Speaking of the brie, it wasn't my favorite of the selection I received, which was a curated collection of Lorie's from Shark Tank. When we first got the delivery Dear Hubby and I set up a charcuterie tray for ourselves as a late lunch / early dinner. So many wonderful tastes! It was a delightful experience to mix the cheeses with crackers, salamis, Mediterranean olives, and fruit / jam. The sweet chevre offering was divine. Might have been my favorite. I was lucky enough to snag a table for three during Fabrik's earlier timeslot (5:45 p.m.) on a Friday night. I've been dreaming of visiting Fabrik since it first opened in 2023, so when I received an email about the opening of Fabrik's new Tarrytown location, I knew this was my chance. Fabrik's tasting menu costs $105 a person, with an extra optional wine pairing for $65. We opted to purchase a bottle of bubbles instead of the wine pairing, as the pairing includes approximately three glasses of wine (too much for us). Each course is a special expression of in season produce and other ingredients. Fabrik tries to use local ingredients whenever possible. Fabrik's friendly staff explain the details of each course to your table as they're serving. My favorite savory dish is "black and yellow" which features shiitake mushroom cappelletti in a corn cream reminiscent of corn chowder, served alongside corn madeleines (the first savory expression of a madeleine I've ever seen). Another favorite is the "verdant" featuring scalloped potatoes with homemade cabbage and topped with an aromatic lemongrass hollandaise tableside. After telling friends about our visit to Fabrik, multiple people asked if I was full after a fully vegan meal. A resounding yes. Each plate is on the smaller end, which is necessary because there are eight courses. The last three courses are sweet, which is a delight for those of us with a sweet tooth. My favorite sweet course is the "open sesame" with banana miso mousse and roasted banana compote, served alongside a crunchy black sesame sable. This dish is topped with an extremely realistic "leaf" made solely of banana and sugar, showing the true artistry of this restaurant. Our meal ended with a delicate yuzu macaron topped with a butterfly, which was the perfect citrusy end to an otherwise equally superb meal. Each member of my group left with bellies full and dreams of our favorite courses. After visiting this unique spot, it's easy to see why Fabrik is Michelin recommended. This was maybe my favorite meal I've ever had in Austin. Fabrik's tasting menu changes seasonally, so we tried their "Summer" menu during our August visit. I hope to return for their winter dishes. Every time I tried something new, my heart would long for the pierogies. I finally gave in to my desires and quit trying other new things. I think next time I go back I'm just going to ask strangers if I can have a bite of their food, so I can say I've tried everything. But until then, this review is for what I have tried. After the pierogies. My next favorite things in order. Fried chicken (perfectly crisp bites), jerk chicken (little spicy, not dry, perfect), chilli (so spicy), gnocchi. The cheesecake would technically rank after the pierogies, but because they're a dessert I don't wanna mess up the order here and confuse y'all. I liked the flavors, but it was a bit too creamy/saucy for my husband (likely due to the sabayon). The steak, however, was dry and very chewy. Asian Style Spare Ribs ($17): This came with a 1/3 rack of spare ribs, a Thai cabbage salad, and five-spice fried potatoes. The potatoes were fire, and the salad was solid. But again, the meat missed the mark--super dry for the most part. We tried dipping it in the sabayon and other sauces to add moisture, but it didn't help. The fish sauce glaze didn't come through either. The only redeeming quality was the generous portion size.
