I asked Nick if we were still okay, and it wasn't one of those fake "yeah, you're fine" answers. They welcomed us in, took our order, and went right to work like it was any other time of day. That's what stood out to me. There wasn't a shortcut taken because it was close to closing. They didn't grab slices that had been sitting around. They made them the way they're supposed to be made. Crispy pepperoni, bubbling cheese, perfect crust... exactly what you'd expect from a place that takes pride in what they serve. At the end of the day, cooking great pizza is what they're supposed to do. The difference is that 600° does it with the same care at 9:30 at night as they do at lunchtime, and that's rare.
