For the folks posting 1 star, get real. Unless you have the thinnest skin imaginable, grow a set. The man is straight forward and doesn't mince words. If you want a conversation, go see a bartender. He's there to cut and prepare meat. If he has it, he'll say that, if he doesn't, don't expect him to come around the counter and give you a hug or comfort you. Just change your dinner plan or inquire as to when or if he can or will provide that cut/product. Again, quit expecting hard working people to hold your hand or act like your personal security blanket. He's not a waitress that is trying to get your tip money. I have NEVER, not once, had any issue with the products provided here. I get almost all my steak, pork, chicken and occasionally wild game meat here. I get the blackberry Turkey for the last three years for turkey day celebrations. I do the ham for every Christmas the last two years. It's excellent. You one star people are like emotional disaster areas who can't handle being told no or never have been told no, and he'd rather not serve you meat anyway as you're a high maintenance pain in the rear that even your own friends and families probably can't stand. I believe the best word to describe you would be insufferable. The type that can't eat at home because you are terrible at cooking so you think everything should taste like a restaurant. I'm better than a restaurant when preparing my own meals. Restaurants are good for one thing, paying someone else to do the dishes. That's it. Being new to the area, we got a coupon in a mailer for Choice Cuts and visited last week. We were glad we did! They have a tremendous selection of meats, the store is clean, the young man serving the counter shared a wealth of knowledge as he described some of the items we inquired about, and the location is good. We bought some BlackBerry Turkey Jerky which is actually smoked, not dehydrated. It has a very nice flavor and you don't have to tear at it with your teeth like you do with some jerky. We cubed some for our family football watch party -- and everyone liked it! We also bought some Sliced BBQ Pork that we'll try later. It looks great with just the right amount of pink color around the edges. Prices are somewhat higher than supermarkets; but the selection, ambiance, and family-operated feel account for the difference. read more

