    My husband and I paid the fees, completed the training, and became Kansas City Barbeque Society…read more(KCBS) Certified Barbeque Judges over twelve years ago. We were certified to judge the following meat categories: chicken, ribs, pork, and brisket and evaluate the various meats in three different criteria: taste, appearance, and texture. You can also be a "Certified Table Captain," although I think it was called something else at the time we got KCBS certified. The Table Captain, at that time, was responsible for "plating and presentation" of the meats, which really is an important competition component. The KCBS dates back to 1985, wow, that's 40 years! Why so few stars? This is an expensive hobby in my opinion! The annual fees, costs of travel (gas, wear and tear on your vehicle), accommodations and meals, time off work to attend/travel, and the fact you are a volunteer (receive no compensation) is excessive. Also, the opportunities to judge a contest (anywhere in the United States, although it is an international society) are claimed so quickly it is nearly impossible to get a judging slot! My former coworker and 15 year Master Certified KCBS Judge, Carl, smartly "pre gamed" his KCBS judging calendar with his buddy! They signed up/applied ASAP for the events they wanted to judge, got approval to take personal leave if work days were affected, split all transportation and accommodation costs, and took turns driving to each event. Although the KCBS judges cannot fraternize with the competition teams prior to judging, I'm sure Carl enjoyed hanging out with his friends' competition and/or backyard/shade tree teams after judging. For guys like Carl, this is a fun hobby he can enjoy with his buddy and buddies that likely enriches his own personal barbequing experiences!

The restaurant is not massive so I would recommend a reservation if you can, or you may end up needing to wait for a table (they only do dinner reservations). One thing I would want to mention is the tables are a bit close together making it a little awkward when you're getting up. We had to move our table to let the folks sitting next to us in and then again when we were leaving. I couldn't wait to try the Filthy Martini, a spring specialty cocktail, which contains both pickle AND olive juice + pickle stuffed olives and a salt and pepper rim. It was just exactly what I wanted and would come back solely for the cocktail. For dinner, I had the Yoshoku Beef Curry and it was delicious. The meat was so savory and the runny egg was a perfect add. Strongly recommend if you like Japanese curry. We cannot wait to come back to try brunch and we are also looking forward to their Dinette location downtown opening on the weekends to give that spot a try as well.

I saw a woman pour a little bit of vinegar into a little paper cup and sip it straight, so in true monkey-see-monkey-do fashion I did the same. My first taste was the White Peach Balsamic. Forget everything you know about balsamic vinegar, stuff this good is on a different plane of existence altogether. Wow! So syrupy and brightly flavored I now understood the glaring lack of bread cubes. Who needs them? The White Peach was like jam. I was instantly thinking of pouring it over ice cream, or ... ? It turned my world upside down. My budget permitted a purchase of just one bottle this trip, but you can rest assured I will be coming back to add to my collection. If you're curious, I chose the Lime Jalepeno Balsamic as my first bottle. All I add is a little oil, salt & pepper and I have a salad dressing that knocks my socks off!
