The service was fast and the guy at the front was very helpful, but he doesn't understand the Korean words for some of the foods on the menu so don't bother with that hahaha (japchae, gochujang,etc.) I tried the B-Bob medium level spicy, which was basically bulgogi beef over rice and japchae noodles, with spicy mayo on top. I've never had Korean food with spicy mayo before but it was alright. Next time I think I'll order it without sauce and ask for some of the level 8 chili sauce on the side or some kimchi for a more traditional KBBQ feel. A prime example of what expansion in the food business does to quality. Like 10 years ago, this location and Cupbop in general was good! Now it's way overpriced for a small portion of the protein, a sad excuse for japchae, horribly made rice (what a disgrace), and cheap cabbage. Not to mention this location had like high school boys making the food....we waited a while for only 2 portions as 5+ other people came, ordered, and got their food first. I also requested sauce on the side, and it was put on top. Just overall a bad experience of waiting long, not having my request followed through, and eating very mediocre food. This isn't the most authentic Korean food you'll find in Provo but it satisfies the craving and tastes good! Last time we ordered two Combos with the Hot Bop + Veggies and Toc Bop + Veggies with a 4 spice level. Depending on who is working there, the spice levels can vary. This time the 4 was not as spicy as it has been other times we've gone but it was still good with a slight kick to it. The meat, veggies, sauce, and noodles were all really good! My only beef with Cupbop is the rice can be super mushy and soggy. Once you mix it all together, you don't really notice it as much but I do wish the rice were a little more firm/sticky? Let's just say, I finally set my curiosity to rest. Standing in line for 30 minutes during the Gallivan lunch hour was bearable thanks to the enthusiasm from the Cupbop workers. The excitement from the workers undeniably stirred a commotion to make all the lost hungry souls, that were wandering the plaza, join the already-ridiculous-long line. The truck itself was strategically located at the bottom of the descending stair case, so each step down was one step closer to ordering the ever-so-raving korean food in a cup. I ordered the hot bop (spicy pork) with no veggies and the b-bop (bbq beef) both with rice and humbly denied the "free noodles." I asked for a level 8 and was informed the gentleman next to him was the sauce master and that he would be the one who will create the level of spice I desired. Based on previous reviews, Cupbop's various levels was true to the claims of actual spice therefore I asked the sauce master for a level 8 on on the hot bop and a level 4 on the other. Disappointingly, both levels of spice, 4&8 were not spicy at all due to the additions of all the other sauces that were put into the cups. The BbQ beef in the b-pop was way too sweet for my tastebuds. And while I requested no veggies in the hot bop, there were still cabbage/lettuce present. Even though the quality and flavors of the food was definitely not worth my time waiting or the price I paid, I cannot ignore Cupbop's friendliness and time that they put forth through the presentation and service. I have been with cupbop from the beginning and I am sad to say that it is not what it used to be. Half of the cupbop experience was Jung, J. K. and Spencer shouting out orders and talking with customers. Now it is just a bunch of white dudes quietly taking your order and handing you your food. The food isn't the same either. They are putting significantly less sauce on the meals. So much so that even when I asked for extra sauce, my food was pretty dry, and I didn't even finish it. When this happened once I gave them the benefit of the doubt, but this has happened 3 times now. The chicken in the kko kko bop used to be big pieces of chicken, but now it's just shredded tiny bits. It isn't worth waiting in line for 30 minutes, and paying 8 bucks for dry bland rice. Service at the food truck was fast and upbeat. The food...I couldn't eat it, and I was starving! I love most Asian foods and have eaten a lot of rice and noodle dishes. This is not a food for anyone who doesn't like multiple sauces nor unusual textures. (I wish I had seen someone's bowl before I ordered.) I requested an order of mandoo (3 potstickers) and the cup with shredded pork. As it was explained to me, people typically put the mandoo on top of the bowl. OK, I agreed. Then I watched 3 sauces being squeezed on the bowl to make my junior spice, and I knew I was in trouble. Too many creamy sauces; should have asked for it on the side, AND I was given one mandoo (I wasn't charged for an order) and it was also buried under the sauce. Pork had the texture of meat that had been put in the blender. I liked the glass noodles - they had been spared the majority of the sauce - and then I got to the rice in the bottom. The texture was horrible, as if it had sat too long. It disintegrated in my mouth. I had my husband pull over at the nearest garbage so I could dispose of it. No. just... no. You should know this from the getgo: I'm a food purist. As much as I try to love cheap, fusion grub, I've never gotten behind even Roy Choi, the mastermind behind both the food truck and Korean fusion movements. But I know Roy well enough to know that he would be embarrassed to know that he gave rise to Cupbop. Cupbop, my friends, has no element of flavor consideration or refinement. There is very little thought in the dishes: you can get bulgogi or galbi over rice and sweet potato noodles, and then they drown the bowl--DROWN it--in gochujang and mayo-based sauces. What you get is an awful mush of melded flavors that is one note (essentially gochujang) and completely takes away from any savory qualities that the meat has to offer. I got the combo bowl, and what pork and beef I was able to save from saucy damnation was dry and undermarinated. CupBop relies on the sauces to do all of the flavor work and doesn't put any more care into the meats than they have to. No good. Both the mandu--kimchi and pork--are no good. They were soggy and the fillings were not well prepared or flavorful. If for some reasons I had to go back to CupBop, I would order the bowl totally dry and would get some sauce on the side so I could add it on or dip in it according to what I want. If it was just the food, you'd still have five stars. But add in the show that comes with, and you've got a seriously sweet food truck. I've eaten at Cupbop a few times, now, and what I can tell you about this Korean food truck is that it's delicious, the service is some of the most friendly of any business, anywhere, and you get a pretty good bang for your buck. The staff is incredible. High-energy, shouting, whooping it up. If that's not your scene (and let's face it, it may not be for everyone), then just submit your simple order and they'll respect the zen of your style. But if you want to joke around, holler, and have fun, they'll be down. On the more serious note, if you want to give them feedback and tell them how they might improve, how your experience went...they'll listen. I usually go with a combo. Some beef, some chicken, some pork. I prefer the noodles to the rice, but I'm not baggin on the rice. It's darn good, too. They recently introduced a vegetarian bibimbap dish for the non-meat crowd, and I've enjoyed that as well. They'll also do catering, and are always gracious and generous. Seriously, they're some of the nicest people I've dealt with. And the food is great. I've looked forward for this Saturday for another cupbop lunch ... I brought my six year old this time (previously was only with my wife) as I know my boy would love it. The good thing is that the truck is planned to come nearby South Jordan, closed to where we lived. We planned to come for late lunch around 1-2 pm because we just had a heavy breakfast at Waffle Luv food truck in the morning ... Alas, I saw in Facebook that they sold out. OMG, I could not believe it, as I've been waiting for the entire week ... !!! But suddenly I saw that Cupbop posted in FB that they're offering free food in their kitchen at Taylorsville for late lunch until 3:00pm, so I quickly searched in our apple map and found them (truthfully, it was not that easy to find as the kitchen is behind another restaurant) ... Jung gave me a tour of Cupbop kitchen. What I first noticed is that it is clean and organized, so I realized on why their food is not only tasty/delicious but also hygienic ... In fact I felt better about it now and will certainly bring my family and friends again. Jung made me 7.5 stars combination while my wife got the medium (5 star) and my son with no star (no spicy). We all loved our food, in fact my son really love the noodle till he ate with his hand... I love both spicy pork and the beef, it's just delicious. In the middle of our lunch, Jung gave us the dumpling with special sauce (no spicy as I had my six year old). My son loved it so much and Jung is so kind to give him the second round ... Unsure what the sauce is made of, but my son started to mix his food with the dumpling sauce and eating (licking ?) the sauce ... Yes it is that good ! One more thing is on the fresh lettuce, it is really crispy and complement the entire meal perfectly. At the end, I had a short chat with Jung and he shared me his mission and vision about his cupbop company. He truly wants to provide GREAT service complementing the good food and; hence, he doesn't feel good when he noticed that his food sold out today while he still has a lot of loyal customers looking for cupbop in the road. I now understand some of the thing he does truly differentiate himself with other Korean restaurant in Utah: "He cares about his customer and tries to exceed our expectations".
