One of the things that is different about their Maple Syrup is that it is not a blend. The gentlemen from Berkshire explained that the majority of Maple Syrup is blended from many different batches of sap. Berkshire crafts it's Maple Syrup much the same way that Single Malt Scotch is distilled - a single batch from a single crop. They have several varieties of syrup, from very light colored to very dark syrups. Each variety has a range of complex and yummy nuances. They explained how the temperature on a given day determines the color and consistency of the sap that is produced. They were offering samples of syrup to taste - I tried 3 of the 4 that were available for tasting - from very light to the darkest amber. The syrup was the best I've ever tasted! Rich, light, and buttery - it did not feel heavy like most Maple Syrups I've eaten. The syrups are available in a wide range of bottle sizes. I bought a 3 bottle gift pack to give a family member as a Christmas gift, and I bought a quart bottle of the darkest syrup for myself. They had two quart bottles left of the darkest syrup - I was going to purchase both bottles - but there was a lady there that wanted a large bottle of it too - so I decided to only buy one so she could get the other bottle. The other cool thing was they described to us some of their activities on the Farm to make them an environmentally friendly business. They let their customers know that they'd like to buy back the syrup bottles when they are empty so that they can be re-used. He also talked about some of the things they were doing to make them a carbon friendly farm from a Global Warming perspective. I was glad to hear that!

    My wife bought me a bottle at one of the Sugarloaf Crafts Festivals stops. I thought, "Well,…read morethat's nice, but what can be so special about this? Maple syrup is so much better than 'pancake syrup,' but..." Well... if you appreciate the difference between a run of the mill blend of Scotch whisky and a nice single-malt, you will know what I mean. Try this!
