He was able to answer every question I had, and even offered me samples of a few different varieties (all of which I ended up purchasing). My top find from this visit was the Clothbound Cabot. This was already one of my favorite cheesemakers, but I loved being introduced to something a little different that I probably wouldn't have tried otherwise.
