Unlike "genuine" Mexican food, their refried beans are vegetarian, without the traditional lard. Their Spanish rice isn't vegetarian friendly (chicken stock used) but they have a vegetarian alternative rice. When they cook for a vegetarian, they use a different grill, so your food isn't cooked in meat grease. I know this because Jake, who served me, covered it all as soon as I mentioned that I was vegetarian. When the food arrived it looked great, and it tasted great as well.
