You order on a paper menu like at a sushi restaurant, picking exactly what you like--and honestly, you can go wild here. For the base price of $11.50 (for burritos and bowls), you pick your base, protein, up to two sauces, and then add as many of the mix-ins and toppings as you want. A steal, imo!
