Came in here because it was the best rated place in town and a review mentioned their chai tea so I gave it a try on the way to the park. The cashier was preoccupied and not personable at all! If it wouldn't have been for the barista greeting us with a smile I might have left....since the cashier basically ignored us after the person in front of us ordered and walked away. When she finally looked up and we knew she was listening I ordered a chai tea latte and hubby got a granola bar. My chai tea was yummy and had a nice design (I'm a sucker for crafty baristas!) hubby said the granola bar was VERY tasty and I guess so cause he ate the whole thing and he had just came from breakfast. The ambiance is nice but they could do so much better with some friendly and energetic employees! So they lost a star for that if not for the barista it would have been only 3 stars from me. read more

I really like this coffee shop! Great for coffee and ambiance. For anyone though that is truly truly intolerant of gluten do not eat their oats. A lot of oats in the USA are contaminated depending on company used and I had a reaction 10 minutes after eating..., bronchial constriction, wheezing, cough, extreme fatigue and extreme anxiety. Not stores fault but the USA should probably be more in line with New Zealand's laws in regards to gluten and make it illegal to state gluten free. read more

What a sweet coffee shop. My partner, daughter, and I were passing through Ashland on our way up north. We were so happy to see coconut milk lattes on the menu and sipped them up so quick! We shared a gluten-free blueberry muffin which was moist and perfect. My partner bought a cute mug to bring home with us. Stopped in here a couple times over the years on my way up to Portland and I have always made a considerable effort to grab coffees, even though its a little off the path. I've been working in specialty coffee for a few years now, so I unfortunately cannot palette Dutch Bros, Starbucks or anything convenient. Finding this place in Ashland was a gem, the space is ginormous, beautiful and filled with a roaster espresso machines and lots of seating when capacity is back to normal. I regularly order drip coffee from any coffee shop I go to and use that as my baseline. However this place is adamant about serving you coffee made fresh, which is very admirable. The cashier I have had all 3 visits has actually been the same guy and I'm so happy to have experienced his presence everytime. The first stop I made a few years back I got a fresh pressed coffee and vanilla cappuccino, my friend dropped theirs and they were kind enough to have made them a new one free of charge. That same visit was when they were first introducing their cascara tonic and they gave us a couple samples and asked for feedback. It was genuinely delicious, so we picked up a 6 pack on the way back home from portland with another coffee for the drive. This last visit more recently I grabbed a pourover since I wasnt too excited about the press offerings. I prefer fruity, bright coffees and I was directed towards their award winning ethiopian as a chemex. The cashier was super kind and elaborated on every single coffee he talked about, clearly very knowledgeable and passionate with the coffee he serves. We also ordered an Iced Dirty chai w/ oat and the baristas messed it up a couple times but I didnt want to ask them to remake the drink for a 3rd time, but I'll leave the negatives for my girlfriends review because my coffee was delicious. To the guy, you are great keep up the good work. I personally wasn't a fan of the chai so I wouldn't recommend that to anyone, but definitely give the tonic a try and grab a cup of coffee! read more

