé, I thought they were handing it to me. This isn't something that is the wait staffs fault personally, that's definitely a training and management issue. There is no expectation of giving an experience. That's fine for a regular restaurant, but when you brag about a Michelin star chef and their tags are "classy" and you have the chefs Netflix episode played on loop... something is awry. Then you look closer and that's about on par with everything here. It's a lot of LOOKING nice, not authentically nice. There faux brick panels everywhere, there's bottles filled with water as decor, there's cheap dirty grill on the patio. It's a lot like what I got with their food. It's all looks great, presentation is awesome, but it didn't have what counts most, taste. I included our receipt for you to see everything we ordered. We spent a total of $186 before taxes and tip. I'm not completely sold on this restaurant yet, maybe it's just too new and they are still trying to figure out things I will definitely try it again in a few months. Let's start out with the hype, known chef for being on Netflix show coming to the RGV sounds badass but is that enough for people in that area to appreciate something different? I was there on a Wednesday and it was tricky to find the place it's behind the front facing part of a shopping center in the corner, if you go there during regular hours don't be afraid to pull on the door there's a suction of air that makes you have to pull hard in that door, once you're inside the place looks super clean and inviting. I was a bit confused by the staffs kilts after looking at the menu which didn't have anything really Scottish, a table ordered some type of drink and the whole staff brought it out with sparkling candles like bottle service at a lounge, but the staff was really nice they seem to get along and were playing some great music. There was also only 3 other tables around 7 pm so I sat at the bar. I noticed the bar counter had bottles of Malibu, Smirnoff, Tito's, jack Daniels and western son, but the wall of the bar also had those same bottles on display too so it looked very cheap and crowded not something I expected to see at a place like this. I ordered an old fashioned and I got a bourbon on the rocks with an orange peel would definitely not order that again, my second drink was a mezcal drink on their menu that was better. I started with the calamari, the texture of the calamari was good but I could not taste the Chile ancho or lime flavor the menu said it had, presentation was great but not enough for me to recommend. I asked for the 10oz aged ribeye steak and it was cooked great, no overwhelming seasoning like a lot of places, it was served with some steak potatoes and fried onions, the waiter asked me if I wanted ketchup, I was hoping for maybe a chimichurri sauce or some other dipping sauce from such a hyped up place, but everything was cooked well. Overall prices are reasonable for the food and weirdly all over the place menu and environment but not enough to make it a must go or even a once a quarter place to go. This is the type of place that I would go to if I was a high school kid trying to impress my home coming date but not trying to spend all of my summer job money. read more

Not a great experience. The service was slow. We arrived around 6 30 pm the restaurant started filling up. We were a table of six planning to enjoy a good meal with friends. We started noticing that people was not taking our orders. We had to ask someone to come and take our orders to take our meal orders, we noticed that the people that arrived after us were being served meals before our arrived. We honestly didn't take pictures since we weren't in the happiest of moods. We've been before and honestly their drinks are always 10/10. Appetizers have always been chefs kiss Fast forward to Valentine's Day where we paid 99 for a 10 course meal. The chocolate martini me personally was too sweet however my friend did love it. They only had drinks from their valentines menu (3/4 options). Due to my drink being too sweet I asked for a carreta but they their v-day drinks were all they offered. HOWEVER they ran out of their Moscow mule so they did prep my drink after all. We had reservations for 9 hoping the area would be a little less packed- nope. We had to wait for our seat about 15 min and 20min to just get our drinks. Don't get me wrong the food was amazing but the service was horrible. The food took forever. Everyone who arrived after us left before us. It really felt like they forgot about it. We paid and left at 11:30! Would not recommend to go during a holiday. Very disorganized, the owner kept yelling at the staff (kept us entertained putting a Gordon R in the valley). We were two couples and had a 20% gratuity plus the 99 per person. My best friend and I had dinner here and we loved it. The wait staff was very attentive and friendly and the vibe was fun and the music was good. Very clean place as well. We ordered the cured salmon as an appetizer which was good but personally I think it would be WAY better with tuna. Haha We also ordered the mussels which we loved and asked for a side of toasted bread to dip in the sauce (chef's kiss). Then we shared the double pork chops... these we're definitely our favorite. The very good: this hidden gem is delicious! The location is nice and unique. Wonderful ambience. (Just not a fan of the loud music selection... didn't seem to go with environment) The chef is friendly and of course well known for his tv debut! The service was great our waiter was very attentive and helpful with many recommendations. The good: the drinks and food were absolutely delicious. We started with a charcuterie board. The honey on that board was so exquisite. Our entree included the pork chops and the chicken Alfredo pasta. Portion size is A+, taste remarkable and drinks were perfection! The bad: after a couple round of drinks we sadly did not try the dessert. I have nothing bad to say this place is definitely a must try and try again until you've tasted everything on the mouthwatering menu. So if your debating should we go? The food, service, and ambiance is amazing. There is a very happening vibe. I had a Lychee drink called the Popsicle that was delicious. The Fish and chips were so warm and crunchy. They serve a delightful coconut panna cotta and chocolate soufflé. All and all, this was a great meal. I highly recommend it! read more

