Again, if I'm ever in the area, I would definitely be back for their beignets and hopefully that next time, the menus will be more clear about what they have and don't have. Things to know before you go: -They have a lot of different donut flavors and fillings, which I didn't try. But make sure to prepare enough time to wait for them to be made fresh and depending on how busy they are at the time you go. I learned that the owners met in Chile, where they were inspired to start a donut and coffee food truck. They sold their handcrafted donuts from a vintage VW bus on the streets of Santiago before eventually bringing their passion to Pennsylvania. Today, they have two locations, and I had the pleasure of visiting the Jim Thorpe shop. The storefront is charming, welcoming, and has a few seats where you can relax and enjoy your treats with a fresh cup of coffee. Best of all, everything is made fresh on-site. Their display case is filled with an impressive selection of classic and specialty donuts, along with colorful macarons, French toast cinnamon rolls, flaky croissants, and a full lineup of coffee drinks ranging from lattes to iced coffees. Honestly...wow! Deciding what to order wasn't easy. Since it was already midday, I kept it simple and went with a Boston Cream donut. It was incredibly fresh, light, and filled with rich, creamy custard, then topped with a smooth layer of chocolate. Absolutely delicious! A special shout-out to Sarah, who made the visit even better.