The almond milk hot chocolate is seriously THE BEST!!! I've traveled all around the world and had many cups of drinking chocolate...this is the perfect blend of richness, froth, thickness and chocolate taste. They have almond and coconut milk alternatives which are both delicious and robust (not watery milk added to some pre-made powder.) At first I thought the cup was small, but it was love at first sip and I was in heaven! I was tempted to get another because it was so delicious, but one cup is satisfying and the perfect amount. After many recommendations to visit Ashland,OR and good ole yelp we found one of the top roasters in Ashland. This place has all the delicious drinks with no frills. Oatmilk Cappuccino so good. They still have some bight fruity notes to cut through the milk but enough of a full body that I can actually enjoy the taste of the coffee. It's near the railyard district which has a nice quiet, kitschy/ artsy, neighborhood vibe and there's a park nearby that is a nice walk. This is a "really nice place to drink coffee" - and the coffee's pretty good too. I drank two cups of dark roast - which they brew through a press. I'm not a fan of press coffee as it is always a little bitter and has that fine sediment in it. You can buy a drip for $5 on one of those fancy glass contraptions that the Japanese make, but I'm too cheap; so I don't know how good it is... and I didn't see anyone ordering the $5 coffees. They roast the beans at that store and you can look through a glass window at the guy using the roaster. He looks at dials, gauges and writes things down on his clipboard. He could have been making wine for all the care that was going on in that room. He was intense on this process. I always thought it would be fun to be a coffee roaster until I looked through the window and saw the guy's face writing stuff down on that clipboard. An epiphany: Coffee bean roaster is not the fun job of dumping beans into a hopper and watching the machine do all the work. This place has lots of young attractive people going in and out. Sofie noted that they were all wearing nice shoes. I was wearing my nice Merrell sandals so I felt like one of the gang... except I could have been everyone's father/grandfather. This place also has a good selection of coffee brewing gear: the Chemex drip systems, the crazy Japanese thing that looks like something from a chem lab, high end grinders and the amazing Bonavita 1-Liter Variable Temperature Digital Electric Gooseneck Kettle which I own and treasure as one of my most prized possessions. If you know nothing about brewing good coffee and do not want to spend the time to learn which gear is the best, you could just come to this store and buy your stuff. The staff will tell you why it is the best and how to use it, so you don't even have to read the directions. If you read this review though, you probably know all this stuff though. Sorry. read more

I love Starbucks, I really do, but if places like Noble were more plentiful and popular, Starbucks would be a thing of the past. On the other side of the spectrum, that may also mess with some of the things that make Noble amazing. Its a small, quiet, coffee shop that has only a handful of tables to seat their handful of customer's. 90's music plays at a low volume from above, so you can hum along and carry on a conversation at the same time no problem. The employees are hard at work, doing what they do best. Making amazing coffee while being amazingly friendly. I am not big into complex coffee drinks. I like my coffee very simple. Black! Something caught my eye however, as I waited in line. A coffee pot labeled Ethiopian 'Dama', and on the label under flavors, it has listed: Cantaloupe, toffee, and cardamom. I had to order a cup. The girl at the counter asked how I wanted it prepared. I was confused, so when she listed my options I just chose the first one. Americano. I'm still not sure exactly what I got myself in to when asking it that way. All I know is, my coffee was fucking amazing. I didn't really get the cantaloupe taste, or smell. However what I did smell was the toffee, and the cardamom was in the taste. It was exactly what I wanted, and needed. Because I am me I had to get something to eat, to go along with the coffee. My choice was a simple one the moment I peeked in the case. A glorious ham and cheese croissant was staring back at me. It was served room temperature which was different since I'm used to such things being heated up first. It was the perfect temperature the way it was. There was no cold cut ham. More like thin slices of beautiful, deli quality ham. The Swiss cheese was on the same road. High quality stuff that you can definitely taste. The croissant was flaky and buttery. The sandwich as a whole was a very decent size, enough to hold me over to lunch. With Noble only blocks away, I'm shocked that the Ashland Starbucks is still around. read more

Noble is my favorite coffee shop in Ashland. The coffee is really high-quality and delicious. They have a ton of dairy alternatives and their staff takes the time to teach you about coffee and let you try something new if you want to! They don't just have coffee, so if you're a tea drinker or if you want to try one of their caffeinated sodas, they have options. There is a ton of seating and not only that, their seats are comfortable. This is my go-to place to sit and work and sip. There are plenty of outlets if you're working on a project. My one criticism is that it tends to be very cold in Noble, so I often bring a jacket. Even in the summer it's a bit chilly. read more

