Memoirs was our food and bar caterer for our wedding earlier this May at Loulu Palm. Because we are not local, we did not get to schedule a tasting before hiring them. It is definitely nerve racking to make that decision without a tasting but we're super happy with their food and service! Taylor was really helpful and answered my endless questions during the planning process. They were also super accommodating and open to customizing some of the requests we had for both our food and bar menus. All the apps and entrees were delicious, and all of their staff is extremely friendly. The only caveat that may be helpful for others is to know they do require a pretty extensive list of equipment rentals that you need to provide, which is not included in their catering fee. We used Memoirs for our May 2023 wedding and were blown away with their food and service. My husband has celiac (can't have gluten) and they helped us craft a perfect menu with passed appetizers and a family-style dinner, all of which was gluten-free. All our guest raved about the food and it was one of our favorite parts of the day! The flavors were incredible, and everything was prepared perfectly and looked beautiful. Taylor was our contact and set up a great tasting for us, answered so many questions, and helped guide our decisions to make sure we had a well-rounded menu. We had our wedding of roughly 60 guests at Kualoa Ranch catered by Memoirs. We had done a buffet along with the middle tier bar package. We hadn't done a tasting in advance because of timing, but the food and service thoroughly exceeded expectations. Food - Apps - we had done avo toast, poke cone and pork belly appetizers. They were all beautiful and delicious. For the buffet - we had done greens, short rib, Maco crusted fresh catch, garlic mash and a few other options (seasonal vegetables with pesto I think). The short rib was 5/5 - more tender than we ever expected. The fish was also tender and delicious. Our guests continued to complement the food to us well after the wedding! I'm fairly critical of food and Bar - we had two signature cocktails which I was keen on (French 75 and a ginger mule of some sort) and they were both a hit along with a selection of beer and spirits which they helped us to customized. The bar tender provided such great service - we even had guests commenting after the wedding. Dessert - we didn't do dessert with them, since we had ordered a cake elsewhere. Overall - we were so happy with how everything turned out! I was a bit unsure heading in because there's not much to go off on their website, but everyone truly raved and they take such care. I AM A BELIEVER. For some background: We hired Memoirs to cater our outdoor wedding at Kualoa Ranch. We started off with a very tight budget with a guest count of 250 (local wedding, this is like a norm right?) While good food was a priority for us at our wedding, we were honestly just thinking about ordering from our favorite bento place to keep things easy, affordable, and appeal to the masses. We are a no frills kind of couple anyway, we just want good food for a good price. Then, our wedding planner recommended Memoirs. I had never heard of Memoirs prior to her recommendation. When I started looking them up, I saw they had a fancy website with fancy dishes and said to myself, "nah, this must be way out of our budget, and our local families probably wouldn't appreciate it even if we could afford it." But out wedding planner highly recommended them, and we totally trusted her, so we went for it. BEST DECISION EVER MADE. TASTING: Totally customizable tasting menu. You e-mail them a list of preferences or menus you like from their website, and they will finalize a tasting menu with you that will fit your budget (key here, they will work with whatever budget you have.) We are self-proclaimed "foodies" (or I'm just picky as heck), so we worked through at least 3 different menus and had 3 or maybe 4 different tastings? before we finalized everything for the big day. Chef John was there at each tasting to get feedback and adjust the menu to exactly what we wanted. I think each tasting is like $25 per person, depending on your choices, but as we found out, this is an extremely good value because we left completely stuffed, and even took home boxes of leftovers from our tastings. FOOD: Our final menu was a hybrid of few of there standard items, and a few custom items based on our preferences. The quality of food is honestly like high-end $$$$ restaurant, but for a way more affordable price. All our guests couldn't stop raving about the food at our wedding, and kept asking us where it was from. Our final menu: - Spicy beet poke on crispy rice cake - Torched beef nigiri, ponzu and green onion - Chicken pate on crostini, poha berry, yuzu caviar - Local farm greens with shaved vegetables and honey macadamia vinaigrette - Seared ahi belly and yuzu scallop with