This is just a short 8-minute walk from Kimpton De Witt hotel (near Centraal Station) and is a Michelin-star restaurant. We sat at the bar where we had a front row seat to the action in the kitchen. The place was hopping - nearly every table was taken - and the space was very well lit. You have a choice between picking 4, 5, or the 6 course tasting menu. We selected the five-course menu - nothing written (maybe because they knew we weren't Dutch), but all explained verbally and full of surprises. The creme brûlée inside a large marrow bone was a showstopper. The other dishes leaned in on seasonal ingredients and the meats were succulent. Overall we were disappointed with this restaurant. We each had the four course tasting menu. Started with an amuse bouche that had very little flavor. A purée with hazelnuts and citrus. Did not get the palette excited. First course was a carrot and nori terrine with a dill mousse and tarragon sorbet which was very tasty. Second course was a mishmash of things that did not all go together. A quail and redfish roll with seafood foam and ratatouille and a small roasted quail leg. Their course (main course) was so lackluster. A very small lamb sausage, a one inch piece of grilled octopus, and a very small poached fish cake wrapped in squash. The sauce was a tasteless black squid ink sauce and a very yummy basque inspired tomato coulis. Desert was a complete miss. A beignet stuffed with a very small amount of plum jam topped with a foie gras purée with matcha tea sorbet and "fig leaf snow" that had no taste. The whole thing was so overwhelmed by the foie gras mouse that it was all you tasted. The wait service was great. Good recommendations for wine by the glass. The food service out of the kitchen was less than stellar. We waited a full hour between the second and third course. As did many other around us. Not sure what was going on in the kitchen but there was no rhythm to the meal. Definitely not worth the hype. read more

The owner and staff were genuinely welcoming and the service and food were very good. I frankly felt it was better than the Michelin star restaurant I'd recently tried in Paris. Came here for a work dinner and my colleague knows the owners. They were very friendly. The location is easy to get to and close to transit and the busy parts of the center of Amsterdam. The space is unique and interesting, with the kitchen basically inside the restaurant. They have only tasting menus. The food quality was good, but we got off to a late start, so only 4 courses due to time. They did some great wine parings with unique wines. It would have been better to get more courses, as they were small. The homemade bread they made was also superb. I would come back here. read more

Was walking around Amsterdam, seeing the sights, hearing the sounds, that perfumey skunk smell in my nostrils. Dismayed by the looks of the touristy restaurants, I hit the back alleys in search of a hidden gem. This is how I found Kagmaan and Koretakas. Was seated at the bar and started off with bread and beer. Bread has perfect soft texture. Great crust. Butter is very creamy. Beverges: Double Saison Excellent subtle notes. Thin mouthfeel. Slight creaminess. Very smooth and good beer. Gulpener Superb Pilsner. No astringency. Smooth, smooth, smooth. Each gulp is as refreshing as the last. Pre-meal snack The centerpiece of this dish is the slice of mackerel in the clamshell, sitting in a pool of green chive oil. Mackerel is very fresh and soft. Good flavor and nicely accompanied by chive oil. A single piece of fried pork skin is the companion to the mackerel. Pork skin is crunchy. Fresh whole grain mustard and mayonnaise are fitting pairings. Although the mackerel and pork skin being served together is an odd couple, each seems fine by itself. 1st dish A chilled dish of rabbit and berries. Gel pate. But rabbit meat was cold and very tender, soft and delicate. Goes well with berries and the pate. Orange berries have unique and vibrant flavor in contrast with the rabbit. 2nd dish A sunflower themed dish. Sunflower seeds and kohlrabi. Roasted sunflower seeds. Roasted kohlrabi. Sunflower seed paste/butter. Cubes of molten gouda. Sunflower seed oil drizzle to finish. Some fried kohlrabi greens lends nuance. A rich but complex nuanced dish. Salty sweet savory. Thick rich mouthfeel. 3rd dish Jerusalem artichoke. Salty. Vinegar. Fried oyster interesting but the cream/foam was too salty and acidic. The mushroom was excellent tho. 4th dish Veal. I think this might be the liver of a calf as the meat has a strong bitter undertone. Sauce has a smoked--peppery--alcoholic quality. Young apples soaked in alcohol are interesting. 5th course Partridge. Foie gras. Something stuffed with nuts and peppercorns. The meat was not as flavorful as I would have liked. Surprisingly mild flavor. Thick brown sauce lends a smokiness. I felt like this last dish faltered on the meat, which lacked flavor and texture. Dessert Baked pear. Fennel. Lavender ice cream. Chocolate sauce. Meringue. Pear has been baked and cooled to a perfect texture. Not too mushy. Just enough firmness. The ice cream is more like gelato? Very dense. Not creamy more thin consistency. Which balances well with he thick and rich and creamy chocolate sauce. Texture of the ice cream just very smooth tho. A little gelatinous. Floral lavender taste A unique and inventive meal. Kaagman and Kortekaas was worth the detour. read more

