Entering the charming space reminded us of so many lovely bistros in France: the art, the furniture, the draperies. Our server, Henry, was so informative of the day's specials, and accommodating to our special requests. Sipping our wine, we could actually hear one another along with the background music (great use of textiles!) And then the food started arriving! First, the bread...a perfectly chewy French baguette with whipped butter. And then the pate. Heavens! And now I know they sell it to go! Is that carnal knowledge? So I am a gumbo snob. I make a gumbo yaya (caramel shade roux) that is amazing. My daddy, however, made a wild game gumbo with an almost black roux. R Bistro's duck and conecuh gumbo had me looking for shot in the bottom of the bowl. I literally cried because of how close it tasted to my dad's.
