I had a couple of recipes I wanted to make needing lemon oil, so I did a quick search of stores in the Boston area to see who might have the Boyajian oil in stock. Don't always trust what you see online (seems obvious, but....) since Google directed me towards a store at the Chestnut Hill Mall that closed a few years ago. Anyhow, I decided to contact Boyajian directly and got an email back quickly from Michelle with retailers in the area or I could order from them directly. I was thinking I wanted to bake a cake that night, so ordering wasn't an option at the moment and then I decided instead of just lemon oil I should have a citrus trio: a great box with a bottle of lemon, orange and lime oils. You don't need to go crazy and add a lot of their product into a recipe (or as much as your recipe would dictate if you were using a cheap extract); this is REAL stuff, so instead of zesting limes yesterday and squeezing the heck out of 5 of them for a batch of cookies, a simple 1/2 tsp of lime oil was all I needed. Sorry limes, you are no longer necessary! Order directly from them, find it in nearby awesome shops (Russo's in Watertown) and also online with King Arthur Flour and Sur La Table (and others). When you start thinking of winter recipes and something with maple flavor, get their maple extract because it is AMAZING!
