The truck is parked seemingly permanently off to the side of a Mobil gas station, just a little bit further into Madison past the Trash Pandas Stadium. They offer the option to order online. The menu is fairly large and they do have specials from time to time. The young woman who took my order was polite and personable and I observed her fluently switch from English to Spanish and vice versa depending on customer need. They were doing a pretty solid business. A small vibrating device was passed out to each customer, which would vibrate and ring when the food was ready. I'm pretty sure this is the only truck in the area that offers tlayudas, which is a dish created and primarily prepared in Oaxaca. Here, it's a very large, charred tortilla covered in toppings including beans, veggies, and a protein of choice. I ordered one with chicken so I could try it; I got a burrito with al pastor for my husband. They were serving champurrado as well, and I couldn't resist a cup of that. My food and drink all came out at once and I carted it home to eat. The champurrado was too hot to drink for a while anyway, and the food held up pretty well. When I did get around to drinking, it was thick, not too sweet, and creamy. I think other places I've tried it are actually calling hot chocolate with cinnamon champurrado, but I think this was the real deal, with a heavy masa harina base. I enjoyed it. Husband's burrito was large and quite tasty. The rice inside was cooked nicely. My tlayuda was also pretty good, and huge - lots to eat. The sear on the tortilla added an interesting flavor, with the tortilla itself being alternately crispy and chewy, and the fresh charred jalapeño on top added good heat and flavor. The veggie toppings, especially the beans, were fresh and tasty. Unfortunately, I really didn't like the chicken; it was chopped in small bits and really didn't have much flavor or seasoning. The rubbery texture made it worse. I would order a tlayuda again, but would definitely change up the protein. Husband's al pastor was a better choice. Overall, it's definitely worth it to try this truck to sample some harder-to-find fare in the area.

The tacos are small with 2 corn tortillas each, topped with onion and cilantro. Come was a red sauce, lime wedges, a pepper and a couple of cucumber slices on the side. The beans are puréed, very smooth, and topped with cheese. The tamales come with a green sauce. They are pretty spicy, there are chunks of jalapeños in them.

Unless you have a little appetite, you'll walk away hungry. Staff wasn't engaged with customers whatsoever. No hellos, no smiles, no thank you. Their spoon box blew away in the wind, and 2 of us went after it and returned it to them, letting them know what happened. There was no expression on his face and no thank you. You're welcome! Suggest they get a box for customers to stand on to place their orders, because everyone was standing on their toes trying to get high enough to place their orders. The food truck has a nice Facebook page where you can find their weekly schedule. This is very convenient for finding the food truck. It was parked in front of Washlab on University drive. It is brightly colored and hard to miss :) The health department gave them 100 for their last inspection. Excellent score!!! I ordered a combo with 3 quesabirria tacos, a side of potatoes and guacamole with chips and a drink. It was a 7 minute wait to get my food and I was surprised as it was delivered to me. My tacos were filled with soft delicious beef and a container of consommé. Wow! These tacos were loaded with meat and very tasty. The consommé was not too salty nor too greasy. The guacamole was about 2 tablespoons worth with about 8 chips. It was good. The diced red potatoes were so delicious. They were excellent. My combo scores 5/5. From a meat to taco shell perspective, this food truck was 3rd and second in taste. The quesabirria tacos they sell are extremely tasty and I will return to buy more. I saw several things on the menu I want to try. It is impressive they score a 100 health department inspection. If you like tacos, please try the quesabirria tacos. This is a food truck, though it's quite a large one and hard to miss with its beautifully pained sides! Most days they seem to not be itinerant and are instead parked in front of the Washlab (next to Shottenkirk Honda) on University Drive. However, they are active on social media and post their location weekly, and they do move around from time to time. Definitely check out their page before going looking for them. They have quite a large menu with lots of traditional Mexican favorites like tortas, sopes, and alambres, as well as some stuff for more American palates like hamburgers and cheesesteaks. I was, of course, after birria, which I ordered as a combo with rice and beans. The combo was fairly pricy at ~$20, but one thing I did like was that it included my choice of an agua fresca -- I chose pineapple this time. Service was very friendly, offered to help answer any questions I might've had, and got my order out to me in a timely fashion. I had no trouble ordering in English; likewise, the man who ordered after I did seemed to have no trouble ordering in Spanish. Win-win! Although the price was a little high, the quantity of food was great and the quality was impressive. My meal came with three quesabirria tacos, rice and beans, consommé, red and green salsas, a fresh lime, and some pickled veggies. EVERYTHING was yummy. The birria was tender and unctuous (though I wish there had been a *teeny* bit more meat), the beans were smooth and smoky, and the pickled veggies were delightfully crunchy and sour. The rice was just so-so flavor-wise, but it was nothing a splash of the delicious and mild-almost-medium heat red salsa couldn't fix. The salsa verde was herbaceous and cooling; my preference was the red but I can clearly see the merits of both! Lastly, my pineapple agua fresca was refreshing and sweet, though not cloyingly so. I finished my meal feeling so excited and happy about what I'd just consumed. The lingering flavor sensations of heat and savory, umami birria brightened my whole day! I will be back when the birria craving strikes again.

I received my salsa and chips at this time. The salsa was pretty watery and lacked spice or much flavor. It was nothing special, and chips seemed like they were made a long time ago. Looking at the menu, it seemed like a typical Mexican restaurant though I was a little disappointed that the street tacos didn't have many options. I was a little inclined to think after looking at the menu that it was more Tex Mex. They did seem to have a nice deal for aguas frescas with two glasses for under $3. That's pretty unheard of here in HSV. I ended up ordering 3 pastor tacos. I received food fairly quickly. The street tacos have a large amount of cilantro and raw onions, but not as much meat as I had hoped for. The red sauce served on the side wasn't very spicy and had more of a smokiness. Not sure I had the experience I wanted. I had to wait a bit after finishing my food to get my check or even see the waiter. If I come back, I'll try the aguas frescas.
