As an example, the Prime Rib is good, but it should be and could be excellent. Seasoning and preparation, need to be revisited. One thing completely missing is menu variety. Adding a "Chef's Special" would be a good way to start. Service has always been excellent. Ambiance needs attention., as some areas are not up to what one expects in a $60+/person dinner tab. The overall experience is "almost" memorable, and with some modest changes, it could be always memorable. I am great supporter of "The Squire", and only give these suggestions to make it even better. A chef should know you view your dinner first with your eyes, then with taste and smell. Plating was not the best. Definitely lacking. My husband got the steak sandwich that tasted fine, but was crammed into a small plate and accompanied by an additional plate for lettuce and tomato in case you wanted them on your sandwich. It was very awkward to eat. My very large house salad with Korean beef was served in a medium bowl that was already spilling over when served. Plus, the first thing I saw in this overstuffed bowl were green/gray oxidized hard boiled eggs. Yum, NOT. Eating this had salad flying everywhere. I must say the blue cheese was outstanding. It was absolutely delicious. I also enjoyed my glass of AppleResliing.

My medium rare was slightly more palatable than his medium-very chewy, but we were both disappointed in the texture. I would guess it was an inferior choice of beef on the part of the meat purveyor. Maybe it will be better if we try the Mad Boar out in the future. The Garden Salad was okay, and the Caesar salad was okay. I would like to point out that I had ONE sliced cherry tomato on the garden salad. What is it about restaurant baked potatoes? When put up beside a homemade one, you know it was cooked in a restaurant-just not as good. Horseradish sauce, au jus, and butter accompaniments were on point. We took a lot of the beef home, in hopes of having some house made French Dip sandwiches tomorrow. Since our concert in Durham was cancelled (Three Dog Night), we elected to sit in the bar area and were sufficiently entertained by a duo from Wilmington (Dos Eddies?) who played guitar and covered hits by Tom Petty, Eagles, Prince, Pure Prairie League and various hits we enjoyed. Besides the band, the highlight of the evening was our server, Chris. We watched him throughout the night wait tables, mix drinks, bus tables, chat up patrons, and do anything and everything to help the business room as smoothly as possible. He is management material!
