    ORIGIN: After decades working in venture capital, local resident Elliott Davis initiated a venture of his own in 2019 when he opened Mine Hill Distillery. LOCATION: The distillery is located in a former 19th century tobacco processing building, steps away from the train station that once supported transport of mine and agricultural products from Litchfield County to New York City. CONCEPT: The distillery produces spirits -- gin, bourbon, rye, vodka, and sweet vermouth -- that use or reference local natural resources, including spring water, grains, maple syrup, and native plant extracts. BACKGROUND: The distillery is just off a primary thoroughfare that parallels the Shepaug River, and as such I had passed the complex, with its dilapidated and forlorn historic structures, many times hoping to see that someone would take note of the "for sale" sign and restore. Solicited by a town selectman to do just that, Davis has not only restored the appearance of multiple structures and garnered historic preservation status, but the spirit of local production they had once served. This is reflected in the distillery's slogan: "Still Made in Connecticut". EXPERIENCE: Products of the distillery can be found in restaurants and liquor stores, but a visit to the distillery invites opportunity to see some of the equipment, as well as a taste and purchase each product. A tasting room is located in the former tobacco/cigar processing building. Exposed old wood beams line the room, and the tobacco-stained wood floor reflects signs of its past. Further situating the historical context of the site, informative historical photos adorn the walls. Having come to appreciate incorporation of local native plants in cocktails during a Colorado wildflower festival workshop, I zoomed in on the award-winning gin. The distillery representative explained to me that the gin is infused with flavors that reflect the surrounding flora, including eastern white pine. I enjoyed the taste and thought it would make a winter/holiday season cocktail that was evocative of the season. Cocktail recipe cards are published for each product, making this vision effortless. TIPS: The distillery is an attractive, picturesque destination for those looking to coordinate a day trip to rural NW Connecticut. A nature preserve is nearby for hiking, and the waterfall that once powered mills along its shore is stunning. Consider including Mine Hill Distillery as part of a Connecticut Spirits Trail!     Absolutely loved this place from the moment we drove up and were welcomed by the owner. This is not just another distillery - they are making a fantastic range of spirits of the highest quality. We particularly loved the barrel draw sneak peak of their upcoming bourbon and their rye was fantastic. Beyond the liquid this is a history tour with some wonderful and talented people. Strong recommend a visit.

It is dedicated to bringing high quality and unique spirits and beverages to the market. Zahariadis founded the Cocktail Chemist Bev Company which was acquired by CoreBev in late 2021. He has since become the COO of CoreBev. In early 2024, CoreBev acquired Waterbury-based Continuum Distilling which originally opened in 2020. Continuum's original founder Brandon Collins, a chemist by trade, remained on as Connecticut Distilling's head distiller. The new enterprise's mission is a commitment to crafting high-quality, innovative, and sustainable spirits that honor Connecticut's rich history and vibrant community. I recently stopped at Connecticut Distilling during their Grand Opening week. Their tasting lounge is cozy, inviting, and comes with a staff of trained mixologists. Most of CDC's products are distilled using beer from locally Connecticut craft breweries. Attendees were treated to samples of some of their products which included a blueberry-flavored rum, a bourbon whiskey, an IPA-based spirit, a roasted malt beer-based whiskey, and a vodka. Everything was very smooth. We were also treated to a delicious spread of deli sandwiches and charcuterie as well as cocktails crafted with CDC spirts. Some of the cocktails offered included a "Welcome Cocktail" (Apple Cinnamon Drops, apple cider, black tea, citrus, bitters blend), a "Smoked Maple Manhattan" (Fort Hill Bourbon, smoked vermouth, Maplewood Farm maple syrup, bitters), and a "Peach Pecan Old Fashioned" (Charred, honey pecan, peach bitters). I had a wonderful time at the event and wish the owners much success. I look forward to seeing CDC spirits in my local package stores!

Not only are there no tastings the guy behind the counter, which was like a checkout counter vs a bar, was bored, rude and uninterested in promoting the product. I persevered and ordered an espresso martini. Left it behind unfinished. Between the dirty too loud indoor space and unremarkable outdoor space I figured I'd cut my losses and save the calories for something worth consuming.

There are a few flavors to try, my favorite was the cranberry and the apple pie. They're open 12-5 on Sundays for tasting. The coolest part, it's free. The property is gorgeous. The building is cozy. When a lady came out distributing more. One serving of each was plenty for me. Shortly after I went inside to pay. I was expecting it to be around $30, because there was a sign that each shot glass is $3. Well, it was all on the house, just because it was our first time! Full Moonshine is open on Sunday 12-5. In 1968 popular musician Skitch Henderson and his wife Ruth purchased the property as a personal retreat. The couple hosted musical performances, art exhibitions, and cooking demonstrations led by prominent chefs. In later years nonprofit and national historic landmark status was established for the property. ATMOSPHERE: Events take place in a repurposed post and beam barn. The beams are exposed, giving a rustic charm. EXPERIENCE: Alessandro Piovezahn, the current steward of the nonprofit property, is actively looking to revive the Silo's influential public events. I enjoyed an intimate concert that featured the work of a five-time Emmy-award winning composer Jeff Beal. A legendary Steinway piano brought his music to life. A reception in the barn preceded the concert, with food prepared by Chef Constantine (Dino) Kolitsas of New Milford's Greca Mediterranean Kitchen & Bar I also enjoyed an evening cooking class with Chef Carlos Perez of Litchfield's At the Corner restaurant. In the course of the three hour class we were guided on culinary techniques by Chef Carlos Perez and his former colleague Chef Billy Ross (now at New Milford's Greca). I greatly enjoyed learning how to make a thoughtful fall menu that includes popular dishes served At the Corner, and dining on the co-prepared dishes with fellow foodie community members. Given limited of 16 registrants, everyone was active. I already registered for another class with Chef Billy Ross. SELECTION: Classes representing a variety of cuisines and dish types are available, including gingerbread house-making, pasta, and risotto. I had signed up for a Saturday morning cooking class 7/3 as a gift to my wife, but had an emergency that prohibited us from attending class. My wife called the school that morning and was told it would be no problem as we could select another class over the summer. I took them at their word, but after leaving FOUR voicemail messages spanning three weeks, no one bothered to return my call. I stopped by the school and left a message with a gentleman teaching a cooking class to please return my calls, but again I was never called back. Having exhausted attempts to reach the school to schedule another class, I decided to contest the $300 charge with my credit card co for the class I could not attend. Here it is 9/29 and the proprietor has not yet reached out to me, but has decided to keep my money stating the terms and conditions. I find this business lacks ethics for a small town like New Milford. Buyers beware! Please note the 9/17 call/message was not returned.
