One of the big things for me, is how is the salsa and do they have carnitas. The salsa is tasty and flavorful and does not taste overly processed or from a can. And yes, they do have carnitas. Carnitas is a pork dish where the pork is slow cooked and cut in to chunks then fried for a crispy finish. It is usually served with a sauce and tortillas. The pork was not only tender, but it did have the flavor profile that I expect when I order carnitas. The other great thing about Los Agava is the margaritas. There is usually a margarita of the month. This month was banana so I stuck with my usual blue margarita. WOW. These are some strong drinks.
