Sometimes, the places that really advertise as vegan are trying to push a message on you, or they're just playing to a captive audience with subpar product, but this place was all about the food. Ordering a chickpea and cabbage dish got me the hearty little black chickpeas that are different that the larger white ones you get in most American and European cuisines. Various whole spices were scattered throughout my dish, and the spice level which I asked to be high was eye-watering. A delicious dish, and while the rice seemed more than I needed given that I also ordered a fried bread, the spiciness of the chickpeas let me to use all of my (very fluffy) rice to dilute the heat. A cashew milk chai came unsweetened and had some good flavor, but I did add a small amount of the sugar they offered on the side. I wished I'd had room to try more. For being vegan, this was indulgent cuisine, and the sort of place that I wish was easier to find. read more

This place is so clean!! I met my friend here for lunch to check out this plant based Indian restaurant. There were many choices, all vegan, many gluten free options as well. They have appetizers and desserts as well. This is what I would call fast casual because you order at the counter, get your own utensils, drinks or water at a little self serve bar in between the two dining areas. I also ordered a chai tea which was unsweetened (yay!), and they prepared that for me. We tried two appetizers, the tofu Manchurian and the vegetable pakoras. Both were gluten free and both were delicious! I loved the sauce on the Manchurian dish. We had the tofu because my friend needed gluten free, but they also have this sauce with vegetables (not gf). I'm going to try it with the veggies next time! The pakoras were crispy and we had a mint chutney and a tamarind sauce that accompanied them....yum!!! We tried aloo gobi and cabbage Chana for our mains! We chose medium spice. The cabbage Chana was more spicy, but a very hearty dish. The aloo gobi was served as tender potatoes and cauliflower in spices and was a little more mild. We also had papadam (crackers) with our dish, and I would get those again. The restaurant is in a strip mall at Highlands Ranch Parkway and University across from the IHOP and next to Noodles. Service is excellent. Our cashier helped us to pick the dishes right for my friend's diet restrictions which was helpful. The dishes are labeled gluten free, but the cashew allergy she had made us ask about some things. The cook and staff were so accommodating in asking what types of food I liked and helped me curate a meal with their pick 3 options. I am in love with the pancakes and "sausage", highly recommend. I asked for a bread of some sort and the cook gave me a tortilla with my eggs and some hot sauce so it was like a vegan burrito. Total Vegan Indian Restaurant was AMAZING! We ordered the Veggie Samosa, Mushroom Manchurian, Combo Briyanai, Aloo Gobi, and Nann Bread. The samosa was obviously homemade and perfectly fried. Not too dark and not too light. Hands down, it is the best samosa I have ever had. The mushroom manchurian was seasoned perfectly, and I could taste the flavor; this has not been my experience at other Indian restaurants. The combo biryani was so good and clearly scratch-made. While I really liked it, the mushrooms were my favorite part. So next time, I will get the mushroom biryani. My husband devoured the allo gobi and declared it the best he has ever had! (he did the same with the samoas. And the nann, oh, it was so nice to eat nann again! The staff was attentive but not overbearing. Just perfect, like the food. And the place was SPOTLESS!!!! For the next few months, we will be driving between Central Park and Castle Rock on a few Saturdays each month. All our dishes were flavorful and filling! The mint chutney was superb and so fresh, we couldn't get enough of it! I do recommend the Baingan Bharta with coconut milk (it seemed to add some thickness to the dish which I personally prefer). The raita left something to be desired~I prefer a tangier/savory flavor~this was a sweeter one (maybe bc it's Nepalese/ No. Indian). Best Indian food ever!! Plus it's all vegan which is even better. All around a delicious meal! My favorite is the Tikka Masala, it's creamy, flavorful, and overall delicious. Each meal comes with rice but you should get a side of Naan too, since it's delicious. Right when you walk in you are greeted with friendly employees who help guide you through the menu. However the food is nothing short of any fancy restaurant. We ordered - momos which was very soft and great sauce to complement the veggies, pakora which was crispy and not too oily, moong salad which was fresh and healthy, and the vegetable biryani which had beautiful flavors!
