They were tender. They appeared to be fresh and they were not overly breaded. We also had their onion rings which we found to be very delicious as well. You could actually bite into them and not have the onion come pulling out, which was a plus and once again, not heavily breaded, but a good taste to the breading they did use. We also tried their fresh pork rinds, and they were excellent if this is your type of food we've only been to a couple places that actually know how to properly make them and puddle jumpers is one of them. The other place was in North Carolina, which went out of business and then one in South Carolina near Charleston, which was a barbecue joint. Our guest had other items as they come here on a regular basis and I know they all enjoyed their food, but I didn't ask to get information for this posting As for ambience, it was a very nice place. Stand at it set alongside the lake with of course the sea planes out front although we didn't see any land we did see some. The food was all freshly cooked and not overdone at all. We each got the Thursday special which has 1 lb snow crab and 1/2 lb headless shrimp. We both added sausage and a lobster tail to our meals and I added 1/2 lb of blue crab to try. (It is a celebration after all!) Everything was Very flavorful and cooked to perfection! The one oyster I started to bite into was the WORST tasting I've had in a long time. It was gritty and tasted like it had died, before it was caught. I asked the server to let the manager or cook know this, as I was concerned for other customers' safety. She gave this look like it was me who was the problem. No manager bothered to come to our table, to ask me about it, either. She also scoffed at my reaction when she said that the Alaskan King Crabs market price went up to $92 / lb - which I thought was way overpriced for a place like Red Crab. So, I got the snow crab legs, which were excellent, as well as the boiled potatoes. The generous amount of butter had an off-putting flavor, but still went well with the crab legs. The corn on the cob sucked, as it was soggy, from clearly being kept in a warming oven or pot for too long. The cheesecake was small, but really good, although I did have to ask about desserts when the server was ready to give us the check. She was also slow in bringing out the dessert and updating our check, but nicer towards the end of the dinner. This is about the 5th time I've been to Red Crab - and just this location. They need to work on food quality consistency, better training on the servers, and take seriously when a customer nicely complains about raw oysters, that don't taste fresh and clean.