black garlic, soy caviar, and bamboo rice - Grilled Andrade Ribeye and Herb roasted chicken, charred scallion potato and ponzu cream - Strawberry and lilikoi shortcake - Dark chocolate crunch bar with sea salt and caramel - Matcha panna cotta with honey and toasted sesame (Custom dessert) Also, just to note, our venue was completely unplugged, meaning no electricity, bathroom, and just a water hose on site. These guys had to carry in their own oven, power, etc, to PREP THE FOOD ON-SITE. SO IT IS DAMN FRESH. SERVICE: Impeccable. Throughout the planning process, Taylor (managed most communications) and Chef John were always professional yet down-to-earth, and receptive to our feedback along the way for any changes we requested. On the day of the wedding, the entire team looked real slick and clean, and super professional, very prompt with plating dishes and removing excess trash. COMMUNICATION: Excellent. They do get busy around peak wedding season, which is understandable. I had many many questions along the way (we were also a COVID wedding, so lots of rescheduling along the way), so the fact that they kept up with me is an accomplishment. VALUE: Absolutely a steal, diamond in the rough, gem beyond gems, I don't even know how else to emphasize this!!! I am SO grateful our planner recommended these guys. They deliver HIGH QUALITY food and professional service that will work with your budget! **BONUS: So of course on wedding night, we were too busy/excited to eat, so unfortunately we didn't get to even touch our dessert that night. Chef John heard about this, and personally delivered a box of our wedding desserts to our home a week later. This guy and this team is an absolute GEM. I cannot emphasize this enough. Every year, at American Cancer Society, we host an event in August to celebrate cancer survivors and honor those who have transitioned to spirit; and every year, we ask Memoirs Hawaii to cater it. After all, our community of survivors deserves the best. There are a lot of moving parts to planning such an important event, but as the organizer, the only aspect of planning that I didn't have to worry about was Memoirs. I knew they would arrive on time and provide delicious viands for our attendees. Some participants even stated it was the best food they've ever had at an event. I agree: seared catch with okinawan sweet potato and herb roasted chicken with creamy polenta, to name a few! Wow, just attended a wedding with these caterers and they were incredible. My husband and I have dietary restrictions and one of the stellar waitstaff had the list of ingredients in her pocket! When she met us during cocktail hour, she even had the chef make something specifically for us that we could eat. NXTevent recently worked with Memoirs during an annual conference hosted in Honolulu over memorial day weekend. When initially searching we had a difficult time finding a local caterer we felt could achieve the challenges of catering for over 4,500 guests at once. Memoirs took our spur of the moment call while we were on our site inspection and immediately set up an informational meeting with us so we could learn about their organization and team. Memoirs was willing and eager to step up to the challenge and worked with us hand in hand to create the style or menu that would work best for our guests all while achieving the level of destination driven cuisine we were looking for in order to focus on our host city. Planning a destination wedding is stressful enough and you need a catering team that is responsive and happy to be part of your big day. I was so excited to work with them, their instagram pics were so beautiful. We even scheduled a tasting when we flew in from California. I should have paid attention to the red flags: 1) most of my calls would go to voicemail, it was rare to have someone pick up a call. 2) a week after the tasting, we checked in with them...not the other way around. 3) after we took off some items from the menu, the price stayed the same and we reminded them to adjust the price according to the new menu. Wouldn't you think a catering company that met you in person and was excited to work with you would at least make you feel like a priority? I worked with them for 3 months and was in the last stages of getting a final menu and contract, but they never called back and I've called to check-in and to this day haven't gotten a response! How disrespectful and inconsiderate of the time, energy and hope we invested, this is NOT a catering team I'd want for my big day. They can cater up to 2 wedding/event and it seems once they have at least one event booked you become a low priority. Also they flip-flop in their requirement for alcohol purchase/bartending service. They just received their liquor license and I received an email from Thomas which read: "In speaking with the liquor commission and our insurance provider, Memoirs is required to