This is a family operated, true full-service butcher business so I glean the adorably handsome and really friendly nice young guy who is sometimes at the check out counter is a family member. His customer service skills are absolutely top-notch (not to mention his light-the-room smile) and he always makes us feel as if he's glad we came in to do business here. SERVICE: I share this to start noticing some folks who have been unhappy here point to lackluster service as a reason. It may be true for the most part that one does not feel enveloped in the spirit of "welcome friends" by the butchers behind the meat counter. It's not that they are rude, it is just that but for the nice young guy (who is not a butcher) they are not warm and fuzzy in interactions. Have that expectation going in and you may be happier. Because these are good folks working hard to run a quality business six days a week and a true butcher shop is an increasingly rare breed. EXPERTISE & PRODUCTS: A little bit lukewarm service works for us since what we need is their expertise. And these professional butchers know their stuff for their craft, they can answer questions, they always have what we're looking for or can recommend a just right alternative and the product they've sold us has always been fresh and delicious. I share this with the disclaimer that my husband and I have leaned to mostly plant based eating for 25-ish years and when we do eat meat it is typically lamb...of which you'll find little here and none that is local... but sometimes we're looking for cuts of pork and they can always help us and they use responsible sources for the meat. If you are a beef eater, I would bet you'd be delighted here as they have umpteen options. One of the reasons we've had more contact with the nice young guy at the front counter is when we go in to buy some of their in-house blackberry smoked turkey breast pieces he is typically the person who helps us. I say this as one of a household duo that doesn't particularly enjoy turkey - left to our own devices it wouldn't even make it to the Thanksgiving table - but we really like this. When thin sliced at home it makes a delicious high protein, low calorie, great chilled right from the refrigerator treat. And you'll only find it here. In the front case next to their pepperoni and house made jerkeys and slice cuts of house-smoked ham. There is also a full wall length and full height, glass fronted freezer case across from the fresh butcher case. The freezer case contains a host of meat products sold frozen including at times halibut and game. I think I even saw duck on my most recent visit. AMBIANCE: The brightly lit store always smells good because they typically are smoking something in the back. I remember the butcher stores of my youth for the aroma of good, fresh meat products and this has that same clean-food smell coupled with the smokey notes. Everything from floors to case fronts always seem super-clean. PARKING: Paved lot shared with other businesses. ACCESSIBILITY: The store is level in and all on one floor with ample room for wheelchair users. It is one of the few stores in the Boise area where I've seen shoppers in wheelchairs inside and I've also been with shoppers using walkers and canes inside. The problem is the parking lot, which is the strip mall owner's issue, because while a couple of spots have cursory wheelchair markings, the access aisle striping and curb cuts don't meet ADA. DO NOT RECCOMEND!!!!!! We have purchased from Choice Cuts a few times, every time we received rude and un friendly service, from the owner as well as the two young boys working there. We've returned a few times to give the benefit of the doubt, people do have bad days, but nope. We went in to buy $200 in hamburger and the owner wouldn't sell us the amount we wanted then complained he was going to have to ground more. They all acted like it was a burden we were purchasing their meat. We were going to put in an order for $2,000.00 in meat to cover us for the year on our main meat supply. I asked if we should call 1st to put in an order so they could have time to get it ready. The owner didn't even listen to what I was saying. He simply said No, don't bother, we will only sell you our limit after that you pay a higher price. After we purchased our hamburger, I told the kid we felt like they didn't want our business, he said it is what it is, shoved my bag at me and walked away. Not only will we NEVER do business with them but we will make sure everyone we know gets to hear how this guy treats his customers spending their hard earned money. Horrible, rude, un friendly and down right ridiculous behavior for a business owner. Idaho is still small enough to get the word out. We DO NOT RECCOMEND!! In over 60 years I have NEVER had a T-bone that did NOT have a Tenderloin Filet. The T-bones I received from Choice Cuts you could see where the filet had been cut away. The owner tried to tell me that's the way they all are. B.S. I have purchased better cuts at Albertsons, Walmart, Costco, and Fred Meyers not to mention several of the custom meat stores in the area. I have visited Choice Cuts twice and both times was disappointed by what I received. During my last visit I was in search of a section or tenderloin. I noted that the price was about 25-35% more then any other stores I had been to, but figured the quality of the meat would make up for it. First, they handcut all tenderloin, in the back, right out of plastic packaging that I assume they receive it in. No big deal, I trusted the butcher while I couldn't see exactly what was going on. When I got home I noticed that the tenderloin is completely untrimmed. The piece I got was around 1.7lbs, and I ended up trimming 6oz of fat, gristle, and silver skin off the cut. Disappointing to say the least when you are already paying more then other stores offer nicely trimmed and quality beef for. I will not be recommending or visiting Choice Cuts again. read more

we have been purchasing from here since July of 2023, we live in mountain Home and order 2 bundles at a time and for us it was worth it money wise! we have not had an issue with any of the meat we have received and we feel we actually save money compared to grocery store prices! the owners and employees are very nice and accommodating! we will continue to get our meat bundles here! some of the best meat we have had in a LONG time. I was also looking for chicken thighs. Again, didn't see any. When I asked about them he so politely responded, "I already told you what you see is what I got. Why would I carry chicken thighs? So there is a lot of hype surrounding this place and I now know why. My husband and I are meat eaters......we love all types of meat so we stopped in and decided to have a peek. First off you notice how sparse the space feels. There is a huge meat counter filled with some delicious goodies but the rest of the store is fairly empty. It also smells like meat.......the only draw back was the large number of young people working behind the counter that are obviously not really meat enthusiasts. You ask a question and they have no idea.......there were some SUPER trained people working but they have obviously not trained the younger staff. We will be back for sure. read more

