Corelife is a great addition to Lexington's dining options, imo. Each time I've been there I've tried something different, and they've all been very good to great. Service has always been courteous and professional. Add in the layout of the place along with the drink options and the comfortable atmosphere and you have a fine option for dining in the Nicholasville rd. area of town. I've had the sriracha ginger tofu and ancient grain, spicy Thai chicken & rice noodles, and southwest grilled chicken and rice blend. The Thai chicken has been my favorite. Full of various flavors, including an excellent dressing, all the fresh ingredients make for a really wonderful meal. At Corelife, they have bowls that are complete meals in themselves using greens, grains and bone broths. The ingredients are free of trans fats, GMO'sartificial colors & sweeteners, and other artificial additives. Their meat (chicken and steak) is sustainably raised, and free of antibiotics or hormones. The make their dressing fresh in-house as well, and all three I've tried have been excellent! They also offer delicious fresh-made drinks as well. I ordered the Spicy Thai Chicken and Rice Noodle Bowl -- chicken (shredded and scant), rice noodles, Napa cabbage, sesame sriracha sprouts, scallions, red pepper and cilantro with Thai chili sauce and cashew dressing. I've been hesitant to give out many fives recently, but I just ate probably both the healthiest and most delicious meal that I didn't have to make myself in a long time. I walked in and decided to try their promoted item, the Ahi Tuna Poke Fire Bowl. It consisted of some jalapeños, their purple rice, some marinated bean sprouts, some purple cabbage (possible sauerkraut?), some of their smoky marinated ahi Tuna (which was interesting considering that it's a raw dish), some avocado that was sliced right in front of me, and some black sesame seeds on top. It was such an eclectic blend of sweet, savory, and spicy, that it just kept my taste buds guessing bite after bite. I had chosen from their wide selection of fresh drinks to try their apple cider green tea. Very sweet, and a welcome taste when a few bites got a little spicy! We had received a coupon in the mail for BOGO and thought we would stupid if we didn't go! My wife and I split the spicy Thai chicken and rice bowl and the tuna poke fire bowl. I live fairly close to the Summit and I tend to like this style of restaurant, but CoreLife can be pretty hit or miss. I'm not sure if it's dependent upon the person making the food, time of day, etc. but I have been a few times and really enjoyed my meal, and have also had some times that the temperatures were way off and/or the toppings/ingredients were odd ratios. Because of the inconsistencies, I'm fairly hesitant to go when I would be paying full price, but they offer discounts fairly regularly and I usually take them up on it when available. Back in the days before Covid, the dining area was pretty generic, but comfortable and clean. In this Covid area in which I am only doing curbside, my order was ready and delivered to my car within 5 minutes of when it was scheduled to be each of the 2 or 3 times I've been. read more

Very good warm rice bowls! Today they were doing a promotion for a Free rice bowl. I had arugula lettuce, chickpeas, jalapeños, falafels, Brussel sprouts, rice, and steak in my bowl with a ranch dressing. The ingredients were extremely fresh and was made to order! I also enjoyed a mixture of some of their fresh juices/lemonades that were also fresh and flavorful. Tried today with a friend. The food was good. I tried the beet lemonade, spicy chicken thia noodle bowl with spicy carrot dressing. The beet lemonade was great but you need to like beets. If you don't you could have flash backs of your mom forcing you to eat them at the dinner table. The salad was perfect it was crunchy, fresh and just what I needed after my workout. The people at the restaurant were nice and forgiving of the newbies trying to figure out what we wanted. All in all it was a reasonably price lunch spot. This is a one of a kind restaurant. If you are interested it on organic foods, no sugar added foods, vegetarian plates or looking for vegan options, you will be in the right place. You have a variety of salads and more. They have someone helping us when we were in line before order. And they have a menu with pictures and the ingredients on each of the plates they serve. Really easy to order. Very friendly people and the best of the best there dressings don't have sugar. Only the ones that do have honey or agave as main the ingredient. I had the chicken Cobb salad; very delicious. I added some jalapeños and blue cheeses. My family had the steak and bacon salad. Everybody loved the food. They have fresh lemonade's, fruit punch and another fruit juices. I did not order one, but they looked amazing. If you want guilt free meals, this is the place to be. Healthy and happy!!!! I had Core life eatery for the first time last week and I LOVED IT!!! This will be one of my new go to spots for lunch. I had the tri tip warm rice bowl built to the standard menu ingredients. The flavors were rich and the textures contrasted well. What stood out to me were the tri tip steak, sweet potatoes, falafel, and ranch dressing. The only change I'll get next time is having the ranch on the side and using less. Overall it's a delicious option for a very healthy meal. read more

I rarely venture all the way out to The Summit as I live downtown, but there are so few healthy choices in 'fast food' that my son talked me into it. We waited outside until there were just a few people in line and dining, due to Covid. Got in line and saw that staff were wearing masks, not correctly but an attempt at least, so we stayed. I got a build your own bowl, with romaine base, added cheese, carrots, cranberries, cucumbers and got the cranberry viniagrette dressing, added grilled chicken. The salad was fresh and tasty. not sure why they cut up everything so well, but they don't peel or chop the cucumbers, very odd, but still good. The chicken was delicious and cooked just right and added while hot off the grill. It was a tiny portion tho, and needed to be twice the amount to really make the salad balanced. I noticed they had a great variety of ingredients and everything looked very fresh. I got the Spicy Ginger Steak & Rice Noodle broth bowl. I thought it was pretty tasty. The two stars were definitely the broth and steak. They both had great flavor and the steak was very tender. Not much to say about the rest of the ingredients in there, other than I could tell they were pretty fresh. They weren't seasoned before being tossed in and I wished the broccoli pieces would've been cut a little smaller so that the hot broth could soften them. I'm not exactly sure what size was given that night, but after eating the entire bowl I was comfortable...found myself hungry a few hours later. Sorry, I didn't take a pic! If you are a vampire, no worries, they have plenty of indoor seating as well. I had the Berry Quinoa Chicken Bowl and it refreshing and filling (which is what I am always concerned about with the healthier dishes). It features hormone free chicken, quinoa, fresh blueberries, strawberries, and pineapple all topped on fresh mixed greens. It is accompanied with a yogurt based dressing that I highly recommend. It is always an option to get the dressing put on the side. I would eat this dish again happily without regret, but there are other delicious dishes I have had there as well so don't be afraid to explore the menu. This place is as hipster as they come! They have a wide variety of pre-made entrees, but you can also customize your food however you want. The restaurant has nice aesthetics and is located right next to the free parking structure. Their juice bar has a plethora of options for teas, lemonades, and coffees. The coconut fruit punch, cold brew coffee, and regular lemonade proved refreshing, light, and pleasant and were my favorite out of the entire line-up. I was pretty water logged after trying them all, but it was definitely worth it! The produce here is extremely fresh and plentiful! I had the pleasure of trying the Spicy Ginger Steak and Rice noodle, Tuna Poke Fire Rice Bowl, and Ranch Flank Steak Rice Bowl. The Tuna Poke bowl reigned superior over the other two, but all three were solid options. They cut the avocado right into the bowl and complimented the fresh, raw fish. As previously mentioned, the newly picked produce really accentuated the flavors. Forewarning, the spicy ginger steak and rice noodle has a decent kick to it. My friends could not handle more than a few sips of the brother, but I thought it was an appropriate spiciness level. The broth itself could have been a little hotter. The amount of food given in the ranch flank steak bowl justifies the $10.95 spent and the sauce reminds me of a gyro. Overall, CoreLife Eatery is at a prime location in the Summit and offers a different kind of cuisine compared to its surrounding competitors.
