There was a sign next to the food truck that listed all of their cupcakes, but if you walk up to the window, they have the actual cupcakes on display. Seeing the cupcakes made me want all of them :-) I ended up buying two maple and blueberry cupcakes and one pumpkin spice cupcake. I was over the moon with the cupcakes! Admittedly, food trucks were of relatively minor interest to me pre-pandy. It was one of the larger food trends for quite some time and then seemed to drop off a bit. I don't know what the scene is like now, particularly, as I'm still more or less in my bunker down and avoid people (more than usual, I mean) phase, but it definitely is of higher interest now for when I get tired of cooking myself, as dine-in is still largely a no-go for me and fast food is increasingly leaving much to be desired. This particular truck is a bit hard to come by, but seems to be mostly on the East side of Salt Lake most often. It's one of the smaller trucks, seems to be mostly a one man band operation, but the notes it's playing...let's get into it. I'm not a huge fan of grilled cheese, particularly, but I've had more than a few in my time and let me just say that this is, by far, the best I've had. Ever. There are some unique takes on the creation of the sandwich here that are sheer brilliance, not the least of which is the introduction of brisket and the wonderful accompanying sauces. I suppose one could called this a brisket sandwich, but either way, it's fantastic, just a spectacular creation. Part of this has to do with the brisket, which, between this and the pulled pork, is the better of the two proteins, quite flavorful and tender, but it's really brought together by the bbq and callback (sort of a cream) sauces, both of which are, to my understanding, chef-created. They're both outstanding. The cheese is grilled by itself on the well-seasoned grill and then folded into the grilled bread and this is a stroke of genius. The take on BBQ tacos is also quite good. I found the brisket again to be the better between that and the pulled pork, but that is more personal preference. Both are quite solid. I will say that this can be a touch difficult to eat cleanly, but Carl's Jr. had an ad campaign about getting stuff all over your face and hands and I know more than one person who strongly believes that good BBQ should never be clean. I more mention this so you know going in what you're in for, in case you try to take it and drive whilst eating. This is a truck to keep tabs on, as the operator is clearly a passionate cook, as well as a talented one, and there is a pretty frequent stream of new menu items that appear on the chalk menu, along with the usual regular goodies. This may take some doing to find, but is well worth the hunt.
