If you're in Ashland, Oregon, Noble Coffee Roasting is a fantastic stop! The coffee and pastries were so good, there's plenty of seating, and the service was amazing. A perfect place to relax and enjoy a great cup of coffee while in town.

Passing through Ashland on a road trip up north, my husband and I stopped at Noble Coffee for our morning caffeine fix and a little bite to eat. The shop itself is very clean and modern, with plenty of spacious seating, both indoors and outdoors. My husband ordered a Gibraltar, which was explained to us as a mini espresso and milk drink. He thoroughly enjoyed it and we were both impressed by the latte art. I ordered an iced oat milk latte with their house-made caramel. My latte was creamy and delicious while being the perfect level of sweetness. For a bite to eat, we shared a ham and Swiss croissant and a cheddar cheese scone. Both were buttery and delicious and paired well with our coffees. If you find yourself in the Ashland area, do yourself a favor and check out Noble coffee roasting.

Trivia: Decaf coffee is decaffeinated using chemicals but there is a process that does NOT use chemicals. What is it called? - - - - Great music vibes. Great natural light. Plants. (Yay!) Homemade tonic in three flavors. When they saw me looking at the display of cans, they offered a sample. Super tasty. Great service. Super friendly. Everyone was smiles and greetings and so invested in their job. The Ham and Swiss was flaky and perfectly warmed up. Just a glance of heat. The only thing that would have made it better would have been a dash of Dijon mustard.

Classic community coffee house that takes its roasts seriously. Friendly, efficient service, nice vibe, good amount of seating without being on top of your neighbors, outlets for those doing work. What's not to like?

今朝、Ashlandの NOBLEというコーヒー屋さんでクリエイティブビジネスのコネとの打ち合わせをしてきました。 実はこの日、あんまり好評を飲む。気分なかったけども、 「コーヒーショップでの打ち合わせなのに、何も頼まないのはさすがにどうかな...」と思い、抹茶ラテを一杯注文。 とはいえ、打ち合わせ中に私が飲んでいたのは、実はマテ茶。 カフェインの量もちょうどよくて、ビジネスミーティングには最適なんで。 正直、 「何か言われるかな...?」 と一瞬よぎりましたが、まったく何も言われず。 これ、たぶんLAのコーヒーショップだったら一言あったかもな...と思いました。ここののんびりした感じがいいなぁ。 帰り際に、せっかく頼んだ抹茶ラテを別のカップに移したくて 「カップもらえますか?」とお願いしたら、 これも嫌な顔ひとつせず、すぐに用意して渡してくれました。 抹茶ラテ自体も甘すぎず、バランスが良い味。 ガラス越しに見えるローストルームや、焼きたてのペイストリーも印象的で、 何よりスタッフさんがみんなニコニコしていて、名前まで覚えて呼んでくれる。 こういう小さな積み重ねって、結局「また来たいかどうか」を決めますよね。 ここは本当に、 ・落ち着いた打ち合わせ ・一人で考え事をしたい朝 ・雨の日に少し気持ちを整えたいとき にちょうどいい場所。 もちろん、真夏もこのお店は素敵だろうと思うけど、その時にまた試しに行きます。 とにかく、Ashlandに来たら、安心しておすすめできる一軒です。

Ahh what a delicious cup of coffee! We started our morning with a delicious iced vanilla latte for me and then a chai for him. The service was quick, and the latte art was beautiful. It was a busy place but with lots of seating options. Delicious coffee and great vibes!

Five stars! This morning we woke up in Ashland after a white knuckle drive through the stormy Siskiyou pass last night. I opened Yelp and saw Noble Coffee and am so glad I did. I ordered a mocha which was a chocolaty, creamy, smooth revelation. Maybe the best I've had all year and it's November! My wife J loved her Latte nearly as much. The barista was kind and welcoming taking time to answer our questions (What is a Gibraltar? And a brew bar pour? After which we ordered our basic stand-bys of course). Great mix of locals, some students studying, and drive throughs like us. Noble Coffee is short distance removed from Ashland's tourist driven theater district and thus has a more "local" vibe. The coffee prices are a bit on the high side but not outrageous. I forgot all about that once I tasted my mocha!

