Hands down, the best ramen I've had outside of Japan. The broth is extremely rich, flavorful, and packed with umami. The quality of the Iberico ham takes the noodles to another level. However, expect the wait time to be 2+ hours, even outside of peak meal hours.
We ordered the Noboshi Paitan Ramen and Kurogama Ramen. The broth for both boasts a thicker consistency and is super rich, with a comforting amount of noodles. Slurping on the broth with the perfectly bouncy and chewy noodles is a delightful experience. The noodles, cooked to perfection, soak up the flavors of the broth and complement the pork beautifully. The sardine infusion in the Noboshi elevates the umami to indescribable levels. While the veggies and egg don't add much, the star of the show is the heavenly combination of broth and noodles.
However, a key frustration is the insane wait times - 2+ hours, even outside peak hours. The QR code system helps, but even tho we found ourselves at the top of the list, there'll still be 5 parties waiting ahead of us... meaning another 30 min wait.
Another oddity is the absence of hot beverages; not even hot tea or water, which is unusual for an Asian restaurant. They only serve cold teas and other cold beverages, so don't even bother asking for a hot drink.
Despite these drawbacks, I've frequented this restaurant on all my recent visits to Paris and plan to continue. The deliciousness of the ramen makes it worth enduring the frustrating wait times, lack of hot beverages, and the noisy interior. read more