My family has been thinking of trying the meat packs for over a year now and finally decided to do it. Based off online and in person reviews we finally thought why not. (side note we drove over an hour to the shop) This is going to be brutally honest. The quality and consistency of the meat and packing varies GREATLY! I was told at the shop that all meat was pulled each night and tripled wrapped (2 plastic, 1 butcher) which is how I used to do my meat before I got a food saver; when wrapped this way it'll last forever. The kid I talked to guaranteed it for 9 months but I know it'll last much longer. We purchased the 35 lb meat pack and an additional 5 lbs of peppered bacon. Here is what I can tell you so far: 2 lbs New York Steaks (got maybe 2 lbs at around 1/4" thick) Gross!! 2 lbs Rib Steaks (2 steaks 1" thick double wrapped 1 great looking tasted horrible dog liked it and 1 with bone fragments everywhere and tons of fat little meat to be eaten) 2 lbs London Broil (very very small no way there's 2 lbs and cut in half) gross single wrapped 2 lbs Chuck Steaks (not in package) 2 lbs Top Sirloin Steaks (single wrapped freezer burnt and smelt spoiled) 3 lbs Hot dogs (low quality chalky/grainy taste single wrapped) 10 lbs Split Fryer (2nd favorite meat in package thus far but only single wrapped and not de-feathered very well) 5 lbs Pork Country Ribs (So far the best quality tasted amazing double wrapped 1 triple wrapped) 3 lbs Lean Ground Patties (Yuck! stuffed with low quality cheese (to which I was not informed nor did I request) 1 single wrapped and freezer burnt and 1 double wrapped 1 pack left) 4 lbs Lean Ground Beef (Yuck! again 1 freezer burnt single wrapped and 1 double wrapped 2 different types of meat as well I'd say one 80/20 and one 60/40 2 packs left) All the ground beef thus far NOT lean and NOT quality very chalky like Bacon was great but not worth the drive ****BOTTOM LINE WILL NOT RETURN**** read more

If I could give this place 0 stars I would. We bought our meat package 2 weeks ago. Most of our meet was marked incorrectly and we couldn't tell until we thawed out the meat to find out. When we opened what was labeled steak it turns out to be roast. We put it in the fridge for 2 days to thaw out completely and when I unwrapped it the meat was brown and green and had a horrible smell to it. We put it immediately in our deep freeze and the rest of our store bought meat was fine except what came in the meat package. I was hoping to find a great butcher shop and I'd rather go without now. Sorry to have to remove stars, but the quality of the meats I've purchased lately has not been the same compared to my first few visits. I always buy ground sirloin. The last several packages, purchased over two separate visits, contained gristle and just did not have the flavor of ground sirloin...more like hamburger. At $6.98 per pound, I expect better quality. My pot roast was chewy. Also, I bought a package of frozen ground pork that, when defrosted, was almost completely white with fat. I tossed it. Doubt I'll be back. Custom meat places need to be more consistent especially when your customers are paying a premium. read more

wow, i must say i am surprised by the negative reviews. my friend in eagle recommended this shop when i asked where to get a thanksgiving turkey. we went there to get our pre-ordered turkey, and an impulse buy of ham hock. the turkey cooked up very nicely, the ham hock was quite good in the pea soup i made, as well. the owner took some time to explain about the nitrite content in the hock, and went into a lot of detail about the history of nitrite in preserved meat. it was very educational. i plan on going here again, eventually. read more

This is a great place to get a variety of terrific meats. I was making a "Team Dinner" for my coworkers in December and decided I wanted to really wow them. I talk about cooking a bit, so had to live up to their expectations. So, I followed the first rule of cooking; the best way to ensure a great end product is to start with the best ingredients you can. I got a prime rib roast (yeah, actual prime grade meat) that was absolutely gorgeous. Sure it was a bit pricey, but you really do get what you pay for. This was the best prime rib that I have ever had. The fat was beautiful, not too thick, but significant enough to really carry the flavor, and the hunk of meat (chine was removed and tied back on - hugely helpful!) was as good as it gets. I have since been back quite a bit as their prices for boneless, skinless chicken breast and thighs, are the best in town (if you buy in bulk). While they have a great selection of meats, they also have some local wines (I noticed some Indian Creek Winery bottles), spices/seasonings, BBQ supplies, hog casings, and quite a bit more. They're my exclusive source for pepperoni, also. If you're serious about quality, come here. You might be overwhelmed at first, maybe you'll be underwhelmed, but when you really start to pay attention to what you're looking at, you will not want to purchase your meats elsewhere. read more

