They're only open Thursday-Sunday and close at like 8pm, so every time my friend and I wanted to try, it was always either Tuesday or Wednesday! I think they may have expanded their hours and days, but I'm not sure given he updates a lot via IG and FB. I finally got to go though one Thursday and was happy to make it in! There are only a couple tables inside (a couple outside too, but it was snowy) so it's very much a take and go spot vs dine in. Luckily, someone was leaving as we got our food so we could actually enjoy it warm in house. I knew immediately that I wanted to try the quesabirria ramen special (cup of ramen birria with 3 birria tacos) and that was PLENTY. The owner was super friendly and provided recommendations and everything was absolutely delicious. It isn't the healthiest of options but tasty. A little greasy but not bad at all. It comes with a side of salsa and onions but I just dip my birria into the ramen. I just wish it came with wetnaps or something because I did feel a little messy afterwards. Right now they have a fantastic Thursday special going on where you get eight Birria tacos, and two consumes for $25. I just happened to have a gift certificate for $25 so last Thursday we ordered special on our way to trivia. There was a little confusion at pick up. I guess you can't use gifts certificates for specials, but they were understanding and said they would make an exception this one time. Our food was hot and ready to go. Got to try this place for lunch on a Saturday. There's a small parking lot with some indoor (2 tables) and outdoor seating. Since we were dining in, we ordered the quesabirria and shrimp boil. The portion size was perfect for two people and the birria was tasty without being overpowering or too greasy. It comes with salsa and onions on the side. I was offered a plastic bib for the shrimp boil and was glad I wore it, haha. The shrimp can be messy to pull apart with your hands, unless you like eating the shell/tails. It also comes with corn and sausage. There are paper towels and hand sanitizer available. The service was fast and friendly. It comes with a cup of consomme, limes, hot sauce, and not nearly enough napkins. I have to give a shout out to that hot sauce - I have no idea if it was homemade or store bought, but it was good! Finally visited for the first time today. We ordered the quesabirria tacos, and they were STUPIDLY good! The broth for dipping had incredible flavor. The menu also features birria ramen, birria pizza, and several seafood dishes (like augachiles and ceviche) that I cannot wait to try. The restaurant has limited parking and seating, so I'd recommend calling for takeout because they do get busy and sell out, which should tell you everything you need to know about how good the food is. The family who owns the restaurant were all working in the kitchen and were incredibly friendly and hospitable, checking in on us even though they were very busy. We decided to try this place on a whim as we have always wanted to try Birria tacos but not a lot of restaurants in Grand Rapids have that as an option. After we finished eating our dinner me and my eating partner both agreed this is some of the best food we've ever had in Grand Rapids hands down. We really wish they served beans and rice here, but it isn't a deal breaker. Had a great experience trying Los Mariacos De Pancho for the first time today. We ordered the quesabirria plate which comes with four quesas, consommé, limes, onion and cilantro ($15) and also the aguachiles ($18) which is raw shrimp cooked in lime which also includes cucumber, onions and cilantro. Both dishes were amazing. Best birria tacos I've had so far and the aguachiles was so fresh, flavorful, and textures were on point eating it with the tostada and all the ingredients in one bite. The flavors were so intense I was sweating my face off (eating outside and extra hot sauce didn't help ). We washed everything down with a mandarin jarrito and apple soda. Huge portions as we finished the quesabirrias but only were able to finish a quarter of the aguachiles. Will make a nice snack tomorrow. Pancho came out halfway through our meal and let us try a new taco he's been working on. It included cooked shrimp, melty cheese and a hot pepper. It was amazing please add this to the menu.
