I had time to squeeze in one last meal before leaving Houston, and after seeing Pho Dien recommended all over TikTok and by so many friends, I knew I had to give it a try! I'll admit I was a little skeptical going in because I genuinely think my favorite pho spot in Texas is still in Austin where I live. That being said, Houston has such an incredible Vietnamese food scene that I've been making it my mission to try as many of the highly recommended spots as I can! When my pho first came out, I thought the broth was rich and flavorful, but it didn't immediately blow me away. Then the manager came over and started chatting with me, asking where I was visiting from and what some of my favorite pho spots were. He even asked what style of broth I usually like, and after I told him I tend to prefer a richer broth, he brought me a side of their fatty broth to add in. It made SUCH a difference!! It added so much depth and flavor, and I appreciated that he took the time to personalize my meal instead of just serving the food and walking away. What impressed me even more was how attentive everyone was. The manager noticed I'd asked for to-go containers even though I'd barely touched my food and came over to make sure everything was okay. I had to explain that I just wasn't as hungry as I thought I'd be haha. He was SO kind and even packed me an extra container of the fatty broth to take home, which was such a thoughtful gesture. We also ordered the grilled pork vermicelli, and WOW...it was honestly one of the best versions I've ever had! The pork was incredibly flavorful and perfectly cooked. We were supposed to go to another corner pho place on mason , but turn into this restaurant by mistake . So we settled and give it a try and never regret that ! Service was excellent , as I went with a 5 year old kid, they were very thoughtful, even gave us a pair of scissors to cut the meat for the child . Not sure how this spot has a 4.8/5 stars but from my experience it kind of felled short. The food wasn't bad but it wasn't great either. The difference from this location and bellaire is that the service here is more attentive and friendly but the food doesn't taste better than the Bellaire location. The one on bellaire has awful service but the food is spot on. There was a confusion with my order because I wanted a baby size pho since I ordered other items on the menu. I wanted a baby size pho with rare steak, tripe, tendon & fatty brisket. However it's only served for small, large & xl which is understandable since it has variety of meats. They brought out a small pho which I knew I wouldn't finish which was why I ordered a baby size in the first place. The server was new & the manager came by to apologize & voided an item on the menu. So I appreciate the kind gesture. For starters I ordered their egg-rolls and it came out piping hot. It was delicious and filling but sadly their appetizer was the best thing I've tried. The broth for my pho was just okay, it wasn't too inspiring for me & there was no wow factor. The meats were tender though especially the tendon. My rice plate was also mid since the grill pork was bland and needed more seasoning. The shrimp was grilled nicely but lacked flavor. I also prefer broken rice versus regular white rice. I firmly believe hot, humid weather is pho weather so it's always a good time to get Pho Dien Katy!! Like the creature of habit that I am, I usually get a baby sized pho tai nam (#4) and spring rolls with grilled pork. Pho Dien Katy's food is so consistently delicious that I keep coming back knowing my meal is about to hit the spot. Their vermicelli bowls are also so amazing as they're the perfect combination of light yet filling. There have been times where I'll get a bowl of pho to eat inside the restaurant then order myself a vermicelli bowl for home. I can't help myself!! The restaurant is very clean with lots of seating. When we got there, it was not too busy, so there was no wait at all. The ambiance was cozy and very Vietnamese, just like many other pho spots. We skipped appetizers since all I wanted was pho. They also offered two different types of noodles, fresh and regular pack noodles. I chooses fresh one because that's how the OG Pho is. We ordered two bowls with our choice of meats. The broth had flavor, but it still felt like it was missing something compared to the original Bellaire location. It also was not as hot as I usually like. I also ordered the egg and bone marrow bowl, which came with less marrow than I normally expect, but it was still fine. Overall, I would say this place is okay. Came on a Saturday at around 7pm. Plenty of parking available in the shopping plaza. Surprisingly wasn't busy at all, but there were a few tables dining. Service was good. We were greeted as soon as we walked inside and were told to sit anywhere we wanted. All the employees were very nice and helpful. Great customer service sets them apart from the average pho place, as many others mentioned. They ran out of bone marrow when we came, but they still had nuoc beo (fatty broth), which was great. It's complimentary, if you know to ask for it, since it's not on the menu. They also have complimentary pickled (vinegar) onions, off menu, if you like that in your pho too. PHO DAC BIET: Everything was delicious! The broth was good, the meats were fresh and tasty, the rare steak was tender, not dry or tough, and the portions were generous! We got extra noodles on the side, as we do every time we get pho, so I'm not sure how much noodle they give regularly. We both left very full though, so I'm sure it would've been enough without it. FRESH NOODLES (Banh Tuoi)+$0.75: Our server didn't mention that it would be an extra charge, so be mindful of that. It wasn't an excessive charge, but I wasn't expecting it at all, so I was confused when looking at the bill. Now, onto the noodles. They're flat, wide, and soft. Think linguine-width. I'm glad I tried it, but I definitely like traditional thin noodles better. My partner said he liked them, but it would depend on his mood if he were to get them again over the thin noodles. The fresh noodles are softer and less chewy than the traditional thin noodles, but they definitely do feel fresh. They're also just a bit more slippery, even with the wooden chopsticks. Lastly, I felt like they didn't absorb the broth flavor as much as the traditional thin noodles. It's not that noticeable because my partner didn't notice, but I'm just really particular about my pho so that kinda bummed me out. VIETNAMESE ICED COFFEE W/ CONDENSED MILK: VERY strong. The color made it look like there was chocolate in it, but that was just because there was way more coffee than condensed milk. I personally would not have liked it because I would've needed a lot more condensed milk, but my partner loved it because of how strong the coffee flavor was. EXTRA FRESH NOODLES: This was brought out in a bowl of soup! Some places serve an order of extra noodles without soup, essentially giving us a dry chunk of noodles. That makes it hard to separate (my partner and I always split the extra noodles), so I really appreciated this. TO-GO ORDER: I once ordered an XL pho to-go, hoping to get more soup than the standard large to-go container, but it was that same container you get with a large order. It didn't feel like more noodles than you'd get with a large order either. There may have been a little more meat? But I wanted more soup. I'd stick to getting a large to-go next time since there's barely a difference between the large and XL for to-go orders, but over a $2 difference. My husband got his Pho Tai (pho with rare beef), I got a Bún bò Huế (spicy beef noodle), they both tasted very good, generous size too. Let me start with I'm a super picky pho eater. I would give pho binh, the houston classic standard a 3 star. This place deserves 5 hands down, especially in katy.
