I tried Mexican chocolate, red velvet, peanut butter chocolate chip, and Funfetti. The cookies are baked fresh, and it was about a 10 minute wait. The wait was so worth it! The cookies come out piping hot. They were crispy on the outside and deliciously chewy in the middle, and each cookie had a distinct flavor. My favorite was the Mexican chocolate chip, which was cinnamon sugar, dark chocolate chunks, and a little bit of spicy cayenne. My second favorite was the peanut butter cookie with peanut butter and chocolate chips- just a really good peanut butter cookie! The Red Velvet and the Funfetti were a tie for me. In addition to made to order cookies, Boulder Bakes has cupcakes, cake slices, ice cream, coffee, cookies cakes, and tomato soup/grilled cheese. I'm happy to say Boulder Baked is open until 9:30 Sunday-Wednesday and until 10 Thursday-Saturday making it a great spot to grab a treat late at night. They specialize in offering gluten-free and vegan cakes and cookies. The interior is a little small and there's not much seating inside so ambience is why I would give a 4/5 star rating- otherwise the treats are delicious. Now, I firmly believe a bakery's coffee should be judged the same way a singer is judged performing acoustically: no fancy tricks, no backup dancers, nowhere to hide. Their signature cake is Herbs de Provence, four layers of honey, rosemary, thyme and lavender cake with apricot honey filling frosted with goat cheese icing. I got a Hummingbird, two layers of banana, pineapple, pecan spice cake frosted with cream cheese icing. They were able to order a custom otter edible image to put on it with a happy birthday message. This was right up the birthday girl's alley and hit a home run. The cake was the best gluten free cake any of our party have had, including two celiacs. It was one of best cakes I've had, regardless of gluten. It was moist and flavorful and just so delicious.
