They also pour the broth right in front of you in a Thermos, which was quite interesting if I have to say. I am going to be very critical because I'm a fan of Pho & I want them to hear my feedback. While the Broth was tasty & clean & the meats were tendered. I was not a fan of their execution on the noodles. I felt that it wasn't boiled long enough. The noodles were stuck together & that's a no no. It was a little undercooked in my opinion & kind of hard. Other than that I have no complaints. When we were finished, they brought us a complimentary spoonful of crème brûlée, which is a perfect touch to end our meal. I thought the brûlée was amazing & I could've had 10 more spoonful's of it. The plating is pretty and the giant piece of lettuce adds a nice pop of color. The Eggplant Vermicelli Bowl was interesting, I have never seen eggplant paired with vermicelli before but it is a cool vegan option. It also comes with its own sauce as opposed to the fish sauce normally eaten with vermicelli. The eggplant was soft and well prepared, although the flavor did get kind of old after a while. Eating my leftovers the next day actually tasted so much better than the first time - not sure why. We also got complimentary creme brûlée on our way out which was a nice ending.