provide alcohol to any of its catering events. That prohibits our clients from purchasing alcohol wholesale and providing their own during a Memoirs catered event." Then when my coordinator emailed him 3 days later, his response changed to: "In short, clients can still purchase alcohol themselves." What's the real story here??? - Do you want to chase after your catering team to keep them on track? - Do you enjoy waiting and wondering if anyone will get back to you? Even after you check-in to remind them? - Do you like learning that you may have been lied to? If not, I recommend looking elsewhere like Ke Nui Kitchen or Island Fusion Catering. They are responsive, respectful, and most importantly, CARING. You are the bride/groom, you need a solid team to support you up to and on your wedding day. You don't have time to waste or work harder than you have to so you can babysit your catering team. Seriously, look elsewhere! read more

From the start the Memoirs team were so helpful and were across all the food/drink and staff requests I had in the lead up to the event. Rosanna even picked up the fact I had accidentally made a typo on the number of vegetarian meals required and she saved the day by following-up for clarification rather than processing the request. Our wedding food was lovely - the starters, entrees (mains) and those amazing malasadas as a dance floor snack were a treat! Not an easy task with delays during the evening. The steak was cooked exactly right - again not easy with a group and the delays. The appetizers were fabulous. Rosanna was amazing. She had everything under control - from an initial site visit by herself to determine the best layout for our event, coordinating all the rentals, down to every last detail. Dear fellow Yelpers, I have been taking advantage of your reviews since becoming a member back in 2009. Today I am compelled to finally write my first review and share with everyone my wonderful experience with Memoirs. My fiancé and I recently visited Honolulu to finalize our upcoming wedding. It seemed to us finding a caterer to be the most challenging. Cake, flowers, location was easy to decide. We were looking for a caterer to wow our guests while trying to stay savvy within a wedding industry that can easily suck you dry. Chef Foster and Memoirs came highly recommended by a friend and she was right to send us here. We were nearing the end of our trip when Chef Foster called to invite us to a free tasting (we found others charge anywhere from $25-$50/person for tastings) that same day! He and his staff were friendly, personable and very professional. The tasting room was pleasantly decorated. Chef was able to work with our budget on the spot (other caterers will contact you with a quote 2 to 3 days out). The food was amazing! We started with appetizers. The Hamachi ceviche melts in your mouth! The goat cheese shrimp cakes were delightful and pork belly bao was so yummy you'll never want the usual manapua! They also served us the beef filet with sautéed mushrooms perfectly done and seared opakapaka with lilikoi butter sauce. This was my favorite! The fish was nicely seared while keeping the center soft. My fiancé and I talked about their food for days. And after meeting with so many caterers, he simply asked me whose menu made me the happiest and we'll go with them. The decision to sign with Chef Foster and his team has made this destination wedding planning less stressful knowing the food will be extraordinary! I'm shocked I didn't write a review earlier, Chef Peter and his team were amazing and quite honestly they were very fair in their price for a fully catered pass app party. We decided to thank friends and family that helped us remodel our new house and put together an event as a thank-you and a house warming party. The event was amazing, Chef Peter listened to all of our needs and catered an amazing evening that is still the talk of our friends months later. Honestly, Chef Peter can not only cater a party to wow the senses and the mind but he will cater to your needs. That was the beauty of it, we wanted a tapas style, small plates party since people would be mingling and it worked out perfectly. They brought their set-up to our house, used our kitchen as needed and cooked outside when needed. They cleaned up, packed up leftovers and had our place looking better than I could have wished for. These guys are the real deal, don't bother looking elsewhere because we screened five other companies before realizing that Chef Peter actually cares, brings his A-game to the table and is priced sooo reasonable. read more

