As their name suggests, all their sandwiches are assembled then steamed. Naturally, this creates an extra soft bagel. By their own admission this also creates and a gooey, melty, messy sandwich. Well maybe they don't say messy, but by the napkin "gauge", my California Steamin was a bit messy. My wife went with the Pirate. Did it work? With the "sammys" we had, yes! Tasty, not toasty.
