I really appreciated his honesty in doing that-now people walked away saying how amazing the food was, and not talking about that "one thing that didn't work". For me, that makes this a positive, not a negative. Big props also go to his staff-we had an ice cream sundae bar as well, and the person who was hired to serve didn't make it. His folks stepped up and made sure that part went off without a hitch. I would trust this man and his staff to cater any event I had.
