There is a sushi chef in the middle who makes the sushi right in front of you which is pretty entertaining. As for ordering, you can either ask the chef or your server. They are always putting different things on the conveyor belt so there is always an assortment of sushi to try. We weren't a fan of the sashimi but we did order a lot of the rolls. Their spicy ahi is different from what we're used to - it's just plain ahi with a drop of sriracha on top. Our favorite roll was probably the deep fried shrimp roll and California roll.
