First time visiting Denver/Fort Collins and we happened to be walking at downtown Fort Collins when I saw how many people were walking in and out of this cute ice cream place. So we had to try it! I was not disappointed! I had the strawberry shortcake which was a gluten-free and dairy-free ice cream, which was divine!! Could've ordered another one even though I ordered a mini size but it was like a regular waffle cone. I didn't try the other flavours but they had some local and unique flavours. Free testers on a real tiny small spoon with a hatch along their counter to put your dirty spoon through! It was super cool and inventive! Try their ice cream if you're in the area! We were actually on our way to a different ice cream shop when we stumbled across this spot in the heart of Fort Collins--and I'm so glad we did. It's right in the middle of all the shopping and food, surrounded by other dessert places, but this one definitely stands out. Their ice cream is made in-house, and it sounds like they rotate flavors regularly, which is always a good sign. I went with a double chocolate flavor, and wow--it was phenomenal. It had that perfect balance of sweetness with a slight rich bitterness that real chocolate lovers will appreciate. I'm pretty sure there were brownie chunks mixed in too, which made it even better. Everything tasted fresh, super creamy, and really hit the spot. On top of that, the shop itself is small, cute, and sits right on the corner--perfect for stopping by while exploring the area. I could write a novel about this magical place and I also volunteer to be their official spokesperson (my DMs are open ). I've already told a bunch of people about this place so I suppose it's time to share my thoughts here as well. This is without a doubt my favorite ice cream shop. Why? Because I can actually eat it without feeling sick afterwards!!! As a lactose intolerant person who loves cheese and ice cream I usually suffer through the discomfort in order to enjoy these delicious dairy delights. But thanks to Edison's - that's no longer the case! When I saw this place I thought about stopping in and then a friend said their seasonal flavors were dairy free. I thought "that's odd. I wonder if they're any good". Then I looked at their site and literally said out loud "we're going here. This place was made for me!" I'm not sure what sort of Willy Wonka magic they're doing behind the scenes, but you can't tell the ice cream is dairy free! I enjoyed every single flavor I sampled and believe me I sampled a lot. My friend and I ended up splitting a flight so we could maximize our flavor options. The staff were very friendly, the pint jars are super adorable, and best of all I didn't feel terrible when I left! The best and worse thing about Edison's is that I don't live super close. It is shocking to me that Edison's has a nearly 5 star rating. I would be willing to bet that there is little, if any cream in their "ice cream". What it is is a mixture of texture modifiers and sugar and flavoring. It seems to be the norm for ice cream parlors now. As I stated in my review of "The Churn" down the street, it sits on your tongue like a freshly hawked loogie. They seem to sell it by the ton though. This little ice cream shop is the vibe. It's old timey but also so cute and trendy. They had 5 vegan flavors which are labeled on the menu board and easily found. The staff was helpful with all questions. You can add toppings to your ice cream such as olive oil or sea salt which I found unique and tasty. A friend local to Fort Collins brought my husband and I here on their opening day. The line was a little long, but it moved fast. I love that they do half scoops. I was able to get a waffle cone with: - Lemon Bar - Salted Honey - Strawberry Shortcake - Orange Infused Olive Oil Every flavor was fantastic. My favorite was the salted honey. Honeycomb ice cream is my favorite and they put giant chunks in theirs. My second favorite was the strawberry shortcake, but you honestly can't go wrong. Even though they were swamped, the staff was all incredibly friendly and helpful. They make their own waffle cones too, so make sure to try one. This is hands down the best ice cream I've had in Colorado. I wish I didn't live 1.5 hours away. I'll be back anytime I'm in Fort Collins (or anywhere nearby). read more

It has a sweet honey base but what makes it special is the crunchy honeycomb toffee chunks mixed throughout. It's sweet and salty, crunchy and smooth. My review is biased, cause if your sign and your shop is that large, I feel like you should do more than artisan scoops, especially with how highly recommended this place is. An Ice Cream Revelation at Edison's Let me start by saying: I am not an ice cream person. In 50+ years, ice cream has always been... fine. Something I could take or leave without a second thought. Until Edison's. A few months ago, friends suggested we stop by after dinner. I shrugged and thought, sure, why not. Then I tried a free sample of their Strawberry Shortcake ice cream -- and audibly gasped, "Oh. My. God." It was the best ice cream I've ever tasted in my life. Huge, juicy chunks of strawberries. Real pieces of shortcake. Luxuriously creamy ice cream. And the mix-ins are generous -- not the usual token sprinkle you find elsewhere. This flavor is fully, unapologetically loaded. My husband loves their German Chocolate and Melted Chocolate. The Lemon Bar is outstanding. They also offer creative specialty flavors with orange, olive oil, and honey that are truly unique. And for those who need it, they have plenty of gluten-free options. But for me? Edison's Strawberry Shortcake remains the single best ice cream I have ever had. Anywhere. Ever. We now go once a week. Pretty pumped to try this ice cream. Great location and great decoration. Took my kids, maybe it's our bad for not sampling the ice cream first because it was busy. But we took recommendations from the staff and had orange olive oil, honey salt, cookie dough and strawberry shortcake. The dairy free flavors also don't taste dairy free and are extremely rich and creamy.
