So the process is you stand in line the proteins are offered first which looked wonderful early in the morning. We got brisket, ribs, boudin and potato salad and a roll. The following are mine and my husband's opinion: The brisket is nice tender and smoky, the ribs are the star of the show as they are tender on the bone and eat with ease. The boudin is just ok. The $2.00 roll lacks in flavor and was not moist, too expensive for just an ordinary roll. The Friday we went they were out of beer. Parking is street or lot parking. The dining area is large. The servers are all pretty nice, but you order from an inside window and they'll call you up when you're order is ready. The inside isn't very big, but it's roomy enough for a small lunch crowd and there are decorations on the walls. All in all it's good, but could be better if they wanted to. They need to up their game now that there is some really good competition just about 8 miles further up the road. Chucks is pretty good for where it's at, but if you want to be good, be good, and work at it. Now they are just open from Thursday through Sunday. But if you were Really good, you could have it packed every day of the week and open for lunch and stay busy until you sell out in the late afternoon!! That way you wouldn't burn yourself out trying to have enough for the lunch crowd and waiting through a slack period in between lunch and dinner. Make though to pack them in for lunch but put your heart in it so people will be giving to get there for lunch!!! Once you run out, close shop, clean up and get ready to do it again the next day. People realize the cost of everything is high, but don't cut back trying to keep prices down. If you're product is good people don't mind paying for good food!!!