The process of choosing one good caterer for my company anniversary was crazy but fun for both me and my staff. We went and called a few restaurants and asked for the chefs directly and got totally blown off. I'll always recommend what happened next. We went DIRECTLY to Chefs who cater. It was easy To get through to them with the little restaurant experience I have under my belt as it were Their prices were much lower than what we were quoted by the catering companies that I guess hire them as third party I suppose. We picked a few places and set dates for our tastings. After a few tastings it was an easy choice,we went with Memoirs. The chef there tuned the menu exactly to our preferences and after 2 FREE tastings our budget was dialed. The Memoirs online process was so fast and easy and we were able to get pricing right away before we even started the process , They were the only vendor that gave instant pricing and a free consultation all in one. Food was the most important thing to us so the choice was easy when we first tried their food. The first tasting was for a very expensive menu but we were sold on the presentation, textures and flavors. They support local growers and that was also a plus but in the end we thought it was too high. I guess you get what you pay for. One week later I called Chef Foster who actually did another tasting 3 days later. Together we developed a comfort food menu at a lower price not on the website, but with the same flare and presentation as the first menu. The food was amazing both times and they give you all the pictures before and after the tasting for reference which helps. With Memoirs we felt special and not just ordinary. You can tell they care about your event and your food more than other groups. It was not only the ease of the hiring process but it was the little details that made the investment worth it. Excellent-- perhaps the best catering experience I've ever had. The entire staff was helpful and friendly and the food is outstanding. When I asked Chef Foster if he was the "executive chef", he instead insisted he was the "executive dishwasher." Great sense of humor and humble. The food itself was masterfully executed-- the appetizers were perfect. Goat cheese stuffed shrimp cakes ... still warm and crisp with the perfect proportion of goat cheese and shrimp along with tender pieces of onion. Hamachi-truffle-avocado ceviche in lumpia cones ... brilliant to go with the lumpia cones which add just the right degree of crunch. The ceviche was smooth and delicious. Bacon crusted chicken-- the chicken was perfectly spiced with a snap of fresh cracked black pepper. The meal itself was delicious. At one counter, there was salad-- fresh, locally grown greens with two delicious dressings (I couldn't decide which one I liked more)-- and toppings of fried quinoa and the tiny crunchy arare-like rice balls. Fabulous. For the main course, there was beef filet with port and shallot crust, mushroom and roughage with oxtail demi-glace. Umm ... AMAZING. I try to avoid eat beef but in this case the filet mignon was so melt in the mouth, utterly amazing deliciousness that I went back for seconds. There's also a creamy and delicious celery root sauce that is superb in its subtleties of flavor and richness. The mushrooms were phenomenal with just the right amount of bite. There was also a chicken entree that came with seared greens. The greens and the spices were spot-on, and everyone enjoyed this dish. Dessert was again, superb, like the earlier parts of the meal. FRESHLY made malasadas. Yes. They fried them right there, 40 feet away from our gathering. Hot and delicious. Even better, the dough is fermented so you get an alcohol-like bite, similar to sourdough. Phenomenal. read more

Under the direction of Chef Peter Foster, Memoris Hawaii produces different menus and dishes that are sure to please the palate and make you go "yum!" While, I can't comment on their planning process or anything to that effect, I can write about the bites that I was able to enjoy at recent Off-Premise dinner that surely won me over. The menu showcased wonderful skill and thought. Chef Peter incorporated local ingredients to his styling which clearly showcased his training across the country and in Europe. Very few chefs would think to incorporate fresh catch with a bacon taragon vinaigrette over a celeric puree. It showed local ingredients in a new combination that worked extremely well together. It truly was a unique dinner that clearly had more highs than lows and his innovative approach to private cooking certainly sets Memoirs apart from the rest. read more

