I was lucky enough to catch the Mad Pambazos truck at Brouwerij West last Friday. Their pambazos will blow your mind about the concept of sandwich. I mean, it's a sandwich, right? Meat, cheese, whatever....no, this pambazo is something special. Each one is handcrafted to order and you can tell that each of the ingredients is super fresh. And, since this is LA, there are plenty of tasty vegetarian options....bonus, they're delicious and very Insta-worthy. I started off with their roasted Japanese sweet potato fries with the subtle curry flavor, aioli and yogurt-mint dipping sauces, and those nice crispy edges. I split Silvertongue's Chicken and the Doofwarrior with my fiancee. The fact that they had the tender, flavorful chicken and rich, complex tikka masala flavor downnnn (Silvertongue) and that dreamy roasted pork belly (Doofwarrior) has me convinced that these guys can do no wrong. The pambazos are HUGE and filled with layer after layer of tender meat and veggies. Each bite is a perfect mix of texture (crisp, chewy bun and shredded cabbage crunch), herbs, spices, and acidity. The Scrooloose taco was awesome too....tortillas made in-house from a food truck?! You can tell that these guys put care and effort into preparing the meats because it doesn't taste or look like it's made in a food truck. So good! And if the flavor-forward food isn't enough for you, they have about a dozen hot sauces that they make themselves! Since I am a bit of wimp, I did not try all of them but the blueberry habanero was my fave out of the ones I had. Finally got a chance to try Mad Pambazos while we were at Monkish Brewery over in Torrance. I've heard great things about this Mad Max themed truck (their slogan is "Oh what a lovely sandwich"). As we had a smaller appetite, we grabbed a pair of tacos. A big bonus was that they hand make every single corn tortilla. The Ton Ton Tattoo Taco comes with sliced brisket, kimchi diakon, scallions, and a korean chili vinaigrette. It was pretty good, the brisket was pretty tender and had a great marinated flavor to it. It might be a little bit spicy though, so fair warning. They have a great selection of sauces which complimented the tacos as well. Our favorite was the mango habanero but its got some real heat to it so watch out! read more

Pros: Gourmet tacos were absolutely delicious. Their "homemade" tortillas were were thin and fresh. Creativity resulting in excitement and satisfaction. Cons: $5 per taco is rather expensive. I've had other gourmet tacos at around $3 which I find reasonable. Or even better just go south of the border and pickup a plate of tacos al pastor for less. read more

In a country where authentic customer service is becoming extinct and the bottom dollar is preferred over the customer experience is where Mad Pambazos comes into the picture. I visited a friend in San Pedro and we decided to grab a few brews at the Brouwerij brewery. I was hungry and noticed the Mad Pambazos food truck parked outside in the courtyard. It was later in the night. Bryan and Joe were wrapping things up and closing down for the night. I was starving as I hadn't eaten dinner and expressed my ferocious appetite. Bryan and Joe obliged and prepared a Chicken Tiki Masala sandwich. I was ecstatic for their willingness to feed me and their keen customer service qualities. I make a point to visit whenever they are near my office, not just for the great food but also for the customer service and good conversations had while waiting for my food! *These burgers are massive and overflowing. I ate the doof warrior with a fork and knife. *The workers here are super friendly and informative. *There are a dozen bottles of salsa on ice. The doof warrior was exploding with cole slaw and flavor. I kept saying " wow this is so tasty" while eating it. Silvertongue's chicken pambazo was just as huge as the doof warrior. First Impressions: I have reluctantly taken on trying food from trucks, long gone are the days of the roach coach so with a brave force behind me I tried this interesting taste. It was outside of Monkish on a Saturday and there were A LOT of people trying these sammies. After watching them eat (and having a couple myself) I could resist no more and went to try one of these sammies. The Food: HOLY MOLY THIS THING WAS HUGE! I don't remember what it was called, I tried the sammie with the al pastor bacon. I saw other reviews who felt their food was small, but my experience was different. I defiantly had to use two hands to hold this bad boy. The flavors were absolutely incredible. I can't even begin to describe how delicious the pastor bacon was. It was thick, juicy, perfectly cooked and full of flavor. It was unlike anything I had ever eaten before. There was a rich, subtle spice that was present in every bite. It was just the right about of kick. The Service: Super friendly and happy guys! Overall: If you find yourself with this truck it is in your best interest to try it! Best (Veggie) Sandwich I had in whole United States. They came at my work place. One sandwich is more than enough to fill your hunger. But I loved that much that I had two at same time. Specialist in dipped in sandwich. But my personal favorite is Veggie falafal sandwich. And they are keeping like (approx) 12 types of hot sauces. If you love to eat hot spicy food then this is it. Decided to give this new food truck a chance out of several others in our office lineup -- and I am SO GLAD I did! I tried The People Eater (veggie) and it totally rocked my world. It kind of reminds me of a papusa, but way bigger and way better. I couldn't even finish it, but I just heated up the leftovers and it was so good the second time around that I wish I had gotten a few to take home. What really sealed the deal was their assortment of salsas -- I think I tried every version of habanero salsa they had out and could not come close to picking my favorite. Joe at the front of the truck was so cool and kind, which was just the icing on top of an awesome lunch. I'm now checking their schedule to see when I can grab my next pambazo. Great food, worth driving a long way to have. Thoughtfully prepared and created with great flavors, textures, really good ingredients with some unique combinations that are absolutely delicious, don't miss their "food truck" made pickles. Tread carefully into the tasty & unique salsas, they're really good just remember most of them are made with habaneros. They're really nice guys who took a really large leap of faith to move out here from New York and start from scratch to do this. They've put a lot of thought, a life consuming amount of effort into this (not to mention the $$) and they deliver a great experience. They deserve to rewarded with all the accolades, attention and love greater LA can offer. I'm a serious home cook that also used to run restaurants, traveled the US in the wine biz and eating out 10 or more meals a week for 20+ years. I've eaten at a lot of food trucks (and tons of restaurants from "taco joints" to the best restaurants in every city I visited) and I wholeheartedly agree that 5 stars doesn't seem to be enough because of their attention to detail, friendliness and the overall great experience. They do like to appear at breweries because the food goes so well with beer (Monkfish was great), they are beer fans and aficionados so don't be afraid to ask them for beer and food pairing suggestions. OMG this sandwich was one of the best I've ever had. I had one of the daily specials which had coconut milk and curry flavor. It was worth all of the delicious greasy sauce that I had to clean off of my fingers afterward. You definitely won't be hungry or clean after this sandwich, but it's OK. I didn't get a chance to try the fries this time, but I'm not sure I could have fit them in anyway. You get a full meal from one sandwich. I was excited to try these! this is a very new and interesting concept (I have had these in MEX and have never found them anywhere in the U.S.) I order just one because the guy who took my order said that one would be enough and that they were big. However, these are small and is not enough to eat just one. They are good, but expensive for what you are given. We all know that food trucks are overpriced. But charging 9dls for one little "sandwich" (that is not as big as a sandwich) is way over-priced. No sides, and did not come with a top bun (like it was depicted in the pictures). read more

