I went to another Mexican joint my first evening and the staff were awful. This was a breath of fresh air! I got the tacos and the red enchiladas. Both tasty and flavorful! Super impressed. I don't know that I'll ever be back in town but if I am they will be at the top of my list! For those seeing photos of a food truck, it seems as though their physical location is quite new. El Charro is a hidden gem in the southern New Mexican desert. Phenomenal array of sauces (the tomatillo was a favorite), drinks, and more. The Barbacoa Torta was phenomenal - the avocado was fresh, the barbacoa was juicy and well-seasoned without being greasy or tough, and the bread was warm and delicious. I can't stress how good this food is - better tortas than I had in Brownsville. I've only visited the new restaurant location, but please pay it a visit if you're ever in Carlsbad. read more

Four of us ate here for dinner. It was very busy with local workers , always a good sign. We ordered at the counter and then they call you up to get food. My husband and I shared the Quesabirria, 4 tacos fried with cheese and birria (shredded pork), melted inside (5+), refried beans, and rice. We subbed the rice for a salad. The meal was plenty for the two of us and so hot that we had to wait for it to cool down. YUM! Our other family members ordered the ground beef burrito (5, but she would have liked it smothered in green chili); and the other an enchilada plate(5). My family went to El Charro for dinner and it was wonderful. It's one of those places that you go up to order and give them a name, so once the food is ready they can yell out your name. At the time we went it was rather busy and the wait was a bit more than we expected. But it was worth it. It takes a while to make GOOD food. I got the steak and cheese quesadilla- WHICH WAS AMAZING. It sounds basic but it was so good. Another thing to keep in mind is that the sitting area can get a bit loud. Wanted to try something new so I ordered some birria quesadillas. You get 4 which are very stuffed with cheese and birria meat and it came with rice and cheese and beans and a Mexican coke. Our air bnb host recommended this place. She said they had the best tacos in town. We had driven seven hours and needed some inexpensive but good food. We don't normally eat at true taquerias, so it was a first time experience for most of us. The food was great tasty and very comforting. We all had tacos of various kinds and everyone was impressed. So this place is definitely not a food truck... but it is a very casual place. Family friendly, clean, fresh made food, plenty of nonalcoholic beverages to choose from. Can I just say yummy. And oh yeah yummy! The food was great, the service was great, the atmosphere was great! They had a small bar with a couple different items to help yourself. Salsa Verde was the bomb. They also had red salsa, Pico de gallo, creamy salsa Verde, cucumbers and a couple other items to top off your food. I had a chicken burrito with refried beans on the side and I put salsa Verde on my burrito made it perfect. The entire time I was there, there were couple of people cleaning tables countertops and everyone preparing food was busy no one standing around doing nothing. All the tables were full but as people came in others were leaving so everyone had a place to sit. Restrooms were clean. After you enjoy your lunch or dinner make sure to walk to the other side where they have the sweets,candy, ice cream, milkshakes. I had a fruit pop pineapple and coconut was amazing. To sum up El Charro is definitely a five-star casual family friendly affordable great tasting restaurant. This place is so good we have been here twice in 24 hours. It is no longer a food truck but a restaurant. The first time I got the 4 tacos; 2 Barbacoa and 2 Pastor. My husband got the cheese enchiladas. The next day I got the brisket torta and the barbacoa quesadilla. The food was so good! The place is also well organized and efficient.
