We like to seek new foodventures on our trips to and fro. I'm not sure we can resist a return to Hickory Hut, though. We were just passing through and tired after a long day. We were pretty unmoved as we looked around online for dinner options, but something about Hickory Hut perked our ears. It's been a while since we had barbecue that I'd called exciting and this beat that. Next time, that food wouldn't make it back to the hotel. It was fiercely wonderful. They have a "secret sauce". Most of the time when I hear that it's a red flag for someone who can't offer refined flavors and slaps one note on everything. That wasn't the case here. It was used perfectly and applied to meld with everything. Portion control for the stuff on top of the sandwiches was nice. We were actually impressed with the way we got just messy enough without hitting ridiculous. From the outside, it looks rather uninspiring. We fought with a tiny parking lot and realized there was no parking around the corner due to dedicated drive-thru space. Walked inside and got hit with the best smells and a rustic-looking open dining room with loads of history and character on the walls. It was easy enough to swing back around and park. When we got to the counter, we had some deciding to do -being newbies to the experience. The worker there was helpful and kind. We ended up with a Texas stacker and a slammer (both combos). WORTH THE WAIT!!! It was packed Friday night at the drive through but it was so delicious I didn't mind!! I called my order in earlier and waited in the drive through line so I definitely advise ordering ahead during peak hours. Our food was delicious! Just the way I love BBQ, sweet yet savory! We were passing Salina at supper time, and we like to eat local whenever possible. This place showed up on yelp, so we headed down from I-70. Fast friendly service and great food. We both got the 1/2 smoked chicken meal, and tried baked beans and potato salad. Everything was yummy. The decor was a fun mix of nostalgia and local. Hidden gem and WORTH IT. Their staff was so friendly and they were open late and quick with the food. Driving through Kansas City, we need we needed to get BBQ. It was on the later side and we kept driving knowing we were going to get some BBQ near Kansas City. Could not have made a better decision than to stop in Salina and pick up some delicious BBQ. This was my 17th 'cue stop in Kansas. At 3 PM on a Saturday afternoon, it was extremely busy, and the burnt ends long since sold out. For $17.46, I purchased a Texas Stacker sandwich (brisket, onion rings and provolone cheese), with individual sides of coleslaw and baked beans. As so many have commented, the baked beans were the star of the show. Laced with sausage, they featured a rich molasses color and sweet taste. The coleslaw, which was simply chopped cabbage with a light dressing, would make a good, cleansing bite as you move between different meats on a 2 meat platter, but it doesn't have enough character to stand on its own. As for the Stacker, the bread was really good, but the onion rings overwhelmed the chopped brisket. I took the sandwich apart, but the meat still needed to lean on the sweet BBQ sauce for its flavor. In sum, we would judge the Hut to be a worthwhile stop if you are in the neighborhood and hungry for 'cue, but we would not consider it a destination restaurant. read more

They used to be a great place for bbq, but not anymore. The pulled beef i got was dry and cold. The ribs were tough and dry.

I drive all over the country and seek out barbecue places to try. Hands down these are the best ribs I've found. I love the light coating of sauce that gets caramelized on the ribs. The chicken is tender, moist and full of flavor! The crazy baked potato with all sorts of stuff on it (sorry I can't remember what they called it) is amazing! This is one of our mandatory stops when traveling through Kansas, and is definitely one of the best BBQ places outside of Texas, and would give most BBQ joints IN Texas a run for their money! As a long-time brisket maker who smokes a locally reputable brisket from my own home, I love the taste of the brisket here and the special dipping sauce that comes with most of the entrees as well! I usually get the low-carb plate so that I get to have both brisket AND one of the tasty ribs, adding in some of the spicy sausage as my third. Stopped here after driving across the state. We had been traveling for a few weeks and hadn't had bbq the entire trip. We are from Texas, and appreciate real good bbq. This wasn't it. It wasn't bad, just not great. Service was super friendly. Our biggest gripe was that the brisket wasn't smoked on a pit. There was no bark on the brisket. Should have known when I asked for my sandwich "sliced, moist", I got a blank stare. The sausage slammer was pretty good, according to my husband. But again, no smoke flavor. FIVE STAR REVIEW FOR A FIVE STAR MOM AND POP RESTAURANT. Never did I imagine that I could possibly experience a small business/restaurant achieving a five star review in my head. The customer service alone was absolutely incredible. I had ordered a Rib Basket and my goodness, those ribs were unbelievable. Not too saucy, not too crispy, cooked to perfection and the meat was tender...mmmm mmm mmm finger licking' good! And let me tell you those baked beans taste like they were cooked in heaven. By far the best baked beans I've ever had in my entire life. In the baked beans they have sausage and bacon and it just pulls everything together. They also mastered toast. The BBQ toast. Also the condiments section was surprisingly neat and plentiful and had a self serve soft drink station where you can refill your beverages. Amazing!!!!! Such a great choice to stop on our road trip! While on our way from Kansas City to Colorado Springs we got hungry around Salina and looked up a good place to stop and came across Hickory Hut and thought Kansas City style bbq was just what we were in the mood for. The restaurant was very homey and very clean. We put in our order at the window with a very kind, and patient since there were so many good looking choices, server to go. Our food was prepared shortly and we had decided in that time that we would sit and eat. The caliber and quantity of the food was excellent and worth every penny. We had the rib basket with potato salad, the slammer basket with potato salad, the two meats dinner plate with brisket and chicken and an order of burnt ends. Everything was delicious! Salinas Kansas... driving on through from Denver to Nashville and this spot popped up with high reviews on yelp. From a distance I can see it having the option of being a drive-through. Hmmmm-- other than" in and out" drive throughs muster a negative connotation to me.. Walking in, we saw that it was an "order at the counter then seat yourself" place which I find is typical at many bbq establishments. At 3 o'clock in the afternoon the place had a fair number of people in it. The woman at the counter took her time to explain many of the featured options, which we were happy to hear since it was our first time. The restaurant is especially clean with people wiping down the drink area while we were there. I ordered half a baked potato with toppings, along with a brisket sandwich. My husband ordered a larger portion of the same and he was quite delighted with his as well. The barbecue sauce is very tasty, not overly spicy or with a strong mustard sauce. That is utterly unappealing to me! There were other options with a more zesty sauce. Buns were fresh and the fries were amazing. My only reservation? The styrofoam plates. read more

Always try to sample bbq options during my travels. Across town from my hotel, but an easy drive a few exits up and right near the interstate. I tried an item called The Slammer. This was their spicy foot long sausage on a bun and covered with their brisket, pork and a special sauce. It was great. I had it with fries, but the sandwich alone was plenty for a meal. The sausage still had that crisp break with every bite even while cover with sauce. The meats were tender as well. I want to come back to try more, but I would probably order another Slammer.
