    Went for the mozzarella making class. There were about 10 students. After a brief intro and history of the farm and visiting the animals that were present on the farm (they move around) we went to the cottage to make our own cheese. We started by making our own curd and then also from pre-made curd. You bring home the recipe and the cheese you made and get to taste it after along with other cheeses and goods made by the farm. The teacher was great and we had a little lesson on molecules. Bring your own wine to enjoy with the tasting.

    Some amazing cheeses! The cheese curds are better than I have had in Wisconsin. The grilled cheese sandwiches on Saturdays this summer are amazingly good.

    A simple "best of Princeton" search or something similar brought me this destination on a recent trip to the college town. Awaiting us were friendly staff, fresh farm air, and a small store selling meats, cheeses, eggs, and other assorted organic items. We walked in the office door, but were shown around to the store by the friendly farmhand who was busy sorting through some records. He told us about the farm, and gave us suggestions for other places nearby to check out. The farm is completely organic, and natural, so fresh milk products were not in season yet as milking cows is not done naturally in the winter. It's amazing what you can learn outside of the city! In the store, there is a fairly large frozen case full of all types of meat, and different cuts. It is all about twice as expensive as the cheap stuff in the local supermarket, but worth the price for what were described as very well-treated, grassfed animals and completely organic processes. I selected a pack of four lamb sausages for $10, and cannot wait to cook up the very large pieces. The cheeses were of very high quality, and a sample plate was out for us to nibble. The man we met earlier told us we could wander around the farm and have a look around, but we were a little shy and did not know where to start. We wished him well and hoped he could be successful in his quest to get products into the New York City market.

    This is a local working dairy farm off of 206. (edit : we saw the cows escaping after the power lines went out on December 26, 2010--that was funny). We stopped by when the dairy production side was down, but it would have been neat to see, particularly with children. About 3 different raw milk cheeses are made there, which you can sample with crackers. None were as flavorful or impressive as we would have liked, and the prices were $16-22/lb. Huge eggs from free range chickens are $5/dozen. Grass fed beef and lamb, as well as heirloom pork--all at ultra premium prices which may convince localvores to become vegan-- are also sold. A bit pricier than most of the other farms we've sampled, but the staff (one woman on our visit) was nice and helpful. If I decide to try to eat local-only, and even if I don't, this farm merits another visit.