We were so glad to be in Ashland for the last two days as they gave us two opportunities to come to Noble coffee in the morning. And all of our travels, this is our very favorite coffeehouse. We love that sometimes you can catch them roasting. All of the baristas that we've talked to have been very friendly and helpful. We try a total of four pour overs and one mocha in the last two days. Though we don't always like ever coffee, we do enjoy trying it and it's always a very clean cup of coffee. The beans are well roasted! The mocha was delicious! We got a scone this time and it was pretty good. We'll have to try some of the other pastries as I believe they are all made in house. It's a warm and cozy place to hang out.

The coffee is delicious and the pastries are drool-worthy. We got the spinach pastry and a ham and swiss croissant, both of which were flaky, buttery and divine. The vibe was relaxed. Multiple patrons were outside reading books and enjoying the cool morning air with their coffee. The service was fantastic too. We got our drinks quickly and the staff were very welcoming. We will be back!

After chatting with a friend I wanted to give Noble another go with a different beverage choice. I purchased a cappuccino and unfortunately, the experience was about the same. The acidic sharp twang pulled through the milk of the cappuccino and instead of tasting smooth drink with two components blending together it felt separated and distinguishable. It was certainly more drinkable than the espresso straight but not something I would get again. The energy of the room is a mix between hustle and bustle and working energy with lots of people getting work done but a fair turn over of customers. One personal thing is I find the chairs fairly uncomfortable but that may just be a me thing. Service is kind and great, full props to them!

My favorite coffee shop in Ashland. Coffee is tasty and has solid pastry treats. Service is excellent, everyone is so nice. I loved going there. I'll be back as soon as I'm back

Best coffee and best people in Ashland highly recommend the current single origin espresso though the World Tour blend is also exceptional.

They are melt-in-your-mouth delicious and looked like little polished celestial planets packed in a precious box of 9! This "hidden gem" (pardon the cliché) opened last year by Razia Hayden (owner & chef) and often has live music being played on the enclosed patio. She serves unique savory dishes, inventive desserts and beverages based on her knowledge of global seasonings, rooted in Mediterranean flavors. Most everything is gluten-free, locally sourced and made with spices originating from India, Indonesia, North Africa and the Middle East. I feel a certain kinship with Razia, since her dishes combine spices and flavors that aren't pulled from a cookbook or 3rd party recipe, but purely from her own creative chops, travels and heart. Before diving into her handcrafted chocolate bonbons filled with various creams and ganache (fair trade cacao BTW), I first enjoyed their French toast to prime my sweet-tooth. It comes with three slices of their house-made bread, soaked in an orange blossom custard, finished with a dollop of saffron whipped cream. They were a little warm for immediate drinking so maybe specify if you want your beverage less than normal hot for kids. The cocoa also had a bit of a cinnamon flavor to it. I thought it was delicious, but if you have a purist cocoa drinker in your party, again, ask! The adults drank drip coffee. It was tasty too! If you are staying in, you will get a ceramic mug, so if you want a paper cup let your barista know. The big win for me was the menu of gluten free pastries! They had regular glutinous things like burritos and quiche that looked tasty but the gluten free!!!! They partner with a bakery in town (sisters sans gluten) to have a variety of offerings. I had a poppyseed muffin, but they had other breads and muffins that all looked good. The offerings change, but I was so excited to see gf options at all. Highly recommend this spot! Also!!! They open at 9 with the bookstore, which is a full hour before the other shops on Main Street. Start your day here. You won't be sorry.

I remember driving into Ashland in the middle of a snowstorm because I had an appointment with my yoga teacher and I do NOT cancel on her. After we finished yoga, I decided to pop in to Dobra tea and get a hot mushroom latte. I sat at one of the tables in the front room looking out at the snow falling. Almost no one was out and it was like being in the middle of a snow globe with a warm cup in my hand. Another time I was there with a friend for lunch. He ordered their avocado toast with egg, which I had never ordered before. He insisted I take a bite, which I graciously agreed to do. The flavors were so exquisite that it immediately became one of my many favorite things to order at Dobra. I learned they make their own English muffins, which is the "toast". Wow!!!!!!
