Cucina Marina has a special place in my list of must-visits. I actually encountered them as a loyal Banchetto-goer; back then, they were flush from a recent feature piece, focused on their crispy liempo. They are, after all, the best there is in this special little dish; many have tried, and none can measure up to Cucina Marina's.
Having found something that I like, I quickly befriended Sheryl, the lady in charge. Always with a smile and a sunny disposition at the ready, the ladies of this little booth are rockstars of the night food market scene. You wait for them to open, because their offerings are worth waiting for. In addition to the deep fried bacon goodness of the crispy liempo, they have adobo ribs that marries two different cooking styles, barbecue purists be damned. They have a Hungarian sausage on a stick, complete with a stick of cheese somehow wrapped around it along the slits. They have cordon bleu so moist that it's criminal. They have buttered pork loin, prepared only if someone orders it, a la short order style. Their food isn't the healthiest out there, true, but you'll find that in the occasional times you try them, you won't really care. This is, after all, some really good comfort food. read more