We were a large group so we decided to all order different items. We were not disappointed. We tried the silvertongue, toecutter, banh mi taco, ton ton taco, fried sweet potatoes, and pozole. Everything had just the right amount of spice, even my 4 year old son and infant daughter enjoyed the food. If you want more spice they have all kinds of home made hot sauces. They are very different also, they are not just the same hot sauce with different levels of heat. Everything is amazing. One of the guys mentioned they are looking to open an actual restaurant, I can't wait to try the food when it happens. The two guys running the truck we're very friendly and explained what everything was on the menu.The little guy was friendly, he mentioned he was from the east coast and gave me a hug. Weird. On my way to get my usual sad salad for lunch I smelled this deliciousness and couldn't help but trying it out. At first glance everything looks very different but I got the idea and ordered the shredded chicken pambazo. OMG mother of all food that is holy, this is right there. I love adventurous food, friendly service and a great price point. This truck delivered on all of that today! Joe at the counter was incredibly friendly and informative, which was very welcome since I was being indecisive. After asking about some of my food preferences he directed me to the "Toecutter" and OMG IT IS SO GOOD STOP WHAT YOU'RE DOING AND GO EAT IT NOW. It was a great hearty portion and the price was sweet. At some point one of my friends got up just to read the menu again and Joe came out to make sure everything was tasting delicious (it sooo was). I was already loving my meal, but that super impressed me and made me feel like sure, MP definitely cares about making great food, but they also care about making friends and creating a chill vibe for you to enjoy your meal. Before I left I had to go back and tell them what a great lunch I had. I 100% don't know these guys, but I want them to be my friends. Lol. The Mad Max theme is super original, too- loved it! This truck came by the Fox studio lot today and boy was it tasty! I ordered the Toecutter, a guajillo braised goat shoulder sandwich topped with Oaxaca cheese, cabbage salad, pickled jalapeños, cojita and cream. It was so damn flavorful and had the most unique taste to it from the toppings, my mouth was watering my entire meal. Perfectly cooked & hot as hell when my order was ready. I also ordered a brussel sprout salad that was killer too. Not to mention they had hot salsas and dressings to put on top of your sandwiches and salads that had a kick of flavor (carrot jalapeño salsa, mango jalapeño salsa, etc.). Do not eat here.... I bought from them today and I ordered a few items (tacos, chicken jerk sandwich and Japanese fries. I took a few bites of the jerk sandwich at first it tasted ok but then it started to taste sour. I thought it was the dressing but the more I ate the worse it tasted so I stopped. I took a bite of the taco and that also tasted really bad. At first I just thought it was a bad mix of flavors but then I started to feel sick and nauseating. I felt so bad I decided to take some hot mint tea to calm me down. It didn't work.... I just threw up twice and I still feel sick....sweating all over the place. Dam this sucks....