Go go go!!! My boyfriend and I just happened to pass by this place. It looked "good." We were greeted by Amanda who sat us down and suggested we order the "surprise menu." We figured "why not" and obliged in addition to the wine pairing. It was phenomenal - especially after having spent a week in Italy. Unassuming and delicious. The service was impeccable. Excellent wine, good food. Servers are very in tuned with the wine menu and drink selection. Food was interesting. Chefs change the menu every week or so, and use different parts of the animal that are not often used. They also pair fish & beef on the same plate. I would describe the 6 course meal as more of six 1 bite pieces, intricately decorated with different ingredients that you would never think would taste good together. They serve bread with every course. However, if you go here, expect a 3+ hour dinner as courses are spaced out and there was a lot of the time that we got hungry in between courses. I would have preferred a more fast paced meal, but I know the servers were busy. The restaurant was packed Monday night by 7pm, and you will require a reservation unless you want to sit at the bar like we did. read more

Wonderfull addition to the new-Amsterdam school of authentic service, fantastic food and marvelous wine places. This place is especially surprising when you consider how close it is located to then inner city center (typically an indicator of tourist catered, terrible places). I recently had a fantastic fixed five course menu here with my partner. The selection of meat vs. fish dishes was both authentic and yet very familiar in taste (reminded me a bit of Rijsel and Guts & Glory type of food). Pricing was realastic and I didn't feel like I overspent a single euro dining here. Also features a very impressive wine list and very authentic, down-to-earth service that used to be extremely rare to observe in the city of Amsterdam. Only downside, they pretend like its only possible to book a table at either 18:30 or 20:30. Upon arrival however, we found out that the restaurant was not fully booked that night (about 60-70%). Although the food was awesome, it did leave a very sour taste to be lied to. read more

This is a brand new place - I went in here yesterday and it has been open only for 8 days. Given how new this place is - we were very impressed with the service, the food and the ambience. So, lets break it down bit by bit - Food - Absolutely delicious. We tried the pork croquettes while we were waiting at the bar with some champagne. We tried the set menu for the meal which was absolutely wonderful - very creative french food with beef tongue, beef brain, some fish , some veal, followed by great dessert and paired with some great wine. All the dishes were good but the red mullet was a stand out - absolutely stunning piece of well cooked fish with crispy skin! Service - very prompt and friendly. Ambience - I found the place very cozy with dim lighting and open kitchen. We got in a little early and were waiting by the bar so we got to chat with the chef and a little bit of history of the place. They have a winning team for the place - they are all from Toscanini & Bordewijk so our expectations were high and they were all met and then some. read more

I shared a lovely evening with my girlfriend on this little pearl in the centre of Amsterdam. We were met with a handshake from the waiter that should serve us this night. He also took care of our jackets and made us feel welcome. We startede out with a delicous waiting snack before we were seated, while enjoying a drink in the bar. We had the 5-course menu. It was full of surprises and had everything from duck and pigin to squid and heering. The staff was so kind and kept bringing us some of their fresh sourdough bread. Wow! What a fantastic place! I've been here 3 times now and the food, service and ambiance are all 5 stars. Their menu moves with the seasons and is absolutely delicious. You taste the passion and quality with which the team at Kaagmans cooks. I would always go for the tasting menu and match it with wine pairings. You will not be disappointed! Furthermore, they go out of their way to create a fantastic evening for you. Even the welcome is quite special as they always seem to know who you are and go out of their way to make this a special evening for you. And all at a very decent price. Great food! Every dish was unique using top quality ingredients, focusing on local and in season elements. The service was amazing and the space itself very cosy.