My fiance and I were looking for a private chef to cater our wedding in Oahu and at the recommendation of our wedding planner, we scheduled a tasting with Chef Foster. We arrived at his office which doesn't look like much from the outside but inside we found a beautifully laid out table and inviting decor which immediately put us at ease. Presentation - Chef Foster's food presentation is top-notch. Everything was beautifully plated and proportioned. We could have been dining in a 5-star restaurant for all we knew. (Btw he loves square plates) Food - The food was very good. Chef Foster's creativity and culinary training shines through in his choice of ingredients, flavors, and texture combinations. He likes to push the envelope but rest assured, can also do the basics just as well. Overall, we thoroughly enjoyed our tasting and we found Chef Foster to be quite personable and professional. We appreciated his quick replies to our emails and the way he was able to give us a quote almost immediately. That's why he won our business. My fiance and I have been to a few tastings, but we went to memoirs last, and I am so glad we did! Here is a quick play by play: My fiance and I roll up and she is immediately skeptical due to the look of the place from the outside, and she said something like, " You sure this is the right place?" Chef Foster greets us, and brings us into his place, and we realize that yes, we are in the right place. We are seated, and one of Foster's chefs greets us with water, and we get right to it. We go over our menu as the appetizers come out. We tried the: North Shore potato samosa w/ dill yogurt and rosted red pepper sauce Lime truffle-oil avocado ceviche on sesame cones and Roasted pork belly in mini bao with hoisin bourbon glaze can you say ho....broke da mouth The samosa was a bite size flavorful packet of deliciousness that would satisfy vegetarians and carnivores alike. The ceviche cones were o so ono, and what can i say about the roasted mini bao.... but OMG. look out royal kitchen, better hope mr foster doesn't open a mini bao / manapua shop :) Ok, so apps are "out of the way", and we are moving on to the main course... Before it comes out, my lovely fiance said something like this, " How come you chose fish only for the main course? There will probably be some people who wont want fish... in fact, I dont usually like cooked fish" Chef Foster was on it, and pulled up some pictures of a few different options in case we anted to do something other than fish. The main course comes out, and it is a fresh troll caught mahi mahi, over a bed of local rainbow chard, on celeriac puree with a oxtail reduction! A plate gets put in front of my fiance and she takes a bite, while I turn to Chef Foster to tell him it looks amazing. I turn back to my fiance, and the plate is wiped CLEAN! I look at her in amazement, and she said, " That was so ONO! I can't imagine anyone not liking that!" Thank you Chef Foster. You da bestest! Your team is very skilled, and going through Memoirs has made our wedding feel much less stressful, knowing that such a huge part of it is in the care of such a skilled, capable man. This is truly as good as it gets! The Experience We just cannot say enough about Chef Peter and his team. From the day we landed in Hawaii to meet with him for our tasting to the final day of the wedding, he has been an absolute pleasure to work with. During our tasting, we ended up changing our serving style and menu quite a bit from our original plan, and this was only 5 days before the wedding. His genuine desire to please us and work with us to make us happy was more than any bride could ask for. We were awed by his absolute passion for food- from paddling out into the ocean to gather his own salt, to letting us taste the greens he'd picked at a farm earlier that day to even cautioning us about certain dishes once he understood our tastes. I have a tremendous love of food as well, which had led me down a disappointed path of possible caterers for our wedding. Once we found Memoirs, I knew our search was over. During the tasting, my "grilled cheese sandwich" type of husband was so impressed by the food, it took all he had not to lick the plates. Out of all of our vendors, Memoirs was by far, the most enjoyable to work with because of the perfect mixture of professionalism and familiarity. I don't know any other vendor who would sit with us for 3 hours brainstorming with us to ensure he was aligned with our goals so that we would be 100% happy with the menu, service, style, and even our signature cocktails. Lastly, even though I played the part of the excited bride well, Chef Peter was great in not exploiting my eagerness and overcharging me. He worked with us on the spot to get to a mutually beneficial cost for both parties. The Food We went from initially wanting an Action Station/Buffet to a fully plated 6 course meal with 2 passed apps. Our guests could not compliment the food more, and my Pastry Chef Father in law, who also owns a gourmet chocolate business, was so impressed that he wanted to make a formal speech during the wedding to acknowledge and thank Chef Peter in front of our guests (which sadly we ended up not having time for during the chaos). My only REGRET If I could change one thing, it would be that I had made time to sit down and enjoy every plate. I ran around too much and unfortunately didn't have a chance to enjoy the food as much as I would have liked- but that's my fault. Thank you Chef Peter and Memoirs!
