Chambao is an Andalusian word that refers to a rustic space made with palm leaves and wooden sticks. We took this as inspiration to create this concept. Chambao was born in Tulum with that bohemian and relaxed style, so characteristic of this destination.
The Red Snapper Ceviche came with roasted guerro peppers, red onions, avocados, cubes, lime, and thin cuts of tasty fresh red snapper. The flavor of this dish was fantastic! 9/10
Andalusian Gazpacho Soup came with 1 large open cut Alaskan King Crab leg, cold tomato soup, pepper, spicy notes, & basil oil. I'm not a huge fan of tomato soup but with the spices this was pretty similar to a bloody Mary brimming with flavor. I still prefer crab legs with warm drawn butter but this was one of a kind and unique. 8/10
The Alaskan king Crab Cluster 3L came grilled and Marinated with garlic and fennel dressing and coriander. 10/10
The Fresh Cut Rack of Lamb came Marinated in yogurt, zatar, lime, & mint jelly which surprisingly tasted better than it sounds. 8/10