First off it is set up in a open floor plan as the famous Verve of California. I believe they were going for a rustic barn look. They have a variation in comfort for sitting and enjoying coffee with an indoor bike rack that you can keep an eye on your bike. The background music is noticeable but not overpowering. Now to the important part, coffee. They have a simple menu. The barista was meticulous In the design. The latte was distributed perfectly but the milk was cooked a little too much but not bad. Noble Coffee has a beautiful space and if I needed a place to work with clean bathrooms this would be it. But judging their coffee and limited food options, it's quite poor and there are much better options in Ashland. First, their coffee is over priced. And this is comparing what they offer to the finest coffee shops in Portland and elsewhere. For a coffee shop that appears to be third wave, either their selection of coffees is not very good or their roast profiles are off, as their coffees are often over roasted. Their drip coffee is also not the best for the cost. For close to 4 dollars I've come to expect a clean, crisp coffee of high quality light roasted coffee with a refill option, ala Heart and many other roasters. But not at Noble. You get one 10oz cup of coffee with sediment and grit that makes your feel as if you need to brush your tongue immediately afterwards. Their employees either range from not very knowledgeable to those who are told to pass on talking points given to them by management. I asked what coffees were "fresh crop" and no one knew what I was talking about. Lastly, their food choices are very limited and not very healthy. And you can't eat anything you might have with you. So if you're on medication and need to take it with food, you are out of luck unless you buy one of their sugary treats. So in Ashland where should you go? My first place to recommend is Case. Two locations. Better coffee, more knowledgeable staff, better prices. Their coffee is probably top 5 in the country. Second place is Hither. More food oriented which is phenomenal, and their coffee from San Francisco is quite good and better than Noble as well. read more

I sought out Noble based on the Yelp reviews. My experience exceeded my expectations. I knew as soon as the Batista poured my latte I was getting liquid gold--carmel colored crema with a beautiful leaf motif. Was in heaven. Best latte ever. I'm surprised that Noble coffee roasting only has 8 reviews thus far, especially since this was the most packed establishment I've seen so far in Ashland. I love that some of the local businesses buy Noble. I'm surprised the hotel we're staying at--The Plaza uses Portland. Think I'll suggest they buy Noble (can't hurt to ask). If you are a tourist passing through town, it's well worth your time to go out of your way a bit and check out this place. Now I'm wishing I would have brought some coffee beans home with me! read more

This place locates in a quite residential area and looked like it had been converted from a warehouse. The sign was not very noticeable. Nor did I smell a strong whiff of coffee when I got close to the place. I almost thought I went to the wrong direction when I was looking for it. Having said that, I did not mean that I was disappointed. This place is huge, compared to other elite coffee places in the Bay Area. It is so quiet and laid-back. People working there are pretty friendly too. Both the latte and the ice coffee turned out very well. Very rarely do I find good ice coffee. Their ice coffee is a pleasant surprise. Overall, I think their coffee is more on a strong side. Strong, but not bitter. I went from Mix, the other popular coffee place, before stopping by Noble. When compared to Mix, I personally prefer the coffee at Noble which has more character. read more

Noble Coffee is the coffee house I'd always wanted in the Ashland area and based on the pre-coffee buzz (long lines, lots of people) on a Sunday, they've done it. I first met the owners at the Good Food Awards so it was exciting to hunt them down in their native territory. I'd pretty much live at Noble Coffee, starting from enjoying their exterior to their overall ambiance, incredible buttery scones made with local berries from a farm well known for their jam. Woah! Craft coffee at its finest! Yes, there's tons of craft coffee in Oregon but places like Noble are harder to come by in southern Oregon. I love that they have tons of brew options. I went for an iced chemex - another rarity given that it's iced! The girl who rang me up helped me choose beans that would best bring out the magic of the chemex, and it worked! Talk about excellent customer service :) on top of that, the girl who brewed my coffee (using some of the best makes of scales and kettle out there) let me try the difference between a chemex and cold brew using the same beans! What an awesome experience because you could really tell how the chemex made the beans taste brighter than a cold brew (not hating on the cold brew at all. Other things to appreciate about Noble: plenty of seating, WiFi without a password, coffee granitas, and tea that comes in a little steeping pot! Also, if you're interested in something new, they offer a cascara tonic which is basically a refreshing, caffeinated, fruity tasting soda! read more
