The staff at this location is consistently friendly. It is always clean as well. On this visit I noticed the ad for the new Steak & Cheese Melt. Boasting a whopping 42g of protein, it sounded like a winner. Sandwich was ready in about 5 minutes. The bread was soft and the melt was just right. You could taste the peppers and seasoning. Took smoke breaks just outside the entrance door and every time the door opened the smoke blew in with the hot air. Went on a saturday afternoon, food was good but customer service was TERRIBLE, we didn't get our order taken for 5 minutes even though we were the only 2 in line, the lady who took our order did not put what we requested in, we also requested a to go order and they served it "for here" and when we corrected them the workers all acted annoyed and mad about having to move our stuff into a bag instead? We also saw the sandwich maker going back to the kitchen and pointing at us talking about us and being nasty to us. I couldn't be more disappointed in this visit to Firehouse Subs if they tried. I suppose the only way this could have been worse is that the food was cold, the "manager" on duty was extremely rude or...... Oh wait. All of that happened and more. The sandwich pictured is the medium Smokehouse Beef & Cheddar Brisket. I had to wait a few extra minutes for my sandwich because they forgot about my order. In the meantime, my wife ate her small Turkey Bacon Ranch sandwich in about 3 bites. Have you ever seen a "Small" sandwich at Firehouse Subs? Don't waste your time. It's ridiculously small. I received my food and it was cold. This was supposed to be a hot sandwich. I didn't ask them to heat it up because the guy who was making the sandwich kept touching his face, his neck and stroking his hair, so having anymore assistance from him would be a hard pass. But the BEST part of sandwich was finding the long dark hair in it, about 2 bites from the end. The manager on duty must have woke up on the wrong side of the bed. She was literally belittling the other employees and yelling at them in the front of the restaurant. We assumed that the manager was related to all of the employees because I can't imagine any employee allowing a supervisor to talk to them like that. It was very uncomfortable. There was one employee working out in the dining area taking care of the trash, and even he felt the wrath of Miss Manager as he wasn't removing the trash quickly enough. The pop machine looked like it hadn't been cleaned in weeks, with dry and crusty remnants of pop on the inside and outside of it. The dining room was dirty and there is no pride at this location. Firehouse Subs used to be a great place to eat. The Noblesville location is going on the "do not ever, ever, ever to there again no matter how hungry you are" list for us. read more

The smokehouse beef and cheddar brisket is one of the best sandwiches I have ever eaten. I've had it probably 40-50 times over the years with about 6-7 of those times being at this location and it is almost always amazing. I've tried many other menu items, and most are fine, but the brisket stands easily above the rest. The cherry lime aid is also excellent. The reason for deducting the two stars for this location is because of the 6-7 times I've been here, at least half of those had quite a long wait, with one time taking almost a full hour for my order. I understand they were extremely short staffed that day (and asking people in line to order if they wanted a job) but it proved to be a bit of a trend in future visits. read more

From a worker, his girlfriend and kid camping out in the seating area (Kid is probably around the 10-12 years old range with a pocket knife hooked to the waistband of his shorts) then the parents go out the back and leave the kid in the restaurant to do who knows what. Two of the remaining three employees looked as if they were Community Corrections rejects, tat'd up, looked dirty and the guy taking our order looked as if he had meth mouth. I felt sorry for the black gentleman as he was the only one who looked respectable. All employees acted respectable but can't get past the dirty appearance, dirty restaurant and the kid wondering around the restaurant. As you can imagine I took my order to go which took less than 10 minutes and in that time the employee and his girlfriend never came back or even checked on this kid. Ive been here 4-5 times and its the same every time! And people wonder why no one wants to work for this place. I gravitated towards the low(er) calorie featured special and selected a Hook and Ladder sandwich. I guess I needed to be more specific because I ended up with a sub sandwich instead of what was on the picture (oh, I needed to say LIGHT?!). I didn't realize there were several sandwiches with the SAME name! If I weren't in such a rush to get back to work, I'd have mentioned that my sandwich was wrong, but I was already on the interstate when I discovered the error. My sandwich was warm and had a horseradish flavor on it, which was pretty tasty but nothing to rave about. I wasn't asked whether I wanted it heated and wish they'd have taken more time to explain things. They had a line of hot sauces that you can dress your sandwich with ranging from mild to way too hot and a Firehouse theme. The staff seemed to enjoy being there. read more

I have been to this locations a few times. I believe that they have a decent variety on the menu and their sandwiches are usually pretty good. They also have an app where you can earn rewards. The few times I have gone the staff isn't very familiar with the app so when I have used rewards I have had issues. Overall I think it's a decent chain. 1st time trying a Firehouse Subs in IN (had been once before many years ago close to Stetson U in FLA). This place is very good. Different from Penn Station too. We both had hot subs on whole wheat roll. That's where I want to start - awesome bread, fresh and tasty!! Really made the order. The menu grabbed me by the back of neck and shook me to the core on seeing the NY Steamer - wow, hot pastrami and corned beef on the same sammy! Had to try - 2 great tastes that taste great together - and with provolone. My only complaint was that it needed a bit more deli mustard but an awesome 1st run. This place isn't trying to be anything more than it is - a darn good and unpretentious joint. SHE anxiously held back and got a plain old hot roast beef sandwich loaded. AND loved it! Both of us had medium sandwiches $5.69 each (menu standard) - large is only $2 more. If She had better taste and liked pastrami we'd get a large and share!! 4 stars.
