We ordered eight rib eye steaks and the variety pack of summer sausages after viewing them Shark Tank. We're meat lovers and admired the presentation and decided to give them a try. First off, the Shark Tank program seemed to produce an overwhelming number of orders, creating delays, which they courteously advised us via email a few days after ordering. When the package finally arrived, the meat was mostly thawed but still cold. The Styrofoam package was thin and over sized for the contents. I immediately noticed the steaks were cut very thin, ranging from 1/2 inch to as thin as 1/4 inch in thickness, and to make matters worse, not uniform across. The weights ranged from was 9 to 10 oz, when the web site said the weights were 10-11 oz. The weight was less important to me than the thickness of the cut. I have never selected a rib eye at a store or butcher that was less than one inch in thickness, because fine steaks require a good sear on the outside when cooking without overcooking the interior, and thin steaks won't cut it.. The summer sausages were no disappointment at all. Having grown up in the Midwest where summer sausage is king, I can easily say these were the most delicious I have ever tried, and highly recommend them. The USDA grade of the beef is isn't posted so is anyone's guess. It's simply advertised as "premium" which has no standard meaning. Based on the visible marbling, my guess is "Choice", because a higher grade of "Prime" would be proudly proclaimed. They were well-trimmed, with no excess fat or gristle, though due to their thinness I had to make release cuts on the edges to keep them from cupping during cooking. I tried both grilling and pan-searing the steaks, and we found them to be both tender and delicious. If you like your beef medium-well to well done, you will probably like these steaks. But if you like them medium or rarer, you will not be able to get a good sear, unless you try sticking them in the freezer for a half hour before cooking. Echo Valley guarantees their products, and when I told them about my disappointment in the rib eye cuts, Dave Alwan personally intervened and sent me a new shipment of rib eye, this time cut 3/4 inch thick, and packed in a sturdier, appropriately sized container. Kudos to Echo Valley for customer satisfaction, and I'd have awarded five stars if the second shipment had not been necessary. I hope the quality improvement was implemented for all future shipments. read more

Because I am a non-cooker with complete mastery of take-out ordering, I decided that instead of eating out on Thanksgiving I would order Echo Valley's catered Thanksgiving meal. This was one of the best decisions I've made this holiday season! The first part that caught my eye was the $10-per-person price tag and the second part was the menu itself: BOTH turkey breast and ham, stuffing, rolls, cranberry relish, AND my choice of 3 sides. I chose garlic mashed (completely delicious), corn and cheddar casserole (yummo) and green beans with bacon & onions (very good). Oh and there was TONS of each item. Leftovers even after doling out take home portions to the guests. The only drawbacks were that their location is all the way in Bartonville but is still pretty easy to find and also the storage of the food as you pick it up the day before. I only have one fridge that is usually empty but for take-out containers so it was not a problem for me but keep that part in mind! Re-heating instructions came with the food although I thought the time estimates were kind of on the low end or else I just like my food super hot. Overall, this is the way to go people!! I spent my morning and afternoon hanging with family/friends and enjoying cocktails (seamlessly flowing from mimosas to wine as noon passed by) and only stopped for a bit to pop everything in the roaster/oven for heating. No pots/pans to clean, only ran the dishwasher once for plates and everyone raved about how yummy it all was. It was even more delicious because I wasn't forced to wake up at 6am to bathe and fondle a disgusting raw turkey with my bathrobe and glasses on! read more

