And when we got someone flagged, they took the couple that came in AFTER us first. Then our server was not friendly, I had asked if they had the mentaiko sauce and she asked me what's that? They literally hahe mentaiko on the menu.... And then our ramen came out without the spicy paste and we flagged someone down , I assume the manager? Since he was dressed differently and he rudely said that's no wrong, they just didn't give you the paste. Okay....? So it's not what I ordered lol. He came back with the paste and very condescendingly asked is that right now? I also thought the ramen wasn't very flavorful and the noodles were on the softer end. All in all won't be back

Menu is very Japanese while connecting to its American audience. The vibe has elements of Japanese culture tied into the decor and design, but music was all American top 40 (I did hear a couple of country hits too so they appeal to all of Polk County). Service both times was absolutely excellent. The servers and runners are beyond busy, but both times servers asked multiple times (it seemed as much as possible) for extra orders etc. my drink was refilled before it was finished. Plates taken away very quickly. Well oiled machine. Good times I think vary between types/categories of food, so just be patient. You might get a roll before an appetizer for AYCE, but that's ok with me. Never complaining with sushi coming out fast and fresh. Now the food. Both times I've gone for the AYCE option. It's totally worth it if you like to get a lot of different types of things or multiple rolls. My mom is NOT a sushi person and she said she loves this place. Just to give you an idea of how good the food is. She will only eat the cooked sushi. Her favorite roll so far is the Yummy Roll. Very tasty in my book too. She got the Little Tokyo Roll, but said it was bland compared to the Yummy Roll. Guess the Yummy Roll was just too Yummy LOL! Age Tofu is definitely a more Americanized version. I like the traditional style so I was not into this one as much. Top appetizer is hands down the Takoyaki. Again, this is elderly approved as my mom loved this appetizer. She also liked the dumplings and Kani salad. The fried rice was like hibachi style, so if you like that kind of rice then you'll enjoy this one. I also enjoyed the double crunchy roll. Sashimi was great and very fresh. They bring it out on ice too, so if you are protein aware/carb conscious, you can fill up on just the sashimi. Ice cream is what we had for dessert. Green Tea is the standard matcha ice cream. Very delicious. The strawberry flavor was also very good; I could feel the little seeds/strawberry bits. Overall, this is probably the best sushi place I've tried so far in Lakeland. I would go even just to have a roll. Obviously AYCE is fun, but having the option to just à la carte is nice. My Overall Rating - 2 Stars (Atmosphere, Food) Atmosphere - Seito Sushi Sand Lake is a beautiful restaurant. He said their traditional items were great, and when I asked what they had that was traditional, he said the California roll. Uhh.... No Stars. Food - The sushi is very good, but you're in a resort area so it's very expensive. Dishes that were great and memorable: Beef carpaccio - the soft, tender beef was the highlight, but the real gem of this dish was the fried wonton chip that added great crunch and a little salt.     It took several visits to Oksumi for me to realize just how special a place it is. Oh, make no…read moremistake, I knew that I liked it from the first visit, but it took a bit of reflection, and a bit of exploring the menu, for Oksumi's charm to really unfold, before me. Read other reviews, and the phrase "nothing fancy" keeps appearing. Another reviewer calls it "simple" and "to the point." This, right here, is the soul of Oksumi. It isn't a restaurant using the idea of ramen as a canvas for the ego of a chef looking to reinvent the dish. It is a ramenya, and its menu is a love letter to ramen. It does not need to uplift or reinvent ramen, because ramen is already perfect, as it is. One does not taste ego in Oksumi's dishes; one tastes respect, care, craftsmanship, and balance. Perhaps most importantly, one tastes every ingredient, and one tastes the role that every ingredient plays in the whole of one's ramen experience. As I explored the menu, as I tasted each element in my bowl, I found myself, again and again, noticing the quality of each element I tasted. The karaage is crisp, juicy inside, and its notes of melting fat aren't lost, even against a spicier base. The tonkotsu is silky upon the tongue, the shio clean but not at all simple, a subtle medley of salt, chicken, and the transparency needed to let the more delicate elements like the cilantro and bean sprouts express themselves, even as the fresh garlic and bonito express themselves more assertively. Oksumi's care and attention to balance encourages one to see these simple, elemental forms of ramen not as "basic" in the slightest, but as works of art expressed in their own whitespace. Approach the shio here not with the need for every space to be filled. This dish is a culinary Gokui no Uta. If you think there is something, there is nothing; if you think there is nothing, there is something. Over a fragile moment with calamari, in which I reflected that I had never once tasted a rubbery or greasy piece of squid at Oksumi, and in fact, had never tasted a *better* piece of squid, not even in my years on the California coast, it really came home for me. Oksumi is a place in which I stopped consuming, and started appreciating the "something-there." I wandered the menu, from tonkotsu black garlic (a flavor hurricane) to simple shio and the robustness of vegetarian Nagoya-style ramen, and let myself dissolve into the moment, into the Kai, the "something-there" that manifests when one's mind stops playing with its expectations and assumptions, and simply experiences. My happiest moments, as a diner, happen when a meal silences my unreasonable, arrogant, chattering mind, and brings me to a lighted door of experience somewhere between the late Leonard Cohen's semi-contrition and the late Anthony Bourdain's quiet confessionals in moments of being a stranger at a table. Again and again, I return to Oksumi, to understand what ramen *is*, and to humble my difficult, noisy mind to a level of quiet that can appreciate the Kai, the "something-there" that appears only when the mind is still, quiet, and allows itself to experience without a commentary track of judgment. Calling Oksumi "simple" is the highest praise one can pay it. Its ramen does not *need* adornment because its ramen is as adorned as ramen might ever need to be. Your attention is the substrate upon which Oksumi's elemental, straightforward ramen expresses itself. This place is an underrated treasure.

When your food is ready, they call your name over a microphone and you bring it to your table, which is available on a first come first serve basis. There's not really anyone working the front counter, which I thought was interesting. There's picnic tables out front where people were sitting with their dogs, so appears to be pet friendly outside. I had the curry with tofu and vegetables. I ordered spicy and enjoyed it. The heat kind of creeps up on you. I will order this again. BF had the chicken katsu - the chanko sauce was so good on it. The pickled daikon is a great touch, and if you like pickled veggies, that tiger slaw is AMAZING. We ordered a small plum wine to split. Portion sizes are HUGE, so I appreciated that everything was served in to-go containers. We definitely had leftovers that I may or may not have eaten for breakfast this morning. One thing I felt could be improved is that it's a little warm inside. Clearly they know that because there were fans on the counter. It's Florida and it's summer and their kitchen is busy in a small space, so probably the A/C is just a little overwhelmed. Great place overall.