Food is okay, but the chef and staff are rude and indifferent. Not a good place if you're looking for a relaxed and quiet dining experience. When my wife and I were there, the music coming from the indoor speakers was very, very loud. When asked to tone it down a little, the chef replied, "It's my restaurant, I'll play it as loud as I want." Steak was cook very well, tasted like it's done sous vide style but I could be wrong. Mac and cheese very creamy and perfectly cook. Could do without the bits of calamari/octopus though. The fried calamari is definitely the best I've had. Definitely fresh calamari are used and fried to tenderness and not heavily batter. The Alaska bake dessert...wow. Light fluffy meringue with chamoy drizzle and inside a mango ice cream. read more

I wanted so badly to rate Castlehill restaurant 5 stars. It's a great looking restaurant, appeared to be clean, and the ambiance seemed really nice. The hostess and waitress deserve 5+ stars as they were very courteous, professional, helpful, and were really good at their profession. So why a 3 star rating? I ordered the breast of chicken with mushroom, fennel, tarragon cream with crispy kale and fondant potato. The kale and potato were spot on and very tasty. The cream seemed to be missing the fennel although there were 2 tiny green onions which may have been a substitute. The cream was ok but lacked flavor. Unfortunately, the chicken had no flavor and it had the appearance of it having been parboiled in plain water. There was a hint of it having touched a grill as there was a tiny sear mark on it. The chewy texture of the breast was also a hint that possibly it had been parboiled. I have no doubt this place is here to stay and can be very successful but, if they read this, maybe they can work on the chicken preparation. I wouldn't have minded waiting a few extra minutes to get a freshly prepared dinner. My partner had the salmon with asparagus. She said it was tasty and the salmon was grilled/cooked a bit more than she liked but overall, really good. We had the charcuterie plate which was also very nice and the house sauvignon Blanc was a perfect match. read more

It is really disappointing that we see good reviews and had probably the worst dining experience in our lives. The 30 dollar fish was uncooked we couldn't even cut it with our fork, almost 30 dollars for just three pieces of scallops, like add some rice or more veggies to it if you are going to charge that much. When people are looking down at the food you are serving ask yourself would you be happy eating this and charging so much for it. Treat people the way you would like to be treated. read more

Just a few words here about this restaurant... 1st off the service was great and the owner was very welcoming. We have a small dog and it's like 100 degrees outside and instead of leaving we were allowed to bring her in and still enjoy the place. They brought her water and treats. Awesome guys.. now on to the food, they did not disappoint we had some drinks appetizers and nephew had the burger! All on point! And we walked in and our server i believe her name was Joe, It almost felt like we were annoying her just by being there. And every time she would walk away she would sigh and shake our head simply for asking for a water refill. The food wasn't bad but, being a professional barbecue the steak has to be the most overpriced steak. No good steak should be topped with half a pound of onions, not if it's a good steak at least. Third time to castlehill & this time we took 4 of our friends, making it a party of 6, with a reservation for 6:30. We arrived on time & there was more wait staff than customers, but you wouldn't know it by how long it took to order drinks & receive them right away. We ordered & watched for an hour more people come in & actually got their order before we got salads. The good news is the Proper Fish N Chip was changed to flounder & it was great. I did have to ask for the peas, which is part of the dish & important. At the end we did finally have someone take charge & delivered everyone a complimentary drink on the chief. The food was great the front of the house needs a manager. I will be back in spite of this visit. read more

