It is quality without the theater, a genuinely superior communion between water and bean in every conceivable way. The people breathing life into this operation are the true keepers of the flame. The staff possesses staggering knowledge of their trade, yet they carry it with the kind, friendly, unassuming grace of old friends. They are professional but wonderfully unpretentious, serving perfection with a rebellious, poetic warmth reminiscent of Patti Smith. They do not preach to you about the roast; they simply offer their craft as a gift, recognizing a fellow seeker across the counter. In a world rapidly losing its anchor to authenticity, Airship at the Pump House is damn near perfection. Mark Twain once wrote that you cannot depend on your eyes when your imagination is out of focus, but here, the vision of what coffee should be is crystal clear. It is a rare haven for purists who know the finest things are the least adorned. When you arrive there is plenty of parking on the street. You'll walk in through the entrance on Walnut street and order at the counter. It will feel like you were transported to a very industrial, open, lively atmosphere. For coffee I ordered the Hail Fellow Well Met latte (brown butter, caramel, sea salt, espresso, and oat milk). It's very impressive walking into the coffee lab but Honestly having experienced Asian coffee houses this place served no excitements! You walked in and dang nice place! But then you try to order your coffee and ehh it's worse than Starbucks! And then you sat down by their roasting machine and they don't even look at you! They don't talk to you! Or asked how's the coffee or anything. They literally didn't even look up! Nobody to explained your coffee to enhance your experience. What a DISAPPOINTMENT! Definitely would not come back. It's just a fancy Starbucks w bigger ticket price. At least their workers smiles and greeted you. Not here.
