The things I liked: Queso dip - this was nice and thin, hot and had the peppers to add a tiny bite. Dripping this on the chips and my Mexican rice was my favorite part of the meal, Guacamole - the fresh diced tomatoes and red onion added crunch and flavor which I really enjoyed. Salsa - I'm a little torn on this. The salsa was fresh and flavorful but there is a different flavor here that I can't put my finger on that tasted different from other Charleston area Mexican restaurants of tried when in town. I also ordered the combination taco plate with Birria taco and chicken tinga. I wasn't expecting sour cream in the chicken tinga taco so I couldn't finish that. I tried to eat around to get the chicken but the sauce was not very good. This didn't taste like chicken tonga and I wouldn't order it again. The Birria taco also did not taste like Birria that I've had. This was more like beef roast on a taco with toppings. It wasn't bad and it wasn't good but it also didn't come with consume which was disappointing. The sides were rice and beans and while they were ok, I was expecting more flavor and authentic Mexican cheese instead of the plain shredded cheese on top. This was very, very Americanized Mexican food but I think they know their audience. Whatever you do, don't order a Margherita from here. I should've learned my lesson about Charleston area Mexican restaurants the last time I was in town but unfortunately I thought it was just the other restaurant down the block. I'm convinced they use grain alcohol or some other very cheap liquor in these in some of the Mexican restaurants in the area. The flavor was way off and was definitely not tequila. This was another success!! The freshness of all our items was amazing!! From the simple pollo con arroz to the birria grilled cheese with consomme for dipping with a side of gdl street corn and the pollo norteno (which for me will be finished tomorrow). We started with chips and salsa (yum!) and added queso that is so yummy and fresh with jalapeños and poblanos. You don't want to miss this for your table. The smells in this restaurant remind you that this is freshly cooked food to order. Wait staff are right on it with service that makes you say, why can't all restaurants have wait staff like this place. Needless to say, I continue to highly recommend Guadalajara for your enjoyment. I tried this restaurant for the first time today and the experience was not good. I ordered chicken nuggets and fries for my son, and the nuggets appear to have been recooked. They were so hard that they could not be eaten. They were burnt, dry, and inedible, and the staff could have seen it when it was placed in the container. The fries were just the opposite. They were almost pure white and still partially frozen. We tossed both the chicken and the fries. A photo is attached. I ordered Mahi Mahi that was so overcooked that it was dry and flavorless, with no seasoning or sauce. The rice, salad, and grilled vegetables that came with the fish were average at best. My wife had a Taco Salad Pastor that contained chalky, gummy port, and just some lettuce and tomatoes thrown on top, but no cheese or other sauce. My wife didn't eat most of her salad. A photo is attached. The restaurant's expansive menu is beyond its capability of producing good dishes and it obviously has serious quality control issues. For example, if you cannot prepare Mahi Mahi, leave it off your menu. If a dish comes out burnt to a crisp, either redo it, prepare something else, or take it off the bill. My husband and I tried Guadalajara for a late dinner last night. He had steak, chicken, and shrimp fajitas that he loved! His only qualm was that there wasn't much shrimp compared to the meats. I had potato enchiladas with cheese sauce and regular enchilada sauce on top. They were DELICIOUS! Everything tasted fresh. We also got queso for our chips because the complimentary salsa was a tad too spicy for me and it might be my favorite queso I've had in the area! My husband enjoyed the salsa too! I have been looking for real birria in this area for over a yr and every single one is dry roast beef with onions and cilantro thrown in with greasy consummé. I will js stop trying to find it in this area. The street corn was better than I thought it would be, probably the best thing i ate. The cheese dip and slasa are decent as well. The guac was ehh. We had a late family lunch here today while on a road trip, and it was delicious. I had the BYO Street Tacos (Burria, El Pastor, and Tinga Chicken). They were superb, especially the Quesa Birria taco. I recommend getting the extra Birria dipping sauce. So tender and flavorful. My husband had the jumbo chicken burrito and it was very good, but after tasting my Quesa Birria Taco, he said he will get three of those next time. :) The service was great too, very understanding of our youngest child (who got the Dino nuggets and said they were good). I am only giving a 3 rating because they are new and have a few hiccups that need taken care of. Naturally, they are busy just like other restaurants when they first open. The staff of Guadalajara are running around trying to do each other's jobs but what happens is some customers are left standing when two groups of people come in after you and are seated while you were asked to sit at the bar until a table opens up. I don't believe they take reservations. The servers need to take care of their assigned tables and if the server responsible for your table is running around setting tables, working the bar and being the hostess the customer isn't getting the best service available. The food is "good" but inconsistent. I was disappointed when I ordered the wildcat con arroz it is a dish with chicken, beef and shrimp over rice. The shrimp were whole, tender and tasty. The beef and chicken were cut in very thin, short slices of the two meats they were over cooked, tough and truly inedible. Sorry but I can't remember the name of the dish. The first trip spoiled me but the second time wasn't tasty, even the guacamole wasn't consistent with my first visit. I like the guacamole because it has chunks on avocado, onions and other ingredients. It didn't look like the smashed gunk found at other local Mexican restaurants. The serving sizes are inconsistent and it is very noisy in the restaurant area but you can hear the kitchen staff yelling over one another. Next time I will try having lunch and maybe it won't be as chaotic. I would happily change my rating if it gets better. read more