And they pick out the right cut, size, and give me tips on how to cook it. THANK GOD. They have a huge selection of natural meat, including chicken, pork and beef, as well as smoked meats and sausages. READ: No antibiotics, no horomones, grass fed beef. Let me tell you know that I am no longer vegetarian (SURPRISE!). They also carry a large selection of rubs, brines, jerky mix, sauces, etc that are deeelish, and go in there on the right day and they might even give you a sample rib that has been on the barbie for hours. I received a discount coupon as a new resident in Meridian. Visited and purchased 2 lbs of Italian sausage. The price was different on the package and when I questioned the difference, the gal helping me raised the price with a lame excuse about the scale not being right. I have also enjoyed the friendly atmosphere around town, but there was no welcome here, not glad that I visited, or any acknowledgment that they were glad for new business. Today I cooked up the meat and have a whole jar of fat. The sausage is very bland with no spices in it--more like plain ground pork. For $6 a lb. I will not be returning. My Wife and I have lived in Meridian for some time now. We were aware of this business, having past it many times on our trips along Fairview Blvd. For Christmas, we usually purchase a spiral cut ham from Costco, but thought "this year" we'll give 'Choice Cuts' a try and see how their Ham was. After talking to the staff, asking some questions and seeing if they had samples to try (which they did not), we paid our deposit and scheduled the Ham pickup for Friday the 23rd. I arrived on Friday, provided my ticket and was presented with the Ham (total cost, $34 for 7lbs). Choice Cuts provided instructions on cooking temp and time. On Christmas Day, we started the oven and heated the HAM according to the instructions provided. When ready, we open the foil, cut off a few pieces and tried a few bites. NO FLAVOR (it was supposed to be glazed with maple, we saw no glazing). We proceeded to make up our Christmas dinner. We ate some more Ham but quickly stopped eating it, as it was unfavorable and unsatisfying. We had anticipated having Ham left overs for the next few days, instead, the Ham when into the trash. The following week, once Costco re-opened, we purchased a HAM from them for our new years celebration. Bottom line: (as the saying goes) you only have "one chance" at a 1st impression. This 1st impression was not good. We'll never be back as customers. Advise to the owners; Fix your issues or you will be headed out of business. I can't imagine anyone continuing to purchase your products if your quality is this low. You have too much competition out here to have low quality products (considering your a specialty store, and the higher cost for 'supposed' high quality meat). read more

First of all they have wonderful jerry and pepperoni sticks. This is the only reason I give them 2 stars. While stopping by for some jerry, I decided to get a treat today and bought a couple bacon wrapped beef tenderloins at $22/lb. Excited for a great dinner when turning over the filet I noticed a significant amount of fat in the middle of the filet. I have never seen this much fat in a tenderloin Ever in my life. Any idiot would have seen this when wrapping the filet....no way it could have been an accidental oversight, which I'd understand. This was deliberately sold this way. I had to discard OVER Half of the filet. This is unforgivable and I will never buy a cut of meat from this establishment again. read more

Our family as served up a smoked turkey every Christmas for more than 40 years, and we have sourced them from several places. This year we were referred to Quality Cuts Meats by last year's source, which was out of turkeys this year. We purchased a 15 lb. maple smoked turkey at Quality and boy, were we glad we did! It was the best smoked turkey we have ever had, moist and succulent and also looked picture perfect before we carved it up. From now on they will be our source of the holiday smoked turkey, and we look forward to also trying one of the blackberry smoked turkey breasts at some point. We also purchased some pepper smoked bacon there, and it is now our bacon of choice. This is the only place I will buy ground beef. I can buy 3/4 of a lb that equal 1 lb anywhere else. It is totally hormone and antibiotic free. The meat looks and tastes like meat. The people taking care of my order are always polite and nice. Also, I buy the whole chickens there. Same deal, no hormones or antibiotics. Tastes so good. I have also tried their bacon. Very yummy and they have some that do not have nitrates. I have used their seasoning packets for making chili. So many different variations and will always use that. Very simple. I believe they are owned by a family. Always like supporting local family owned businesses. read more
