We have extensively traveled and lived throughout the world and as such developed pallets for superb cuisine from all over. As we grew older we gleaned the best of what we enjoy and developed them into our own cooking skills. My wife being Korean born refined her cooking skills in the eastern cuisine like Korean, Japanese, Thailand, and others while I have refined my skills with French and Italian. Prescott is a beautiful place to live but its culinary basis is built on sawdust. We usually cook for ourselves if we want a top notch meal. Now the past several years I have been confined to a wheelchair and transport is very limited. We used to spend winters in Hawaii where we could get great quality meals and seafood whether we prepared them or went out. So our 40th! I wanted to do something special for my wife since I have not been living up to my end of our culinary relationship being confined to a wheelchair. Thus I started seeking out a Chef that would come to our home with his staff and prepare a custom made meal for us. I selected Chef Thomas and Copper State Kitchen. I started by a rather lengthy discussion via phone and followed up with sending Chef Thomas some of our favorite recipes, sufficient for him to develop a five-course meal for us. Chef Thomas is very professional and easy to work with. We refined the meal over the next two days we agreed on the following proposed menu; I supplied the wines. Amuse-Bouche * Fig Jam, Blue Cheese, Red Wine Poached Pear & Arugula Crostini Starter * Prime Rib Poke with sesame crunch and microgreens and pipkuala aioli (based on my deconstruction of the infamous Tiki Bar in Waikiki dish) Pasta Course * Lobster Tagliatelle in a Champagne Cream Sauce Main Course * Beef Wellington with foie gras and red wine demi-glace Dessert * Crème Brûlée (torched table-side) Wine Pairings * Santa Margarita Prosecco DOCG * Domaine Salmon Sancerre Sauvignon Blanc * Tenuta de Sesta Brunello di Montalcino 1996 * Chateau Rieussec 1st Grand Cru Classe 1863 Sauternes 2004 Every course was perfect and very enjoyable. LisaBeth was our main server and she made sure those with allergies were given TLC and she managed our water, ice, and wine table with precision. They were kind enough to do all of the dishes even though we had not paid for that time.
