Carnitas is a pork dish where the pork is slow cooked and cut in to chunks then fried for a crispy finish. It is usually served with a sauce and tortillas. The pork was not only tender, but it did have the flavor profile that I expect when I order carnitas. The other great thing about Los Agava is the margaritas. There is usually a margarita of the month. This month was banana so I stuck with my usual blue margarita. WOW. These are some strong drinks.
