I hate I can only give 5 stars! So glad my wife saw a Tic Tok posting about this place. It is in a…read moresmall town and don't sneeze when you get close because you will drive right by. Very rustic country location and once inside you know you are in a Texas country BBQ. Staff was friendly and helpful choosing our food. They suggested going with the family portions to share which was perfect. For 3 people we ordered 1/2 lb each of lean brisket (moist also available), turkey, and garlic sausage. For sides we went with coleslaw and charro beans. Way too much food for us, but perfect for a large leftover plate. Consensus of all three of us was: -Brisket had a perfect blackened crust, with a good red smoke ring. Very little fat and still very moist meat. 7 of 5 stars! -Turkey was well seasoned, very flavorful, and smoked to perfection. 6 of 5 stars! -Garlic sausage was the home run here. When we ordered they only had the garlic one left. I was hesitant to order expecting a strong garlic flavor. It was the perfect garlic hint of flavor with the amazing in-house made sausage. Outer skin had a snap when you bit into it and the flavor of the sausage is a melody of bbq flavor that overwhelms the taste buds. 10 of 5 stars! -Coleslaw was vinegary with some fresh sliced red pepper and fresh jalapeños which was a good touch. 5 of 5 stars. -Charro beans were flavored to perfection. 5 of 5 stars. -And we can't forget the bbq sauce. This was the perfect pairing for the meat. Obviously house made with the perfect balance between spicey and sweetness. Wife and I both said it was the best we ever had. Blows away the sauce from our favorite bbq location here in San Antonio. Another 10 of 5 stars! Fresh squeezed lemonade for all of us and they brought us free refills. Probably the best bbq we have had....ever!

Brisket and burnt ends were both top notch. Smoke ring on the brisket and peppery crust on the burnt ends. They had some specials that looked amazing too. We thought in our first time here we should sample the staples ....brisket, burnt ends and turkey. (also tempted by the confit sausage...) The side of beans we got was also made with love. Lots of depth of flavor. We split some of the homemade desserts as well and both the cookie and butter cake were great.

THE BEST BBQ! The…read morepeople running the place have such a comforting presence! The plating is very well done, you start with picking form options on the screen and meal options as well. At the cutting board, you will make your way down to the self serving beans and several other sides and toppings! You pay and fill your soda of choice. You can make your way to the right entry and there is several seating options inside. Or make your way outside where you see where the delicious meat is smoked. The meat is so tender and made with so much love it is the best comfort food. The potato salad is top tier I recommend 100%

Was so excited to try Bills after reading all of the positive reviews…read more It was disappointing to say the least. A complete and utter let down. Got the three meat plate ( ribs, pulled pork, and brisket.) The Ribs and pulled pork were tender hut that's where the compliments end. Both meats were severely under seasoned and there was no smoky flavor to be found. I just don't understand how the ribs could have such a nice red color from the smoke and lack any sort of smoky flavor. Thought to myself maybe the sauce can save the meat. Nope! The sauce tasted like it was having an identity crisis. Wasn't sweet or tangy and the texture was gloopy like a gravy. All it did was provide some moisture. Potato salad was average tasted like any ol potato salad you can get from Walmart or HEB. Coleslaw again average, tasted like I went to KFC and got a side of slaw from there. Finally the brisket. What a major letdown. Impressive looking bark on the outside but again lacked seasoning. Both the lean and fatty brisket were dry. How they manage to make fatty meat dry is beyond me. I've always heard that Texans take their brisket seriously and the brisket here just feels disrespectful. The atmosphere was okay. Clean and had a lot of local decor in the dining area. Final thoughts... don't waste your time. If this is the best BBQ in town you're better off going to another town to satisfy your BBQ cravings. What an absolute waste of time and money. What a disappointment.

TLDR: Was visiting my daughter, we decided to do a little road trip to some hill cntry towns. I…read morethought we would do a bbq sandwich tour/comparison. I'd earmarked Old 300 as the place in Blanco, to go up against the others. We arrived on a Monday about 1:20p. After lunch hour, and the place was packed. (that's an indicator right there. One of the slowest days for restaurants during the week, and not at peak meal time.) The line went quick. They have what's listed as a "BBQ Sandwich" - it's a blend of chopped brisket and chopped pulled pork (not in long, stringy strands) together. We were going to hit other towns & sandwiches, so for the two of us we just ordered one sandwich and a side of potato salad. We got it to-go. Sat at an empty table. Got ourselves fixins - some doctored up onions (sliced, seems like they sauté them a little in butter and then top w fresh cracked black pepper), pickles, and both their Sweet and their Spicy sauces. They brought it out quickly, less than 5 min. We opted to just eat it there instead of take it to the next town. We topped with pickles, onions, and the Sweet sauce. Oh my freakin' sweet Lord! In this small Texas town with an unassuming spot a block and a half off the main road going through town, easily one of the top 5 bbq sandwiches of all time - no joke! To break it down, we tasted all items individually. The onions are delectable - softened from the sauté, good moisture from the butter, delicious. The Sweet sauce is crazy good. A fantastic balance of sweet, tang, & slight bite. I've never said this before but it's true - told my daughter, "I could just sit here and dip these pickles in this sauce for the next 30 minutes and be completely satisfied." The sauce, yes, is that good. Daughter is not a heat/spice lover, but she did try the Spicy sauce and we both thought it was definitely tame as far as heat goes. We both thought the Spicy sauce was okay. The Sweet sauce, though, stellar! We were overwhelmed by how good it all was. When we got to the car, I said, "All the ingredients together was like a symphony." Next time I visit her, am absolutely gonna suggest another drive out to Blanco specifically, to try some other items on the menu. But I can say this, for the BBQ Sandwich, pickles, doctored onions, and Sweet sauce alone, Old 300 is worth a generous drive and you will 100 percent be happy as a lark. Thanks for fantastic meal, Old 300. Will most definitely be back.

Will certainly go back!

Anyway, it was a glorious day after 3 days of good soaking rain, which we badly needed in the hill country. The food has always been top notch grade here. The service is very efficient and professional. As for the ambience, the inside is bright and well lighted but to be impressed, you have to go outside. Since it was a glorious day of bright sunshine, coolish temperature and a very friendly breeze blowing, we had a time walking around the area. The surrounding area was lush and very green after the few days of rain! We had a lovely time taking pictures. My brother in law was very surprised about the camel story behind Camp Verde. Camels were used as experimental animals to carry provisions in the 1850's. They were stationed in this area. Unfortunately, the experiment failed because the soldiers hated the camels, who had a reportedly nasty disposition and soldiers ended up with motion sickness because of the animal's unusual walking gait. If you want to visit the area, now is a good time before the summer heat gets here. FYI, if you like Christmas, the gift shop here gets an early start in October! If you like Christmas decorations like my wife, come here and shop. They really fill up the gift shop with goodies!
