I was pleasantly…read moresurprised by the nice ambiance and decor with what looked like a copper top ceiling, a main bar, a few raised tables and 2 cozy leather chairs that made me think of enjoying a nice after dinner bourbon in the study of an late 19th to early 20th century study of a business tycoon or politician from that time period.. The bar tender, Noah, was impressive and friendly in that he knew his liquor stock very well, and could explain the flavor intricacies of the various types of bourbon, vodka, and gins. They also offer some non,-alcoholic beverages for the "designated driver" of the group too. We watched Noah make everything from regular and "dirty martinis" with fresh ingredients, as well as one drink where he used a butane lighter and some tiny cedar chips in a straining tool above the drink to give it a fresh, authentic smoky look and flavor. Noah knows his stuff!!!!! The patrons were friendly, diverse, and easy to socialize with if you chose to do so. The establishment is pet friendly for "socialized pets" with a water bowl outside the establishment and some free Milkbone treats inside. Keep in mind that this establishment is a "tasting room" with the majority of products from the New Scotland Distillery, but there are other options. Just don't expect to get a Bud Light Draft or food here. The only downside is that parking in the Lark Steet and State Street location is difficult to obtain without some effort, but we managed to park our vehicles 2 blocks away. This is not a direct criticism of the establishment because the experience is well worth this minor potential inconvenience. We would definitely go back there again, especially for the specialty drinks or the flights and half flights of their bourbon and vodka products. The greenery continues inside with plants adorning a large picture window. Every surface gleams and the place smells fresh and clean... The bathroom is impeccably spotless. Classy attention to detail is the order of the day at New Scotland spirits tasting room. Our bartender, Noah, was welcoming and knowledgeable and our drinks were delicious. We will definitely be back.

It's a small batch farm winery and OMG they have the wines dialed in! Whites, reds, fruity, cooking, dry, sweet... so much variety and the grapes are actually grown here too - not just bought somewhere else and processed. It amazes me how many options and varieties they continue to offer! There's a whole better experience have a tasting when the maker is the one serving and can tell you EVERYTHING about it. One of my most favorite things about the wines here is that I never get a headache. These wines are not overloaded with sulfites like the bulk wines at distributors and stores. Their prices continue to stay in the 10's to teens range even though it apparently makes it harder to keep things running at a time everyone is tightening their wallets with everything else costing more. When it comes to owner-operated wineries, Hummingbird Hills Winery is a whole new level in quality and enjoyment when expertise meets love and passion in wine making, which is why my wife and I keep making the trip here to re-taste and restock. They've even added an off-grid getaway cabin on their property nestled up on a hilltop in an old apple orchard that they list as The Nests at Hummingbird Hills. Quality: While I didn't fall in love with any particular wine at Hummingbird Hills Winery, the experience gave me a greater appreciation for the creativity and challenges involved in the process. They had a few standard white and red wines, but the menu is filled with lots of fruit wines and specialty wines. Bink's Blackberry Burst was a highlight of the fruit wines, really capturing the blackberry flavor. The speciality wines are even more unique, Goofy Garlic Ginger, Hummingbird Coco Red, and Lion's Tooth Blend, which is a Dandelion Wine. Each one with a cool story and history. Quantity: Wine Tasting came with seven selections, and we ended up trying a few more. Value: $10 for a Wine Tasting. Ambiance: Hummingbird Hills Winery is located in upstate New York, not too far from Albany. They have a large property where they grow their own grapes, and flowers. The tasting room is in a large building. It has bars on both sides with plenty of stools for guests to utilize. Reusable boards and markers allow guests to make their selections so the process moves smoothly. The rest of the tasting room is full of local food items and crafts. Crowd: Several other couples and one family enjoying tastings. Service: Incredible, two passionate and creative individuals running this winery. Parking: The snow forced them to move parking away from their main buildings and near a garage.