I was wanting something new and different, so decided to try this new restaurant with a chef known to be creative. We are a retired couple, so we were able to go at 5 when they opened. Music and ambiance was contemporary. I was happy the music was not intrusive, so we could talk with each other and the staff. Plenty of parking. I appreciated seeing they had happy hour drinks and appetizers which were very reasonably priced, yet not run of the mill selections. It included a cucumber martini which I ordered, and a sourdough brochetta, which was delicious. It was a large toasted piece of sourdough bread topped with a fresh and ripe tomato, mozzerella, and lovely basil leaves, in a balsamic sauce. My husband ordered the caesar salad also from the happy hour menu. It was fine as a salad, but a disappointment as a caesar salad as it lacked garlic, lemon, and anchovy. It should be renamed. We ordered the roast chicken which was big enough to share, and they kindly delivered it in 2 plates. We had filled up on the appetizers, so ate a little, then decided to take the rest home and have dessert. The chicken had a sauce with beans and little potatoes. I used the leftover chicken today on a sandwich. As is often the case, it tasted great the next day after soaking overnight in the sauce, very succulent. We had ordered a dessert of Baked Alaska. I was curious how they would handle that unusual ice cream filled item, rare to see in a restaurant. It was a surprise. Plenty to share of this big white mound of a base of cake, mango jam, and ice cream, covered with marshmallow creme frosting instead of meringue. The real surprise was chamoy ice cream. I was not familiar with chamoy, which I read online is "Mexico's fruity, sour, salty, savory, spicy flavor combination, most commonly presented in a bright-to-deep red sauce. Some say it's flavored with apricots, some say plum. " We didn't quite know what to make of the flavor. I think it's one of those things you don't like at first, but maybe love later. I do appreciate it was a creative interpretation, sort of a tex-mex twist. Did the Scottish chef Campbell decide to locate in Edinburg because of the name? The male servers were wearing kilts. Our server told us he didn't know he would be wearing a kilt as part of the job. Apparently they compromised by wearing long pants under the kilts. No fair guys--just wear the kilts. I like them. I've been coming to Castlehill for a few months on and off now, and each time seems to be even better than the last. The steaks are juicy and cooked to perfection, and the lamb burger and pasta dishes are like no other in the valley! Me and my family came in during Halloween season and were greeted immediately by the entire staff. The restaurant was decked out to the brim with Halloween themes and the upon our order of a soufflé (to f*kn die for) we were treated to a hilarious and fitting performance by the entire staff dressed as horror icons ! 110% recommend if you're looking for a laid back atmosphere, great drinks, and amazing food! read more

Horrible service! Waited outside kept getting passed by. After spending $100+ waiting at the bar. Over 20 min and no service. If your looking to get customer service this is not the place. Busier places give better service that this save your money and your time!! Chef even said I don't have f-ing time for this. Eventually went over and trying to justify not having reservations for not getting served. Instead of just saying sorry let me see what we can do. Keeping fight why we weren't served . I was SO excited to visit this restaurant. Food looked great. Ambiance looked great. I was all about it! Until we got there and heard the nonstop incredibly loud CardBi music. Every other word was an F bomb and it made it really hard to enjoy my meal. I mentioned it to the waiter who in turn told the owners. The wife of the chef came to our table with major attitude and made no attempt to apologize or listen to our concerns that the music was ruining our experience. I gave her my honest opinion that I'd most likely not come back because of the music which is a shame. She made no attempt to remedy the situation mentioning that why should she if I already said I wouldn't be back. Fast forward 5 minutes later and her husband, the chef, walks out and says he won't stand for anyone talking to his wife like that. Excuse me, what??? All I did was give my honest opinion. He continued to say that it was my opinion and that he will do what he wants with his restaurant. WHAT A DISAPPOINTMENT. Never have I been treated like this at any establishment. Edinburg really needed a bistro like this but Edinburg doesn't need a bistro who couldn't careless about it's patrons. I wish this place the best of luck as the food was very good! However the ambience didn't match the menu. Skip this bistro and head to Barrel House. The price of the menu matches the experience and not a club that should serve nothing more than bar food. read more