Ordered some filets and all I can say is that I could have left the sharp knife in the drawer. The meat had a texture I was not used to and it separated like a beef brisket, literally just flaked off. Amazing taste. This morning I had some of Echo Valley's bacon and again, it had a terrific taste. It crisped up beautifully and had great texture as well. I saw both the initial and follow up episodes featuring "Dave" and Echo Valley Meats on ABC's "Shark Tank". Having once lived in Kansas City, known for their steaks, I got a "hankering" for a good filet mignon. Not looking to go overboard, I called the company directly to see if I could try a couple items, including 1/2 spiral ham. Long story short, I ended up sampling not only the fully cooked ham, which came with an additional seasoning packet, magnetic card, cooking/warming instructions, but many other items as well. The ham was really good, and not overly sweet. The sugar/spice sauce comes in a separate packet, so one can moniter the sweetness levels. I had some bits left on the leg after carving for freezing and offered them to a friend to feed her cat. She came over, tasted the meat and said, "forget giving this to the cat, I'M taking this for myself and making soup, etc. This is too good not to eat myself!". A couple days later I invited someone over for Echo Valley's smoked sausage and garlic cheese on crackers. We were going to munch during a home movie, served with champagne/grand marnier cocktails. But the food was so good that it was inhaled during the first 15 minutes. I shared the fully cooked smoked brisket with friends at a Friday night scrabble party and everyone had to ask where it came from, using few words, but more comments like hmmm, hmm, hmm, this is good. I also tried 2 rib eye steaks and 2 filet mignons, one "premium" and one "natural". I enjoyed the rib eyes, but absolutely loved the filet mignons. Now this is what I was longing for! I wrapped the filet mignons in bacon, gently salt & peppered each side then brushed with an olive oil/butter mixture. Seared on a hot grill, cooked medium rare, the flavor and tenderness were out of this world. My personal favorite was the "natural" filet mignon. While not as marbled for juicyness as the "premium" thicker filet, the natural filet meat was incredibly tender. Once cooked, it really did cut ..."like butter". The owner Dave happened to answer the phone when I initially called in. I'm impressed that the owner, who's had so much success, is still willing to even answer the 800# to take care of business. This is one business owner that won't need to be on "Undercover Boss", as he is still involved in the day to day tasks at all levels. read more

Having lived in St. Louis and Dallas for a number of years, I was spoiled when it came to brisket, baby back ribs and pork ribs. Both cities are home to some pretty amazing BBQ joints. However, when I moved to Peoria, I didn't know where to turn for meat - I have a smoker, so I enjoy slow-cooking, especially brisket. A friend suggested Echo Valley Meats and Dave Alwan. The folks at the store in Bartonville are awesome and I think we're almost on a first-name basis considering how many times I stop by, even for a .99 cent smoked sausage stick if I'm in the area. Anytime I'm back in Peoria visiting my family, I make sure to stop by and pick something up for the grill! Are you kidding me? Is there a way to make Summer Sausage better and great? I couldn't believe it but there is and Echo Valley Meats have the recipes!!! Their Summer Sausage is GREAT! I purchased their Gourmet Sausage and Cheese Snack Pack and am in love with the summer sausage, especially the Spicy Summer Sausage. And the cheese is fabulous. It is thick and spreadable. No fillers here. Just great, smooth cheese. I also purchased the Foreman's Pack with 2 Filets, 2 Rib-eye and 2 New York steaks. I have only tried one of the filets and it melted in my mouth. The only negative I have is that I wished I discovered them sooner. I don't have to think about what to get this Christmas as this is the place I am ordering from. Yum, Yum, YUMMY! You can't go wrong. You know the feeling? It's the time you taste something and you have to close your eyes and let the whole experience envelope you and all you can do is say, "This is GREAT!" Very disappointed. Ordered some steaks from the website they arrived in a cooler with dry ice but the steaks had thawed out. I called to make sure they were safe to eat but they had closed. Left a message asking them to contact me...never heard back from them. Decided to role the dice and cooked a rib eye last night hoping they hadn't spoiled in shipping. But the owner is an amazing person who is all about the customers and others, not himself. I had a great pleasure of meeting him years ago and not only did he offer to give me a free tour of the facility but also a 50 dollar gift card ! All just because he is a nice giving person and expects nothing in return. That 50 dollar gift card let me try the best of his meats and then a lot of extras and I have been a customer since. I have ordered from Echo Valley for over a year now and my family favorite is the smoked beef brisket. It is the perfect thing to have in the freezer when I know I won't have time to cook or when unexpected visitors decide to stay for dinner. It is already cooked and oh so yummy! Like many others I saw this gentleman on Shark Tank who seemed really committed to the best quality, etc. I ordered three items online. Steaks, ham, and brisket. The brisket was totally dry and quite a shock at how crappy it was. It was simply terrible and amazing to me how terrible and dry it was. I could get better brisket frankly, almost anywhere. It comes pre-sliced, which may be the problem, vacuum packed like bacon. Ok, whatever, On to the ham. Ok, the ham was average. Nothing special, nothing great, nothing bad, just average ham anyone could make anywhere. But understand: the price for this brisket and ham is astronomically high, compared to a market or deli. So... massive disappointment, felt really bad about buying. But the steaks were utterly superb, and my guess is that this is where the business probably originates from, killer steaks. I could not complain--except, the steaks were still MUCH more than the best steaks from a fine butcher, so... kind of yes and no. Well, I wish I could rave about my order online, because the gent seems really likeable, but beware, and only order steaks, if you do! Would I re-order? No. I can find killer steaks at my butcher.
