    I'm an American in town working for a few weeks and found this place near my hotel. This place could easily be in New York or LA or any other major metropolitan city. Absolutely loved the vibe, the aesthetic, and the cocktails. So much so that my friends and I made it a point to go back. Super creative cocktails with incredible attention to detail and plenty of stories and history to go along with it all. Absolutely must try if you're in Victoria.

The bun was incredibly fresh, light, and pillowy, while the pork belly was melt-in-your-mouth tender with the perfect balance of richness and tang from the kimchi. The pickled vegetables added a bright crunch that tasted incredibly fresh. We started with the salmon tartare, and it was phenomenal! Rich, buttery, bursting with flavor, and so good we were literally fighting over the last bite. And the scallop? Order one for each person. Seriously. It's far too delicious to share. It had just the right amount of heat, leaving the perfect lingering warmth that immediately made us want another. Do yourself a favor and give yourself enough time to work your way through the menu, because every dish we tried was outstanding. Each plate was thoughtfully curated, beautifully executed, and cooked to perfection. I like to call it the C³ trifecta: curated, created, and cooked. Not drinking right now but the cocktail menu was super tempting. Every menu item sounded great. We got some help on ordering from our servers and Tanya picked ones she had enjoyed before. We also sat right beside the pick up window so it was fun seeing food come out! The food was fantastic. See pictures for what we ordered. There was an interesting smell at the entrance when we first walked in, but luckily we were seated in the back room. As recommended, we ordered family style to try a variety of dishes. Endive salad - can't really go wrong with the classic combination of apple walnut and goat cheese, however many larger pieces of endive were quite bitter. tater tots - nice presentation with the cubes. The tots were perfectly crispy on the outside and fluffy on the inside. Paired well with the jalapeño ranch, and the lumpfish caviar was a fun addition. Beef tartare- the beef was fresh and flavor was good overall. However the toast was only cut in half, made it hard to eat or cut into. Middle of the toast also got a little too soft from the juice. Fried chicken - solid fried chicken, the meat is tender and well seasoned, crispy on the outside. The semolina cube didn't add much for me, but the 3 hot sauce added a nice balance of heat and acidity. Ling cod - The fish was tender and cooked well. Surprisingly, the cabbage really stood out. Service was a bit slow, we had to flag down our server for refills. Overall we enjoyed our meal, every dish was well prepared, but nothing truly stood out as memorable. We did appreciate it being farm-to-table, and the commitment to source ingredients locally.

But it was living and moving. What followed was poor response and gaslighting of which this restaurant should be ashamed. In order not to disgust the others I stopped a woman that was working the floor to remove the plate. When I pointed to the slug why gave a small chuckle and half smile and stated, "well, it is farm to table." That is gaslighting. Right there that was a poor response. I see signs saying Michelin on this restaurant, but really...if you had served a slug to a someone rating you for a Michelin, you think you would get that rating? Highly doubtful. That should never have been served. Yes the restaurant cooked another meal which took longer. They cooked it just fine too....however their lackluster and empty words of well we do say it's farm to table doesn't replace an apology or an assurance of we will do better.

(I was here for breakfast and my eggs and bacon were EXACTLY how I ordered them, and they also made me a fantastic iced vanilla latte, too). The restaurant and the bathrooms were super clean, too (bonus!). I checked out the extensive menu and realized, heck, I should have come here the day before for lunch. They have so many sandwiches and burgers available. Just wow. IMO this place would be perfect for breakfast or lunch, or a late night snack. (I think they're open until 9pm). If you like traditional diner fare, this is the place to be, for sure.

She did figure out I was american when I tried to give her my credit card. I always forget they bring those credit card devices to your table outside the US.
